Who remembers the picnic bar? Crispy and chewy with lots of peanuts and raisins and smothered in chocolate. Well this is my vegan version.

They are also one of the easiest things to make. Only 5 ingredients and 3 easy steps.
✔️ You’ll want to save this one
1.25 cups of vegan dark chocolate (about 200g)
1/4 cup nut butter (60g)
1.75 cups puffed quinoa (45g)
1/2 cup salted peanuts (70g)
1/2 cup raisins (100g)
Optional extra drizzle of chocolate and nuts on the top
1️⃣ Put the quinoa on a baking tray and put in the oven for 5-6 mins to lightly toast (don’t skip this step as it makes the bars lovely and crunchy)
2️⃣ Melt the chocolate and stir through the nut butter and fully combine, then pour in the quinoa, peanuts and raisins and stir to mix in
3️⃣ Spoon the mix into an individual brownie tin and leave to set in the fridge for a couple of hours

RED GODDESS SALAD 🔥
Green goddess is great, but have you ever tried a RED GODDESS SALAD...?
Instead of green veg, we’re using all things red + pink, then topping with the creamiest red goddess dressing.
ad | @oxo.europe challenged me to put my spin the much loved green goddess salad, so I decided to get creative. I used their garlic press to crush my garlic, and zester for my lemon. Then once the dressing was done, I poured into my salad dressing shaker, which is great for mixing + storing.
I’ve written my full recipe below - so enjoy, and let me know if you give it a go!
INGREDIENTS (serves 4-6)
1/2 red cabbage
4 cooked beetroots
1 red onion
2 red peppers
1 jar sun dried tomatoes (+ oil)
100g cashews
1 shallot
4 tbsp nutritional yeast
2 garlic cloves
1 lemon (juice + zest)
30g fresh basil
Splash of water (to loosen)
Salt
Pepper
METHOD
1. For the red goddess dressing, combine the sun dried tomatoes + their oil, cashews, chopped shallot, nutritional yeast, crushed garlic, lemon juice + zest, fresh basil + 2 cooked beetroots. Blend until creamy + smooth, then season to taste with salt + pepper. Loosen with a splash of water if needed.
2. For the salad, finely chop the cabbage, beetroot, onion + peppers.
3. In a large bowl, add the chopped veg, then pour over enough dressing to completely cover. Garnish with fresh basil, then enjoy!

“STEAK” GYROS 🥙
Ingredients
1 lions mane mushroom
1 tomato
Pickled onions
Coriander
Hot sauce
Pita bread
For the steak marinade:
2 tbsp beetroot juice
1 tsp garlic powder
1 tbsp soy sauce
1 tsp onion powder
1 tbsp smoked paprika
Salt and pepper
2 tbsp olive oil
For the tzatziki:
4 tbsp vegan Greek yoghurt
Half a cucumber
Handful of mint
1 garlic clove
Glug of olive oil
Juice of half a lemon
Salt
Method:
1. So to start we’re going to drizzle some oil and some salt in a skillet and get the mushroom in the pan to get used to it. Spread it round the pan to bring it up to heat. Get another pan and rest it on top of the mushroom, but don’t press.
2. Take the top pan off, move it around the pan again and repeat. Now flip the mushroom over and it should have a slight sear to it. Repeat the process on the other side. It should become a steak shape.
3. Now mix together your marinade ingredients for the steak in a container. Get the steak in there and drown it in the marinade. Get it in all the nooks and cranny’s. Then place in the fridge.
4. Mix together your tzatziki ingredients. Pickle your onions and chop up your tomato.
5. Now get the steak out the fridge, add some more oil to the skillet and fry off the mushroom again for 3/4 mins each side or until charred. You can also do this on a bbq.
6. Heat up your pita, load on the tzatziki and the steak and fresh veg, top with hot sauce and enjoy!

