Ingredients
4 chicken breasts boneless, skinless
1/4 cup Italian dressing

24 ounces lobster tails thawed 4 tails (6 ounces each)
1 stick butter 1/2 cup butter
3 cloves minced garlic
1 tablespoon lemon juice fresh

Instructions
Preheat the oven broiler and move the oven rack about 6-8 inches below the broiler.
In a small bowl melt butter. Remove from heat and add the garlic, lemon juice, and parsley. Reserve 1/2 of the mixture for dipping.
Place lobster tails on a baking sheet or in an oven-safe dish. Using kitchen shears cut down the shell down to the fin. Using your fingers, gently pry the meat from the shell, keeping it attached at the base of the tail. Lift the meat so it is resting on top of the split shell.
Season with salt and pepper and brush garlic butter sauce over the top of the lobster tails.
Broil 10 minutes, brushing with the garlic butter halfway through, until cooked through. The lobster tails should be white opaque and internal temperature reaches 145F. Garnish with more parsley if desired and serve with remaining butter for dipping

Ingredients
For the marinade:
2 lb. bone-in skin-on chicken pieces mix of cuts
1 cup buttermilk *
¼ cup hot sauce
1 teaspoon EACH paprika garlic powder, black pepper, salt
For the breading:
1 cup flour
½ cup corn starch or replace with more flour
1 teaspoon EACH paprika garlic powder, onion powder, salt, pepper
Oil for spraying chicken Canola, Peanut, Vegetable, or olive oil
Instructions
Combine buttermilk, hot sauce, and spices for the marinade in a large bowl. Add chicken and mix to combine. Cover and marinate for up to 24 hours or use right away.
Pre-heat air-fryer to 375F.
In a medium shallow bowl, whisk the flour, cornstarch, and spices for breading. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it through with a fork.
Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. Transfer chicken to a Pre-heated air fryer in a single layer without overlapping. You may need to work in batches if needed.
Generously spray chicken with oil. Set the Air-fryer to 30 minutes and start. After 15 minutes, flip the chicken and lightly spray the other side with oil. Continue cooking for 10 minutes or until the chicken is golden and the internal temperature reaches 165°. Repeat with the remaining chicken as needed.

Pound the breasts to even thickness or slice in half horizontally to get evenly sized breasts and add to the bowl of marinade. Mix through until the chicken is fully coated in the marinade. Use right away if needed or marinate for 30-minutes or up to 12 hours.
Grill chicken over medium-high heat or in a large on the stovetop for 5-6 minutes per side or until the inside is cooked through and the outside is charred. Top with fresh avocado salsa and serve immediately.
To Make Avocado Salsa
While the chicken is grilled, combine all the ingredients for the salsa in a small bowl. Cover with plastic wrap in the fridge until ready to use.

1 pound chicken tenders (about 10-12)
1 large egg (beaten)
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon fresh chopped parsley (optional)
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup Panko breadcrumbs
1/2 cup Italian breadcrumbs
1/4 cup fresh grated parmesan cheese (optional)
Honey Mustard Sauce dipping sauce
Air Fryer Instructions:
Whisk Egg, olive oil, lemon juice, parsley, and spices in a medium mixing bowl. Add the chicken tenders and mix to combine.
In another bowl, whisk the breadcrumbs and parmesan cheese.
Dredge the tenders in egg mixture then in breadcrumb mixture, turning and pressing all sides to coat evenly. Spray both sides of the chicken generously with oil.
Preheat Air fryer to 400F. Add chicken tenders (without overcrowding) and cook for 10 minutes, flipping halfway, until cooked through, golden and crispy.
To cook in batches: cook all chicken tenders in small batches. Once all tenders have been cooked, add all to the air fryer at once and heat for 2-3 minutes or until crispy and heated through.
How To Bake:
Bake 400F. 7-8 minutes per side. Broil 2 minutes if desired for extra crunch.

Ingredients
1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese
1 egg
1/4 teaspoon salt
1/2 teaspoon
1/2 teaspoon basil or rosemary minced (or dry)
1/2 teaspoon oregano minced (or dry)
1 cup marinara sauce
1-2 cups mozzarella cheese
Instructions
1- Preheat oven to 500 degrees F.
2- Remove the stems from the cauliflower and cut into chunks, Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. If you don't have a food processor, you can use a cheese grater or chop it very finely.
3- Microwave the processed cauliflower uncovered in a microwave-safe bowl for approximately 4-5 minutes on high. Remove it from the microwave and allow it to cool for at least 4-5 minutes (trust me don't rush this step!). After the cauliflower is slightly cooled, place it in a kitchen towel and squeeze all the liquid out of it. Be sure to squeeze as much liquid as humanly possible.
4- Combine the cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until a dough texture forms. Spread the cauliflower mixture out onto lightly greased parchment paper or a pizza pan in the shape of a pizza crust.
5- Bake the crust for approximately 10-15 minutes (depending on your oven), or until the crust is golden and crispy. I cooked mine for approximately 15 minutes. After the crust is golden remove it from the oven and add your toppings, I used marinara sauce and cheese for a simple margarita pizza.
6- Place the pizza back in the oven but this time turn on the broiler, bake for about 2-5 minutes until the cheese melts. be sure to keep an eye on it because the broiler can burn the cheese quickly.
7- Slice and serve warm , enjoy!

Making this was a little time-consuming, but it's really worth it. It's quite spicy and packed with intense flavors. If you can't handle the heat, it's best to reduce the amount of chili powder specified or skip it altogether.

•500g marinated chicken breast/boneless chicken thighs
•30g butter and a dash of olive oil to keep it from evaporating •50g diced onion
•4 cloves of garlic, minced
•100g strained tomatoes (You can just throw some chopped tomatoes into a blender if you can't find this at your local store)
•100ml hot water
•100ml coconut cream
•1/2 tbsp garam masala
•4-6 drops liquid stevia (start with 3 and check if you're okay with the taste)

🍗 Marinade
•1/2 tbsp chili powder (1/2 tsp if you want a mild curry)
•1/2 tbsp turmeric
•1 tsp Himalayan salt
•1 tbsp coconut oil
•
👩🏾🍳 Instructions:
1. Cut your chicken into strips and rub in all the spices and coconut oil. Let it marinate for half an hour.
2. On medium heat, add your butter and a dash of olive oil.
3. Add your onion and minced garlic. Sprinkle some salt to get rid of the moisture in the onion. Once translucent, add the Garam Masala mix and stir.
4. Add in your marinated chicken strips and mix well. Let it cook for 8-10 mins.
5. Add the strained tomatoes and hot water. Cover and simmer for 5-7 mins on medium low heat.
6. Make sure the amount of salt is to your liking.
7. Pour in the coconut cream and let it all cook for about 3 mins.
8. Add drops of liquid stevia or 1/2 tsp of sugarfree maple syrup. The idea is to sweeten the curry just a tiiiiiiiiiny bit to balance everything and really bring out the coconut flavor. You will not regret it!
9. If you're like me, and prefer drier curries, leave it on the stove for a while longer.
10. Optional: Garnish with desiccated coconut if available and some fresh coriander leaves (I don't usually wait long enough to do this step. This is all for the 'gram)

Serve with some cauli rice or any low crab flat bread you have around. I went for a 100g microwaved cauli rice. It's about 25 kcal and 2g net carbs.

And with good reason too, it’s helped lots of people lose weight, control their diabetes and improve their overall health. So I can see why so many people want to jump on the Keto bandwagon. But there is a LOT of information online and I can understand how it can be intimidating and overwhelming as well for someone who just wants to start their journey and lose weight.
