Christmas and cake go hand in hand, so we decided to treat you guys with the best cake recipe which will be so heavenly yet so easy to bake, considering its a no bake cake. With Chef Ruchi Bharani learn to make no bake biscuit cake, which is easy, tasty and goes along with the Christmas spirit!
Ingredients:
- 250gms of chopped Bitter Chocolate
- ½ cup of cream
- Butter
- Digestive biscuits and chocolate biscuits
- Roasted almond
- Roasted walnuts
- Cranberries
- Pistachios
Method:
- Micro wave the bitter chocolate and cream together for40-45 secs
- Add butter to the mixture and whisk it ans keep aside.
- Crumble the biscuits and add the roasted nuts to add, after mixing them up add the melted chocolate
- In a baking tin spread the mixture and refrigerate it for one hour
- Whisk together Melted Cream and Chocolate and let it cool down for 10-15mins
- Pour the ganache on top of the cake
- Refrigerate for one and half hour
- Once the cake is all set, garnish it with pistachios
Cake is ready to be served!

Ingredients:
3/4th cup flour
½ cup sugar
½ tsp baking soda
2 tbsps coco powder
½ cup milk
1/3rd cup Vegetable oil
½ tsp apple cider vinegar
Small bowl of Chocolate chips
Butter-cream
1 1/2 cups unsalted butter
1 1/2 cups icing sugar
1/2 cup coco powder
Method:
-Sift the dry ingredients except sugar
- Whisk all wet ingredients, add sugar. Add wet ingredients in batches and give a nice whisk.
- Into the pouring jar and fill the cupcake moulds only 2/3rd
- Bake at 175 Celsius for 15 minutes.
- Let them cool on the rack while we prep for the fluffiest smooth butter cream.
- Whisk unsalted butter for 2 minutes, add sifted icing sugar with coco powder in batches and continue to whisk for next 5 minutes.
- Add 2 tbsp milk, if consistency is too thick.
- Use regular open star nozzle. If you don't have nozzle put a dollop of butter cream, spread with a knife. Choose your sprinklers, or chocolate shavings as per your choice.

Ingredients:
For Crumb
100 gms Coconut Biscuits (crushed)
2 tbsp Butter (melted)
For Mango Cheesecake filling
125 gms Cream Cheese
40 gms Caster Sugar
80 gms Mango Pulp
150 gms whipped Cream
1 Ripe Mango
Method: Let's start with preparing the Crumb, for which add Coconut Biscuits (crushed) with Butter, mix it a bit. Now add our crumb to the ring with cake base below, use the back of the bowl press the mixture down (as shown in the video) make it flat and freeze it for 15 minutes. Now, let's prepare Cheesecake Filling for which add Cream Cheese in the bowl with Caster Sugar, Mango Pulp now mix all together using an electric mixer. After which add whipped Cream into the bowl and mix it as shown in the video.
Add the mango cheesecake filling into the ring with Crumb, press it properly to reach all the corner and flatten it using an angled palette knife. Now after this freeze the cake for 4 hours in the freezer.
As the cheesecake is freezing, use the mango (sliced ) for the topping, first peel the mango using the knife starting from the top to around the mango. After peeling the Mango, slice it to get the pieces (as shown in the video) turn it around the slices and cut them thinly. After which you can place the mango pieces into the Mango Cheesecake and Your Mango Cheesecake is ready to be served.

3/4 cup milk

1 tsp dry yeast
Oil for frying
400 gms dark chocolate
Method:
- Make the dough by adding plain flour, milk, butter, sugar and dry yeast.
- Knead the dough until its soft.
- Make a flat thick surface with rolling pin.
- Make small donuts shapes with the help of cutter or glass
- Keep the donuts aside for 1.5 hour and apply some oil to keep them moist
- Fry the donuts in an moderately hot oil on medium flame
- Sieve some powdered sugar over the donuts
- Double steam the chocolate and white chocolate.
- Pour one side of the donuts in chocolate and keep it aside for 1 and half hours

Ingredients:-
500 grams refined flour
½ tsp. Sugar
1 tsp. Salt
1 tsp. Dry yeast
30 ml. Oil
150 ml. Warm water
Method:-
- In a bowl add yeast, sugar, warm water and stir. Keep aside for a minute. Stir again.
- In another bowl mix salt and refined flour and create a well in it.
- Add the yeast mixture to the well and mix oil and warm water to it.
- Bring these ingredients together and knead a dough.
- Grease a bowl with oil and transfer the dough to it.
- Cover with a damp muslin cloth and keep aside for 40-45 minutes.
- After the dough has risen, flatten it with a rolling pin and form a pizza shape.
- Dust a baking tray with flour and transfer the dough to it.
- With the help of a fork prick the entire top of the the base.
- Bake in a preheated oven at 210°C for 10-12 minutes.

