HOW TO MAKE COUSCOUS
This is the traditional recipe of Moroccan couscous that I learned from my mom.
Ingredients:
For the couscous
1 kg of couscous grains, that you can easily find in grocery stores, even the instant couscous can be steamed the same way
2 TBSP OF OIL
1,5 tsp of salt, and 2 glasses of water, one for the first steaming, and one for the second steaming
1 TBSP OF S'men which is clarified butter, that you can find in Moroccan stores, you can make your own , I'll link a video about it very soon insha'allah
FOR THE BROTH
125G OF CHICKPEAS IF CANNED GO FOR 250 G
500G OF MEAT, LAMB BEEF CHICKEN OR MIX
TURNIP, POTATO or SWEET POTATO, CARROTS, the veggies that make difference and are essential are (PUMPKIN, CABBAGE, TURNIP)
1 BUNCH OF PARSLEY AND CILANTRO
SPICES (SALT, PEPPER, TURMERIC, GINGER) FEW SAFFRON THREADS OPTIONAL S'men or regular butter
