Beef, Sausage, Crushed Tomatoes & Vegetables over Pasta
This is a simple meat sauce & vegetable recipe to be served over pasta. Recipe uses 1/2 lb of ground beef (80 % lean) and 1/2 lb of sweet sausage.
Prep & Cook Time: 55 mins
INGREDIENTS
Extra-virgin olive oil
1 medium onion, coarsely chopped
2 garlic cloves, peeled and coarsely chopped
2 celery stalks, coarsely chopped
2 carrots, coarsely chopped
1/2 pound ground beef (80% lean)
1/2 pound sweet sausage
1 (28-ounce) can crushed tomatoes
1/4 cup flat-leaf Italian parsley
2 bay leaves (can also use basil)
Salt and freshly ground black pepper
Pasta (your fav)
PREP & COOK
Coarsely chop carrots, celery, onion & garlic
Coarsely chop fresh parsley
Heat large skillet to medium heat
Add drizzle of olive oil to the skillet
When almost smoking add onion & garlic
Cook for 6 minutes (or when onion becomes soft)
Add celery and carrots
Sauté for 5 minutes
Raise heat to high
Add ground beef
Break up the ground beef
Add sweet sausage
Cook Stir for 10 minutes (or till meat has "browned")
Lower heat to medium low
Add tomatoes, parsley & bay leaves
Season with Salt & Pepper
Simmer for about 1/2 hour (until sauce thickens)
Remove Bay leaves
While pan simmers add water to your favorite pasta pot - about 1/2 filled
Add salt
Add pasta when water begins to boil
Cook for about 9 minutes for al dente
Presentation
Serve meat sauce over pasta with grated cheese, bread & your favorite wine

Riffin on "Hark The Herald/Angels We Have Heard On High" (A 3 Camera Shoot)
This is a 3 camera shoot video with external audio (Reaper) recorded
Lighting (non trivial)
1) Set up a 3 point lighting configuration: Key, Fill & Back
2) Put a spot light on the Nutcrackers
3) So the challenge with the lighting was to have the 3 lights positioned in relationship to the 3 cameras so that the "light" fixture did not get reflected on the guitar - took a bunch of tests
Video Editing Tips
1) In order to sync up the 3 video files and the audio file I do a "Hand Clap" before each take. In the video editor I'm able to sync up the 3 video files and the audio file in the timeline.
2) I keep the takes to be under 10 minutes to avoid "audio drift". My recordings start to have noticeable audio drift after about 10 minutes.
3) Jump Cuts: There are a few places in the song where I am repositioning my hand on the fret board from the 1st fret to the 5th fret. In the video editor I do a frame by frame view of moving to the 5th fret, I locate the frame where my hand is leaving the fret board and insert the "cut". So when the video is played, the jump cut is during the repositioning.
Reaper (after alot of playin around, this is where I landed)
1) Recorded Mono with an sm81
2) High Pass EQ with a "Notch" cut at about 300Hz
3) Double Tracked (copied the Mono Track)
4) Sent the tracks to a Reverb Bus
5) Put the tracks in a Reaper Envelope to render in Stereo
6) Pan Left 75%; Pan Right 75%

iPhone To Windows file transfer - A step by step tutorial for configuring an SMB network connection

There are a few different ways to setup a Windows login method(e.g., PIN login). Unfortunately, this procedure only works with Windows UserID/pw login method.
***UPDATE AUG-23***
Replaced my Asus Router with Netgear Nighthawk. So I'm back to using this iPhone to PC file transfer method. I find that my home network sometimes drops my iPhone connect to server link, so when this happens I reconnect to my PC from my iPhone. This is a bit of a drag, but is still much better than other methods I have tried.
***UPDATE DEC-22***
Replaced my NetGear Router with an Asus Router. Discovered that the Asus Router does not support SMB protocol from iPhone Connect to server. So have gone back to iPhone-MAC AirDrop. Please note that this solution is limited to routers that support SMB protocol.

I've been doing SMB (Server Messenger Block) file transfers from my iPhone to Win11 for a while. SMB is a network transfer protocol provided in Windows (so there is no 3rd party software or web sites needed for this network configuration). In this video, I walkthrough the "1 Time" setup items for enabling an SMB client on a Windows 11 PC.
Note: The same steps can be applied to Win10 (you'll just need to follow Win10 navigation paths to the same settings I show in this video).

***LESSONS LEARNED***
From time to time you may need to reboot your router, when you do this a new ip address will be assigned to your PC. So you'll need to remove the "old" ip address from your iPhone and then just "connect to server" with the newly assigned ip address.
I've also noticed when transferring larger files (like a 4k vid clip) you need to be physically close to the router for a successful transfer.
Photos have been OK to transfer from anywhere within range of the router.
And If you add a new shared folder to your Desktop, you'll need to "refresh" the SMB connection on your iPhone. You refresh the iPhone SMB connection by removing the "connect to server" ip and then do "connect to server" with same ip. The new shared folder on your Desktop should now appear on your iPhone.

Egg and Avocado Sandwich
This tasty sandwich is easy to whip up for breakfast or lunch.
INGREDIENTS
2 Eggs
1 ***RIPE*** Avocado
1 drizzle of extra-virgin olive oil
1 scallion
Pepper & Salt
1 Bagel/English Muffin/Garlic Bread... (i.e., your favorite breakfast sandwich bread)
Optional - Hot Sauce
DIRECTIONS
Prep
Chop Green & White parts of 1 scallion
Cut the avocado, slice about 1/2 of the avocado
Beat together egg and egg white & season with salt and pepper.
Cook
In a small nonstick skillet, heat oil over medium (about 2 minutes)
Add chopped scallion and cook until softened (about 1 minute)
Add eggs and cook, stirring, until almost set (about 1 to 2 minutes)
Fold edges of egg mixture in to form a patty
Continue to cook until set, about 20 seconds more
Assemble
Slice bread & toast
Place egg toasted slice
Season with salt, pepper
Layer with avocado
Hot sauce, if using
Top with toasted slice
Prep & Cook Time: About 15 minutes

Riffin On Blackbird - 3 Camera Shoot
This video is a 3 camera shoot of playing Blackbird using a 2 finger picking style. A link to the tutorial explaining this picking style is below. After learning the pattern, I played along with the actual recording to see if I could play it while keeping time with the "click track" you hear in the song - not an easy thing to do. However, after listening a few times, I did pick up a few subtleties. In the pattern, Paul is using his thumb on the E, A & D strings to keep time with the click track. Also, between the "Blackbird fly..." choruses, when its just the guitar riff, he is "pinching" the E & B strings when he moves up the fret board, instead of just the E string as he does throughout the rest of the song.
One other thing I noticed from watching Paul play Blackbird on various videos, is that when he plays the verse riff and then does a short tag to end the riff, he plays an A7 chord instead of just B string 2nd fret.
Its really enjoyable to finally play the song in a way that is "closer" to how it was played when it was recorded. In this take I'm playing from "muscle memory" after playing along with the song a few times. So I hope this video is helpful to folks who have been wanting to learn how to play it.
