Form meatloaf
Bread crumbs (I used shredded stale biscuits)
1 Egg for binding (I used egg whites and a banana)
2 lbs beef
Half an onion chopped
Salsa (tomato paste or ketchup whatever)
Brown sauce
Soya sauce
Chili sauce
WorChester sauce
Maple syrup
Salt
Spices
Mix thoroughly
Prepare topping mix
Brown sauce. Ketchup. Brown sugar
Prepare vegetables
Slice 4 potatoes in half. Wrap in foil. Chop carrot (or two) into chunks. Wrap in foil with salt, spices and butter). Form meatloaf into a pressure pot friendly pan
Add 1 cup of broth to pan
Pressure cook
Put meatloaf potatoes and carrots into pressure pot. Set for 35 minutes of pressure cooking. Slow release for additional 10 minutes
Remove meatloaf, vegetables and broth in pot.
Prepare scalloped potatoes
Cut potatoes into slices Place at bottom of pot. Spread around. Add back in 1/4 cup of same broth Add 1/4 cup butter Add 1/4 cup creme or milk Mix and spread potatoes level Top with shredded cheese
Air fry meatloaf and potatoes
Uncover meatloaf, place on tray in pot
Cover with topping mix
Add back in potatoes and carrots
Air fry for 8 minutes @ 320°
Remove meatloaf and plate
Air fry potatoes only
Cook the potatoes for 5 more minutes at 395°
Remove potatoes and plate
Add paprika to potatoes
Serve

Makes 18 500ml jars
5 lbs tomatoes
4 lbs pickling cucumbers
2 lbs onions
20 cups water
8 Tablespoons granulated sugar
8 Tablespoons sea salt
Bring to boil
Remove from heat
Add 3/4 cup distilled white vinegar
Mix
Fill jars
10 Tablespoons sunflower oil (top with 1 Tablespoon per jar)
Boil jars for 10 minutes

Shock in Cold Water

Add Chicken in
Coat noodles with Sauce
Add in Vegetables

Kids Simple Greek Pasta & Chicken Nuggets in less than 60 seconds. Quick and simple dinner for the kids. They like chicken nuggets and very simple pastas. The pasta is a basic Greek pasta using butter and Greek yogurt and spices. The chicken I used are the solid breaded chicken pieces from Costco. 20 minutes in the air fryer (including warm up) and done. It worked out well.

Simmer 20 minutes

Cover & Reduce
15 minutes

1/2 cup of Rice
Basmati is best
I cooked 7 minutes in instant pot
Mix in Cabbage to Beef
Mix in Rice
Add maple Syrup to taste
Add 1/2 cup Broth (Beef is better)
Cook 40 minutes @375
Let cool 10 minutes
Serve with ligonberry or sour cream

Wall mounting a 47” commercial TV (in 60 seconds).Thomas & Annika get previously enjoyed LGs .
Thomas & Annika received TVs this week for their rooms. Previously enjoyed commercial 47” LGs from an Ottawa Bank. I am super impressed with the picture quality. This video shows the installation of Thomas’ TV mount. A shout out to my buddy Lyle for the TVs. Because it is a commercial tv, it only worked with a massive 800x400 VESA mount.
1. Mount side arms on TV.
2. Figure out how far to screw in wall plate from ceiling. I measured from top of plate to 6 inches above TV. 10 inches in my case. Higher up than normal but I wanted space below it.
3. Found two wall studs (24 inches apart in my case). Marked the hole placement 10 inches from ceiling.
4. Screwed in top place offsetting it slightly to get it level.
5. Screwed in bottom 2 screws, also in studs
6. If I didn’t have access to studs I would have put at least 6 drywall anchors instead.
7. Mounted the tv on the bracket.
8. Cleaned up cables.
Notes:
1. This “BigAssMount” was $45 from CanadaComputers. Similar units are on Amazon for $40-50. This was a 800x400 VESA due to the holes. It is unusual. Your tv will vary. Most TVs of this size or smaller can get buy with a smaller $18 mount.
2. The commercial tv has every input possible but only one HDMI, so I added a HDMI switch) $10 from CanadaComputers. One input being the firestick 4K, the other input being my son’s Nintendo Switch. Now he can switch back and forth.
3. The Firestick 4K requires a high power USB plug or else you may experience no volume.
4. The cable cover is $14 (Home Depot)
5. The two way tape is $9 (HomeDepot).