CARAMELIZED MISO EGGPLANT 🍆
I’m bringing FancyaQuickie? back with a bang. Simple and effective recipes that always slap!
The flavours in this eggplant dish were incredible and so easy to wack in a Tupperware and take to work or out with you!
Ingredients
1 eggplant(aubergine)
Sesame oil
Miso marinade:
1 teaspoon white miso paste
1 tsp soy sauce
1 tbsp date syrup/maple syrup
1/2 tbsp rice vinegar
1 tsp garlic powder
1 tsp gochugaru (chilli powder)
Serve with spring onions, sesame seeds and rice
Method:
1. Start by cutting your eggplant in half and scoring cross cross into the flesh on both sides.
2. Heat up a pan drizzle in some sesame oil and add the eggplant to the pan to sear and caramelize the flesh side.
3. Mix together all the miso marinade ingredients in a little bowl until combined.
4. Flip each side over and glaze the flesh with the miso marinade.
5. Add to the oven at 180C for 20/25 mins. Half way through I did another glaze of the marinade. Just keep an eye on it so it doesn’t burn.
6. Once done it should be caramelized and golden. Serve with spring onions, sesame seeds, rice and sriracha and enjoy!

Recipe (2 servings, 15min prep time):
-1 bag (300g) dumplings
Prepare according to the packet instructions
-2 Tbsp soy sauce
-2 Tbsp white wine vinegar
-1 Tbsp sugar
-1 Tbsp sesame oil
-sesame seeds
-2 cloves garlic, minced
-a thumbsize piece of ginger, minced
Mix to combine.
-a handful fresh cilantro
-3 small cucumber, chopped
-2 scallion green, chopped
Toss to combine and serve.

Vegan Taco Meat! Wholesome ingredients, incredible flavor (and texture!).

Taco Meat
▢⅔ cup (135g) brown or green lentils
▢¼ packed cup (32g) walnuts
▢8 ounces (227g) cremini mushrooms, stems removed & very roughly chopped
▢2 medium shallots, roughly chopped (or ~80g roughly chopped onions)
▢1 tablespoon flaxseed meal
▢3 tablespoons nutritional yeast
▢1 teaspoon kosher salt, plus more to taste
▢Freshly cracked black pepper
▢1 teaspoon smoked paprika
▢2 to 3 tablespoons taco seasoning
▢½ teaspoon porcini mushroom powder
▢2 teaspoons vegan beef broth seasoning or bouillon cube crumbled
▢2 to 4 tablespoons olive oil or cooking oil of choice
For serving
▢Avocado Crema
▢Spicy Cabbage Slaw
▢12 taco-sized corn or flour tortillas
▢1 lime, cut into wedges

Pistachio Ice Cream 🥹🍨

INGREDIENTS
100 g unsalted, shelled pistachios soaked in boiled water for 20 minutes to soften
30 g cashews soaked in boiled water for 20 minutes to soften
1 400g tin coconut milk the creamy part that has set at the top (refrigerate overnight)
1 cup soya milk or milk of choice
1 pinch salt
1.5 tsp vanilla extract
1/3 cup maple syrup to taste
INSTRUCTIONS
Drain and rinse the soaked pistachios and cashews and add to a blender along with 1 cup soya milk, the coconut cream, salt, vanilla extract and maple syrup. Blend until smooth.
Pour into ice cube trays and freeze for 1-2 hours until solid.
Place in a high powered blender along with a splash of soya milk to help with blending. Blend until a thick ice cream consistency forms (it should resemble soft serve). Serve immediately or you can freeze again so a more solid, ice cream-like texture forms. Enjoy with crushed pistachios and a drizzle of caramel or syrup..

Oh yeahhhh it will! Another win combining two desserts that is healthier and plant-based. It comes out super gooey and moist and is topped with my go-to vanilla cashew cream.

recipe:
banana bread:
- 2 cups almond meal
- 1/3 cup vanilla protein powder
- 2 tsp baking powder
- 1/4 cup almond butter
- 3 overripe bananas, mashed
- 1/3 cup rice malt syrup
- 1 tsp vanilla extract
- 1/2 cup soy milk (plus a dash more if needed)
- 2 cups fresh or frozen strawberries, halved
vanilla cashew cream:
- 1/2 cup cashews, soaked in hot water for 10 minutes and drained
- 1/2 cup vanilla protein powder
- 1 cup coconut yoghurt
- 1 tsp vanilla extract
- 2 tbsp rice malt syrup
garnish:
- cinnamon, to dust
- strawberries, halved
1. Preheat oven to 175°C and line a loaf tin.
2. Mix the almond meal, protein powder and baking powder in a large bowl. Add the almond butter, mashed bananas, rice malt syrup, vanilla extract and soy milk. Mix until well combined. Gently fold in the strawberries.
3. Pour the batter into the loaf tin and shake to smooth the top.
4. Bake in the oven for 1 hour, or until the edges are golden.
5. Remove from the oven and allow to sit for 20 minutes. Remove from the loaf tin and allow to sit for a further 10 minutes.
6. Meanwhile, to a food processor add all of the ingredients for the vanilla cashew cream and process until smooth.
7. Frost the banana bread with the vanilla protein cream and dust with cinnamon and top with strawberries. Slice and serve.

