* Blend or Chop the first five ingredients using a food processor, add it to the minced chicken.
* Now add the spices and mix well until it combines.
• Add lemon juice, mix well.
• Add baking soda, mix well and let it marinate for 2-3 hours.
• Take 3 Skewers, roll them out onto the skewers.
• Add some ghee to a cast iron pan and fry on both sides for 8 mins each. Alternatively, you can spread some ghee on both sides and Air fry at 180°C for 10-12 minutes on each side.

- 800gms curry cut chicken
- 6 medium onions
- 1/3rd cup curd
- 1/2 tsp turmeric powder
- 1/2 tbsp red chilli powder
- 2.5 tbsp coriander powder
- 1 tsp black pepper powder
- 1/2 tsp garam masala
- 3 tbsp brown ghee
- 1/3rd cup mustard oil
- 4 cloves
- 4 green cardamom
- 1 inch cinnamon
- 6 black peppercorns
- 1 mace (javitri)
- 1 inch ginger
- 7 garlic cloves
Preparation:
- Slice 3 onions. Fry and brown on a medium flame using 2 tbsp brown cow ghee
- For marination: Mix curd, turmeric, red chilli, coriander and black pepper powder with brown onions with the ghee left in the kadhai. Mix well and marinate for 2-3 hours
- Make a paste of 3 onions
- Lightly crush the whole spices
- Grate ginger and garlic
Cooking:
- Heat mustard oil in a kadhai till its smoking

- Whisk the curd with 1/2tbsp maida/ chana besan. Make sure it is at room temperature
- Make a paste of 1 onion, 1/2 inch ginger and 1 green chilli
- Mix the masalas and salt with 1/3rd cup water
Cooking:
- Heat mustard oil in a Kadhai till its smoking hot
- Fry the fish till its light reddish on both sides. Each side should take around 4-5 minutes
- Add the onion,ginger and green chilli paste and fry for 2 minutes
- Add the masala mix and cook for 3-4 minutes or till oil separates
- Add the whisked curd on a low flame and keep stirring for 3 minutes
- When oil separates add 1.5 cups water and bring to a boil
- Add the fish pieces
- Bring to a consistency of your choice. For the best taste it should not be too thick or thin.

💥METHOD:
In a wok add oil, saute chicken, add all the veggies, saute a bit, add soy sauce, oyster sauce, all the spices and chicken cube. Cook for 6-8 minutes. Set aside to cool down. Fill the spring roll sheets with the filling as shown and seal edges using flour paste.
Fry them for 8-10 minutes at medium heat, flip in between until golden and done.
📌You can bake and airfry them at 200C and cook for 10-12 minutes. Flip in between and spray some oil for a nice finish.

Bengali Fried Rice - Bangali r Vegetable Pulao - A mildly sweet and lightly spiced Pulao that we can pair with a spicy non-veg gravy!
Ingredients:
- 300g Basmati Rice
- 90gm Carrot (Julienned/Diced)
- 60gm French Beans (Sliced at an angle)
- 30gm Green Peas (Boiled) / 20gm more of French Beans
- 5 Cloves
- 5 Green Cardamom
- 1 inch cinnamon
- 2 Bayleaf
- Salt
- 4-6 tbsp sugar
- 4 tbsp brown cow ghee
- 1 tsp black pepper
- 1 tsp gorom moshla
- 1/4 cup milk
Cooking:
- Bring water to a boil - Add the whole spices, salt and 1 tbsp ghee
- Add the rice and cook on high flame for 3 minutes
- Lower the flame and cook till the rice is 90% done
- Cool the rice to a room temperature
- Heat 3 tbsp of ghee till its smoking hot
- Fry cashews till a light golden colour
- Fry raisins till its fluffed up
- Add carrots and fry on a high flame for 30 seconds. Cooking on high flame will retain the colour and crunch
- Add french beans and fry for 30 seconds
- Add Green Peas and 1 tbsp ginger paste(optional). Fry for 30 seconds
- Add the rice, salt, sugar (4tbsp for slight sweetness and 6 tbsp if you like it very sweet), black pepper and gorom moshla
- Mix and fold till the seasoning and veggies and mixed well with the rice
- Add milk
- Cover and steam on a low flame
- Rest for 10 minutes and serve

1-2 cups warm Milk (add gradually to make a soft dough)
📌Method:
Mix together dry ingredients,flour, yeast, sugar, salt, parsley. Then add yogurt, oil and add milk gradually. Knead into a soft dough. Put some oil on the dough, cover and let it rest for 15 minutes.
Now take a dough ball, roll out, add Qeema filling, seal edges as shown. Again roll out a slightly thick Naan. Make slits and marks as shown. Sprinkle some milk and garnish with sesame seeds.
Bake at 180c for 12-14 minutes, Brush some ghee in between baking, then broil for 2-3 minutes at the end ,until a nice brown color is achieved.
Put loads of desi Ghee on top and enjoy with Chutney👍👍

Add the tamarind pulp to the pan and stir it until it is well combined with the spices.
