2nd Try at Bark Grafting a Persimmon Tree
I had some leftover scion wood and I don't know if it would keep till next spring or not so I decided to give it another go. Typically, bark grafting should be done in early Spring till June. It is currently late July. This is my 2nd try at bark grafting a persimmon tree. Check out the other two videos in which I show my attempts at bark grafting.
If this doesn't work, I will order some more grafting wood and try it again in the spring. I will try tongue and whip grafting on some persimmons that are small and growing wild.
I learn a little more with each attempt and the main thing is not to get discouraged and give up.

INGREDIENTS
1 cup mayonnaise
1/4 cup dill pickles
1 teaspoon dijon mustard
1 teaspoon lemon juice
1/2 teaspoon Worcestershire sauce
1 tablespoon dill weed Use fresh dill if you can find it. If not just use dried dill weed.
1 clove of minced garlic
1/2 teaspoon hot sauce I prefer to use Texas Pete or Franks Red Hot
1/4 teaspoon sea salt or kosher salt
1/4 teaspoon pepper
INSTRUCTIONS
Step 1: Add the mayonnaise into a small bowl.
Step 2: Add in the rest of the ingredients.
Step 3: If you have a hand mixer or food processor, these can work well to mix this condiment up. If not, just use a whisk or spoon, and mix the ingredients well until you get that perfect consistency.
Step 4: Refrigerate for a few hours before serving.

Trying Red Hot Cinnamon Pickles for the first time!
Today we are trying out a gift from Dean Family Acres, Cinnamon Red Hot Pickles. Up until Matt gave me these, I have never heard of them before. His wife makes them and he has wanted me to try these. They are very unique and interesting and I am all about trying new things, especially if they are unique and interesting haha.
Cinnamon Red Hot Pickles. Check out below for the recipe on how to make these treats.
Soaking Ingredients:
2 gallons of Cucumber chunks
2 cups pickling lime
Brine Ingredients:
1 cup vinegar
1 small bottle of red food coloring
1 tablespoon of alum
2 gallons of water
Pickling Syrup:
4 cups vinegar
15 cups sugar
2 packages Red Hot Cinnamon Candies
8 Cinnamon Sticks
4 cups Water
Directions:
Soaking
Step 1: Cover cucumber chunks with a solution of lime and 2 gallons of water.
Step 2: Soak for 24 hours.
Step 3: Drain and rinse well. Soak in cold water for 3 hours and drain.
Brine
Step 1: Place cucumbers in a large dutch oven or large stock pot.
Step 2: Add Brine Ingredients and simmer for 2 hours.
Step 3: Drain and rinse.
Pickling Syrup
Step 1: Mix together syrup ingredients and bring to a boil. Be sure to dissolve all of the red hot candies.
Step 2: Pour syrup over drained cucumbers. Let stand overnight.
Step 3: Drain and heat for 3 mournings. On the third morning, pack in jars and seal. Put one cinnamon stick per jar.
Note: For this recipe, use large cucumbers that have a yellowish color. The lighter-colored flesh will produce better red color.

Lee's Famous Recipe NEWEST SANDWICH (Spicy Bourbon Chicken Sandwich) only available in Two Places!!
Greetings Food Junkie Followers,
Today we are trying out Lee's Famous Chicken Newest Sandwich, the spicy Bourban Chicken Sandwich. Now, this is a new item on the menu and it is only available in two test markets. Ohio and South Carolina. It just so happens that I live near Lee's Famous Chicken in South Carolina.
I love Lee's Famous Chicken. One item that really brings me back is their Tater Wedges. So when I saw that Lee's Famous Chicken had the Spicy Bourban Chicken Sandwich come out, I knew I had to go try it and grab some tater wedges at the same time.
The new Spicy Bourban Chicken Sandwich from Lee's is based on the crunchy chicken sandwich that they came out with a while back. It is coated in this new spicy bourbon sauce.
Lee's Famous chicken is fast food chicken franchise that has been around since the 60s. It isn't as widely spread as some other restaurants, I think they have around 130 stores. The story goes that Lee is the nephew of the famous Colonel Sanders from KFC.

