How to Make: Black Pepper Sauce
Black Pepper Sauce 🔥
Yield 8oz
Ingredients
7oz beef stock
1 oz heavy cream
1.5 teaspoon corn starch
3 tablespoon butter
1 tablespoon fresh cracked
Black pepper
1 tablespoon minced garlic
1 tablespoon minced shallot
1 teaspoon tomato paste
Kosher Salt to taste
NOTE: This sauce is best paired with steak
Instruction
1. Mix together the beef stock, corn starch, and set aside
2. Melt 2 tablespoons of butter in a pan on low heat
3. Add the black pepper toast on low for a couple of seconds(be careful not to burn the pepper)
4. Next add the minced garlic, shallot, and tomato paste and continue to cook on low until the garlic is fragrant.( about 2 minutes)
5. After that combine the sauce base
6. Bring the sauce to a simmer and allow it to reduce until the sauce coats the back of a spoon
7. Finish with 1 tablespoon of butter and Kosher salt to taste

Ginger Garlic Salmon

Ingredients
1.5 lb salmon (cubed)
Salt to taste
Black pepper to taste
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoon honey
2 tablespoon neutral oil
[Sauce]
1/2 cup pineapple juice
4 tablespoon soy sauce (low sodium)
2 tablespoon rice vinegar
2 teaspoon corn starch
1 teaspoon sugar

1 large jalapeño (minced)
2 tablespoon minced garlic
1 tablespoon minced ginger
Cooking oil as needed

Instruction
1. Set your oven to broil on high
2. Season the salmon with salt, black pepper, paprika, garlic powder, honey and oil. Give it a mix then transfer to a baking tray line with parchment paper
3. Broil on high for 10 minutes or until your desired doneness
4. While the salmon is cooking, combine the pineapple juice, soy sauce, rice vinegar, sugar, black pepper, and corn starch. Whisk everything together and set aside
5. Next add oil to a pan on low heat. When the oil is warm add minced garlic, ginger, and jalapeño.
6. Once its fragrant add the sauce base and bring it to a simmer until the sauce is thickened
7. Remove the salmon from the oven and add it to the sauce
8. Mix until the salmon is coated with the sauce, transfer to a plate and garnish with fried garlic

How to make: Spicy Cucumber Salad
Cucumber salad
Serves 4
Ingredients
2 lbs cucumbers
Kosher salt to taste
1/2 cup soy sauce (low sodium)
1/2 cup rice vinegar
4 tablespoons granulated sugar
1 teaspoon sesame oil
3 tablespoons minced garlic
3 tablespoons minced Fresno chili
Instructions
1. Start by smashing the cucumbers and cut into bite size pieces
2. Season with kosher salt to taste and set aside for 15 minutes
3. Combine the soy sauce, rice vinegar, sesame oil, granulated sugar, minced garlic, Fresno chili and whisk until the sugar is dissolved
4. Strain out the excess liquid from the cucumber
5. Add the marinade, give it a mix and store in the fridge for 30-40minutes before serving.

Chili Garlic Shrimp
Serves 4-6
Ingredients
2 lbs shrimp size U12
Peeled and deveined
1 cup coco rico (coconut soda)
1 tablespoon fish sauce
1 tablespoon shrimp paste (w/ soy bean oil)
1.5 teaspoon corn starch
2 tablespoon salted butter
1 tablespoon neutral oil
3 tablespoons minced garlic
2 tablespoon minced Fresno chili
Kosher salt to taste
Black pepper to taste
Chives as desired
NOTE: This dish is best paired with steamed jasmine rice
Instructions
1. Blend together the coco rico, fish sauce, shrimp paste, corn starch and set aside
2. Season with shrimp with salt and black pepper to taste.
3. Add butter and oil to a pan on medium low heat. when the butter is melted, combine the minced garlic., Fresno chili, and fry on low until its fragrant (about 2 minutes)
4. Add the shrimp, turn up the heat and continue to cook until the shrimp is par cooked.
5. After that add the sauce base, season with black pepper, bring everything to a boil and simmer for 5 minutes or until the shrimp is cooked through.
6. Taste and adjust the sauce with kosher salt if needed
7. Plate up and garnish with chives.