Ingredients:
3 cup Milk (full fat)
5 tbsp Sugar
4 tbsp Custard Powder (vanilla)
1 tbsp Vanilla Essence
1/2 Banana (chopped)
1/2 Apple (chopped)
1 cup Green Grapes (chopped)
1 cup Black Grapes (chopped)
1/2 cup Pomegranate
3 tbsp Fresh Cream
Method:
Boil milk in a deep pan. Meanwhile, Once the Milk is starting boiling add Sugar and stir the pan till the Sugar dissolve. while the milk is boiling lets mix Custard powder with normal milk. Add the mixture to boiled milk. Whisk the milk thoroughly to avoid forming of lumps. Add Vanilla Essence with the Milk and mix them. Let it cool down for 10 minutes. Bring the mix to simmer and transfer it to a bowl. Take a chopped apple, banana, grapes, and Pomegranate and put it over the custard you can add in some Fresh Cream. Delicious fruit custard is ready to be served. You can also put it in the fridge for a while to serve chilled custard.

Ingredients
1 ¼ cup or 150gms of Maida
1/4th cup or 25gms of Cocoa Powder
½ cup or 80 gms Butter
1/4th cup or 60 gms Sugar
½ teaspoon Baking Soda
1 teaspoon Baking Powder
5 tbsp Condensed Milk
½ cup or 125ml Milk
1 teaspoon Vanilla Extract
1 tsp of Instant Coffee Powder
Sugar Syrup
½ cup Water + 3 Tbsp sugar
Chocolate Truffle Icing
2 cups or 400ml Heavy Cream
4 cups or 750 gms Dark Chocolate
2 tablespoons or 10 gms Butter
Method
- Sieve the flour, cocoa powder, baking powder and baking soda together in a bowl twice.
- In another bowl, cream butter and sugar together.
- Add condensed milk to this butter mixture and cream it well.
- Add vanilla essence and coffee powder to milk and mix it well.
- In to the butter mixture, mix wet and dry ingredients in batches.
- Butter the baking tin and place the parchment paper.
- Place the batter in the tin and bake it at 180 degree for 30 minutes.
- In order to make the cake soft and moist, make the sugar syrup.
- Heat the sugar till it dissolves in water and allow it to cool completely.
- Allow the cake to cool in the tin for 10 minutes.
- Unmold the cake from the tin.
- For Chocolate Truffle Icing, heat cream in a pan and switch off the gas before it starts boiling.
- Pour this cream over the dark chocolate and also add butter for extra shine.
- Mix it well and allow it to rest for 3 to 4 hours.
- Cut the cake so as to level it.
- Cote the second layer of the cake with sugar syrup.
- Cover the second layer with the chocolate truffle icing.
- Repeat the same process for the first layer of the cake.
- Before you perform the final finish, set the cake for 10 minutes in refrigerator.
- In order to get the shine back of the truffle, heat it for 10 seconds in the microwave and apply it over the cake.
- Smooth the sides of the cake evenly.
- Heat the truffle for another 30 seconds and pour it over the cake.
- Using the star tip nozzle decorate your cake.
- Delicious, yummylicious and absoluetly mouth watering Chocolate Truffle Cake is ready!!

About Kulfi
Kulfi is a frozen dairy dessert originating in the Indian subcontinent during the Mughal era in the 16th century. It is often described as "traditional Indian ice cream" and is a traditional sweet of the Indian subcontinent. In India, it is commonly sold by street vendors called kulfiwallahs. Outside India, it is popularin Bangladesh, Myanmar, Nepal, Sri Lanka, and the Middle East. It is part of the national cuisines
of Pakistan and Trinidad and Tobago.
To prepare kulfi, sweetened, flavoured milk is slow cooked. The milk is stirred almost continuously to prevent it from sticking to the cooking utensil. During this process, the milk condenses and thickens. The slow cooking caramelises the sugar in the mixture and browns its milk proteins, giving kulfi its distinctive taste.The mixture is then poured into moulds (often kulhars) and sealed. The sealed moulds are submerged in an insulated matka filled with ice and salt. This quickly freezes the mixture, giving it a soft, smooth consistency free of ice crystals. Kulfi prepared in this traditional way is called matka kulfi.
The moulds are removed from the freezer 10-15 minutes before serving to allow the kulfi to melt slightly. The kulfi is then removed from the moulds and garnished with ground cardamom, saffron, or pistachios. Kulfi is also served with falooda (vermicelli noodles). |