Ingredients
1 can chickpeas
1/4 cup tahini
1 tbsp peanut butter
3 tbsp brown sugar
3 tbsp maple syrup
1/4 cup + 1 tbsp oat flour
2 tsp vanilla
Sprinkle salt 🧂
Directions 🗺
1. Drain, rinse and dry your chickpeas!
2. Add to a food processor; along with all the ingredients above - pulse until smooth
3. Next add your chocolate chips and fold them into the dough
4. Scoop them onto a cookie sheet and let them set in the fridge for 15 minutes; pop in the freezer for 5 and enjoy!

Coronation Cups!
If you are having a street party or some sort of celebration for the coronation then these are the easiest treat to serve up.
A 3 ingredient base topped with yoghurt and berries.
They are also a good breakfast option as full of good natural ingredients.
I’ve also tried them frozen and that works too if you want to fully prepare beforehand. Just take out of the freezer about 20 minutes before you serve (no need to fully defrost as it’s nice with the frozen yoghurt).

Base ingredients
1.5 cups gluten free oats @justnatural_uk (PR)
1/2 cup peanut butter @organickitchen_uk (PR)
3 tbsp maple syrup
Topping:
Vegan yoghurt
Berries
Makes 6 large cups
Preheat the oven to 170C fan
1, Mix the base ingredients together and spoon into a muffin tray*. I used the end of a rolling pin to press down the middle so you have a cup shape.
2, Bake for about 12 minutes until lightly brown. Leave in the tray to cool and harden
3, When ready to serve, top with yoghurt and berries
*I used a silicone muffin tray as they pop out really easily and don’t need greasing but you could also use a metal one, just grease well first

These chocolate crunch cups only have 6 ingredients and have a gooey no bake brownie base with a crunchy chocolate topping. Super easy to make too.
Makes 12

Base ingredients:
1.5 cups (150g) pecans
12 large, soft medjool dates
1/2 cup (120g) almond butter
3 tbsp raw cacao powder
Topping
140g melted dark chocolate
1 cup (25g) puffed quinoa*
*Optional but recommended - for a crispier texture toast your puffed quinoa in the oven for 5 mins before using
1, Add all the base ingredients to a food processor and blend until fully combined. Add 1-2 tbsp of water as you blend if your dates are a bit dry. It should be really soft and sticky.
2, Separate into 12 pieces, press down into a cupcake tray or cases then put in the fridge whilst you melt the chocolate
3, Melt the chocolate and add the quinoa and mix well. Top each one with a spoonful of the chocolate mixture then refrigerate again
Store in the fridge.

✨INGREDIENTS✨
1 cup cooked chickpeas
3 tbsp peanut butter
1/4 cup maple syrup
1.5 tsp vanilla
1/4 tsp baking powder
1/4 tsp baking soda
2 tbsp vegan chocolate chips
Flakey salt for topping
😋 Blend your chickpeas, peanut butter, maple syrup & vanilla until smooth.
💜Add in your baking powder & soda and blend for 20-30 seconds.
🧊 If your cookie dough is warm let it cool for 5 minutes in the freezer, otherwise the chocolate chips will melt.
🍫 Mix in your chocolate chips & place into a greased skillet. Top with more chocolate & flakey salt.
🔥 Bake @350f for 15 minutes until the top is golden
🍦Top with vegan ice cream & enjoy!!

