Autumn is upon us, and the pumpkins are ripe. Instead of buying canned pumpkin purée, pick up a cooking (sugar) pumpkin. One pumpkin will be enough for two pumpkin pies or four loaves of pumpkin bread. Cooking pumpkin to purée is easy. I have boiled it and roasted it. Roasting pumpkin is my favorite method, and here is how it is done: * Cut the pumpkin in half * Remove the innards * Set the cut sides down on parchment paper-lined cookie sheet * Roast at 350* for approximately 30 minutes (it is cooked when you can easily drive in your knife) * Let it cool * Squeeze out the meat from the skin * Mash #pumpkin #pie #bread #pumpkinpie #pumpkinbread #food
