Air Fryer Fried Chicken
Ingredients
3 lbs/8 legs/1.5 kg. chicken
SPICE MIX
1 tsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tbsp paprika
1 tsp onion powder
1 tbsp Italian Seasoning
Flour Mix
1 cup flour
1/2 cup cornstarch
half of the spice mixture
Egg Mixture
2 eggs
1 tbsp hot sauce
2 tbsp milk
1 tbsp water
Olive oil spray or brush
Wash and dry chicken.
In a bowl combine spices
Coat chicken generously with about half of the spice mixture.
Marinade for 1 hour or longer
In a plastic bag, mix together flour, cornstarch, and remaining spice mix
.
In a dish, mix together eggs, hot sauce, milk, and water.
Coat chicken with egg mixture and then the flour mixture, shaking off the excess.
Place on a tray to allow 5 mins for some of the flour to absorb a little.
Coat the chicken in the egg mixture and flour mixture again.
Let chicken rest for about 15 minutes so that some of the flour is absorbed again.
Use Olive oil spray or brush, to coat the chicken very lightly,
Place chicken in Air Fryer basket, allowing room for the air to flow all around the chicken (3 leg possible)
Cook according to your air fryer, turn halfway . I cooked mine in 380F for 20 min.

8 Slices of Bacon - cooked & crumbled
3 Chicken Breasts - halved
1 1/2 C Flour
1/4 tsp Pepper
2 tsp Garlic Powder
2 Tbsp Butter
2 C Chicken Broth
1 tsp Lemon Juice
1 C Heavy Cream
Parsley for Garnish
Cook bacon and set aside.
Place flour, pepper & garlic powder in a ziplock bag, dredge chicken.
In same pan that you cooked the bacon add butter, cook chicken for 4 - 5 minutes on each
side or until golden brown.
Add butter to pan, stir until melted. Add chicken broth and scrape up all the dripping from the bottom of the pan. Add lemon juice and heavy cream. Cook until sauce reduces down a bit and starts to thicken. Add chicken back to the pan to re-heat and sprinkle with bacon.
Garnish with parsley.

Jumbo Pasta Shells - 12 shells
Olive Oil - 1 Tbsp.
White Onion (Chopped) - 1/2 Cup
Green Chiles - 1/4 Cup
Shredded Chicken - 1 Cup
Cumin - 1/2 tsp
Garlic - 1/2 Tbsp.
Salt and Pepper - To taste
Ricotta Cheese - 1 Cup
Queso Fresco - 1/2 Cup
Monterey Jack Cheese (Shredded) - 1/2 Cup
Fresh Scallions - For garnish
Green Enchilada Sauce - 1 10 oz can
Directions:
Preheat the oven to 375°F / 190°C.
Bring water to a boil. Cook the pasta shells until al dente. Drain, rinse with cold water, and set aside to cool.
Pour the oil in a pan, then add the onions and cook on medium heat until softened. Add the green chiles, chicken, and spices and stir to combine. Cook on low heat for an additional 3-4 minutes.
Place chicken mixture in a bowl. Add ricotta, queso fresco, and monterey jack and stir until all ingredients are well combined. Stuff each shell with a large spoonful of the mixture.
Coat the bottom of a baking dish with a thin layer of green enchilada sauce. Place the pasta shells in the dish in a single layer. Cover with the rest of the enchilada sauce and some additional queso fresco and monterey jack. Bake at 375°F / 190°C for 30 minutes (or until the cheese has melted and the sauce begins to bubble around the edges). Enjoy!