My 5 year old big Visio bit the dust so I bought a new TV for Family Day. Being a Mac guy I never used Alexa but liked Amazon prime. The TV is actually really good especially for the price and everything it can do. It’s not a Videophile’s TV but close to a Hisense or TCL class 4 or 5.
Since I kind of like editing and don’t mind negative comments, this is a crazy one minute version of the setup/review video. Long version on our YouTube page. TV tech is getting better. BUT will the TV last? Thomas, Annika and I had fun setting it up.

Overall pretty good. Next I’ll need to adjust the picture. Not a “Videophile” TV but great for my everyday use. At regular price a budget Hisense/Visio/LG etc is better. However at a price of $629, it is excellent value considering all the software features. The “Alexa” feature works well in switching between the streams/channels etc. I tend to use the remote microphone.

Mainly I use Amazon Prime, Netflix, AppleTV and Over the Air TV
Do an antenna over the air scan. In Ottawa I generally get 23 stations.

Doing a test run through Amazon Prime.
Adding my AppleTV box to hdmi3 and tested. I will move the AppeTV box to another TV once I test out the streaming version on this TV.

Do not use the ethernet input if you have Wifi.

Engineer Dad Cooks. How I make easy pizzas for my kids using Costco frozen dough. I use to make my own dough. Sometimes good. Sometimes OK. I stumbled upon Costco’s frozen dough. It is excellent and $29.99 for 48. Not worth making my own. One box lasts a long time. I bake the dough for 5 minutes at 400°. Put the topping on and then bake it for another 20 minutes at 500°. Works every time!
Although you can use anything you have on hand. I’ve made some weird ones. This pizza has an approximate price of:
Dough 62.5¢x2=$1.25
Pepper 1/2= 30¢
Onion =15¢
Tomato sauce=40¢
Bacon =¢62 or coldcut
Cheese = $1.00 per 110 grams
Total=$3.72
1 pizza pie = $1.86
8 pieces=0.46¢ per piece

Engineer Dad Cooks. Easy Spaghetti Sandwich. As a kid, my favorite school lunch sandwich, my mom prepared was a Spaghetti Sandwich. I loved them. It was a rare treat in the forest of Baloney and Peanut Butter. They are best prepared with spaghetti that is at least 1 or 2 days old. It also is best cold. In this case I didn’t have any leftover spaghetti so I made some for supper and used that. Also it tastes better with plain white sandwich bread, I only had healthier light rye. Good enough!

Bought too many tomatoes at Costco, so I decided to make generic pasta sauce. #engineerdadcooks
Tomatoes quartered. I used 38.
Peppers chopped. I used 4.
Onions chopped & fried. I used 3 yellow, one red. What I had on hand.
Add to taste
Soya Sauce - 1/3 cup
Hot peppers - a handful
3 scoops of garlic
1 teaspoon of basil
1 teaspoon of celery seed
A little salt
A little hot pepper spice
A little hot sauce
A little dab of Maple Syrup
I simmered the sauce a good 5 hours to reduce
Process pints 40 minutes

Engineer Dad Simple Kids Sloppy Joe Shepards Pie
Easy Kids Sloppy Joe Shepard’s pie. Normally I do it like my mom did with a basic beef bottom layer but decided to try it with sloppy joe mix. Middle layer for me is always creme corn and nice real mashed potatoes on top. I used sweet potato here because it was all I had. I much prefer normal potatoes. The sloppy joes made it more kid friendly.
* chopped onion (1 )
* Chopped cabbage (1/8)
* 1 lb lean ground beef
* 1 can sloppy Joe sandwich sauce
* Salt
* 5 potatoes - quartered (medium) boiled until easy to pierce with fork
* 1/2 cup milk or creme or evaporated milk
* Large chunk of butter
* 1 large can cream corn
Bake at 375 for 30 minutes. You can then add more cheese and grill for a couple of minutes if wanted