RAISE your hand if you love shortbread but cannot eat them because you’re gluten and dairy free 🙋🏽♀️ These shortbread bars will genuinely make you fall in love. The contrast between salty and sweet is just chefs kiss
Base;
- 2 cups almond flour
- 3 tablespoons maple syrup or honey (if not vegan)
- 2 tbsp coconut oil
*put the base in the freezer to set while you make the caramel
Caramel;
- 1/2 cup almond butter
- 1/4 cup tahini
- 1/4 cup coconut sugar
- 1 tbsp coconut oil
*Melt all of this together using the double boiler method, then add on top of the base.

ingredients 📖🥝🥥
-400 ml full fat coconut milk
-100 ml maple syrup (or any sweetener you prefer like)
-1 whole kiwi (80-100g)
Optional :top it with chocolate chips and fresh mint
INSTRUCTIONS 🥣
•blend all the ingredients until smooth
•add them to ice molds and freeze
•once completely frozen blend the cubes again until smooth
•eat straight away or store in to an airtight container in the freezer.
You can change the kiwi for any fresh fruit or infuse the coconut milk with pea flowers ,chocolate coffee.

I am not a nagger, but I am NAGGING YOU to make this rn!! It is THAT good…
For all my fellow raw vegan dessert lovers, or any dessert lovers, this one if for you - you are going to love it!
Base ingredients;
- 1 cup of walnuts
- 1 cup of dates (pitted and soaked in hot water for 30 minutes)
- 1 tbsp maple syrup
- 1 tbsp coconut oil
Cashew cream layer;
- 2 cups of cashews (soaked in hot water for 30 minutes or more)
- 1/2 cup coconut cream
- 1/4 cup maple syrup
- 1 tbsp coconut oil
- 1 pinch of vanilla
- 1 tbsp of 🍋
Directions;
- Blend the base and set in a square tin
- Blend the cashew layer and put it on top of the base
- top with frozen raspberries (or any fruit of your choosing) and shaved dark chocolate
- put it in the freezer to set, cut it, then keep it in the freezer (this dessert stays in the freezer).
That’s it! You would think it’s complicated because of how beautiful it looks, but nope…easy peasy

THE BEST NO-BAKE DESSERT…🤩 NO BAKE. BROWNIE. BATTER. BARS (and they’re gluten-free & vegan)!
BROWNIE BATTER
3/4 cup creamy peanut butter
1/3 cup + 1 tbsp maple syrup
1/4 cup coconut oil, melted & cooled
1 tsp vanilla extract
1/2 cup cocoa powder
1/2 cup + 3 tbsp almond flour
1/3 cup mini vegan chocolate chips (but honestly I measure with my soul)
Pinch sea salt
CHOCOLATE
1/2 cup chocolate chips
2 tsp coconut oil
Flaky sea salt for topping
Line a quarter baking sheet with parchment paper. In a medium bowl, mix together the peanut butter, maple syrup, melted & cooled coconut oil, and vanilla extract until smooth. Add in the almond flour. Sift the cocoa powder into the bowl, and add a pinch of salt. Mix to incorporate. Fold in chocolate chips. Transfer the brownie batter to your prepared baking sheet and pack it down using a spatula and your hands into a rectangle-ish shape about 1/4-1/2 inch thick.
In a separate bowl, melt the chocolate chips and coconut oil together in your microwave in 15 second increments, stirring between intervals until completely glossy and smooth. Pour melted chocolate on top of the brownie batter and smooth until even, over the entire surface area of the brownie batter. Add flaky salt on top and place in the freezer to set for about 30mins or until the chocolate has hardened. Slice into bars, and enjoy!

CHEWY GOOEY TAHINI BLONDIES (vegan & gf) @healthygirlkitchen
Ingredients:
2 cups almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup tahini
1/2 cup coconut sugar
1/4 cup unsweetened almond milk
2 tbsp maple syrup
1 teaspoon vanilla extract
1/2 cup vegan chocolate chip
Instructions:
1. Preheat your oven to 350°F (175°C).
2. Line an 8x8 inch baking pan with parchment paper
3. In a large baking bowl, mix tahini, coconut sugar, almond milk, maple syrup and vanilla extract. Mix until smooth and well blended. Then, add the almond flour, baking soda, and salt. Mix well.
4. Fold in the vegan chocolate chips.
6. Add the batter into the prepared pan and smooth the top with a spatula.
7. Bake for 20 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
8. Let the blondies cool in the pan.
9. Lift out of the pan using the parchment paper and cool completely before cutting into squares.
10. Enjoy 🤎