Easy to Make Sourdough Starter Using Potato Flakes
Making Homemade Sourdough Bread can sound intimidating. Having to make a Starter is the number one reason some folks are hesitant to begin making sourdough bread.
In reality, it can be very simple and easy. If this is your first time, don't sweat it. By using this easy-to-make sourdough starter using potato flakes, you will be a pro in no time.
Why do I Need a Starter?
In order to make bread, you have to have a leavening agent. A leavening agent is simply the substance that causes bread to rise.
This happens when a gas called carbon dioxide is released either through a chemical reaction or when the yeast begins feeding on the sugars. This causes the dough to expand
In this case, the sourdough starter is our leavening agent that causes our bread to rise.
The Flavor and Texture of the Bread Made with this Starter:
This starter produces a very light and fluffy bread that is slightly sweeter and less sour than traditional sourdough bread.
The results will be similar to traditional white bread but will all the great benefits of sourdough bread.
Ingredients
3 tablespoons Instant Mash Potatoes
3 tablespoons white sugar
2 1/4 teaspoons active dry yeast
1 cup water (lukewarm)
Instructions
Step 1: Start with a clean glass container or a large bowl. I like to use a mason jar.
Step 2: Add in the warm water, then add in your dry ingredients
Step 3: Stir with a wooden spoon. Do not use metal because it can react with the ingredients.
Step 4: Cover the dish with a clean dishcloth or cheesecloth, something where it can breathe. Do not refrigerate this mixture at this point. Leave it in a warm place at room temperature so the yeast and bacteria can go on a feeding frenzy.
Step 5: Stir the starter every day.
Step 6: On the morning of the 5th day, you will feed the starter. Add in 3 tablespoons of instant potato flakes, 3 tablespoons of white sugar, and 1 cup of lukewarm water.
Step 7: Stir this and continue to let it sit out at room temperature for at least 6-8 hours.
Step 8: After the starter has sat out at room temperature for 6 to 8 hours, remove 1 cup of the starter to make your bread. Make sure to stir the starter really well before you remove the 1 cup starter. You will then place the rest of the starter in the refrigerator.
Step 9: Feed the starter every 3 to 5 days using steps 6 through 8.
Notes
On the 5th day, you are ready to use the starter to make your bread so be prepared for this last step. You will use this to make bread every 5 days. You can make bread every day if you feed it each morning and then remove the 1 cup of starter at the end of the day to make the bread.
If you are not going to make bread at least every 5 days, you can still feed the starter and then discard the 1 cup. There are also recipes that you can use the discard for as well.

Are you thinking of planting some trees on your homestead? Trees are a very important part of any homestead. They take a long time to produce but once they are planted they will last a very long time. If you think about a nut tree such as a pecan tree, it can produce food for several decades. You will not get that kind of production from any other type of plant, especially with minimal effort. That is why I think that trees should be planted first on a homestead before anything else. Homesteaders of the Southeast Meetup | Introduction and Session 1 | Croft State Park
This past weekend we went to Croft State Park in Spartanburg, SC for the very first Homesteaders of the Southeast meetup.
Part 2 is the introduction and talks a little about why this is taking place, who is at this event speaking, and so on. When people were arriving, we had a meet and mingle going on. Just getting to know each other and chatting.
Then we had this introduction. After that, we had our first breakout session. I went to the session on Animals on the Homestead that was given by Dave and Ashley Bentley of Blessed Bentley Homestead.
Megan Hight from Living the Hight Life Off Grid was also giving a talk on living off-grid on the other end of the shelter. You can check out her video on that speech. I am sure it is very informative as well.
Why Were Homesteaders of the Southeast Started
Homesteaders of the southeast started to connect with other like-minded people. The central theme is community. The creators of the group wanted to create a community of people who members can call on when there is a need, or a question arises.
Even if you are a seasoned gardener, or have raised animals all your life, there will be a time when you go through something you have never gone through with your farm.
The idea is that maybe someone in the community has already gone through that before and can offer help or advice. Maybe you have a lot of cucumbers but not much squash this year. What do you do? You can reach out to the community and see if anyone is willing to trade. That is what community is all about and that is what this group is for.
Who Started Homesteaders of the Southeast
This event was spearheaded by Matt Dean at Dean Family Acres. He did a great job of organizing this event. If you are not, go follow his YouTube account and the Homesteaders of the Southeast Instagram page.
Why only Homesteaders of the Southeast?
The reason is called homesteaders of the southeast is simply because we are trying to connect people in this region. The main reason behind this is if we have an issue if we were to reach out to someone in lives in California, well the weather is vastly different from the South. Rainfall is different, and the insects we deal with can be different.
If there is a problem, we need to be able to chat with someone that has the same or very similar issues as we do.

Irresistible Spaghetti Pasta Salad (Easy)
Spaghetti pasta salad is a cold pasta salad that is full of fresh veggies, Parmesan Cheese, and a zesty dressing mix that is to die for. One of the key ingredients in this dish is Salad Supreme Seasoning. If you are accustomed to Classic pasta salad, this is vastly different but similar all at the same time. As with most pasta salad recipes, this is an easy pasta salad recipe to make.

INGREDIENTS
1 box thin or angel hair spaghetti noodles
1 red bell pepper
1 yellow bell pepper
1 small red onion thinly sliced1
1 small can black olives
1 cucumber
1 zuchinni
1 pint cherry tomatoes
Dressing
1 16oz bottle Italian Dressing
1/3 cup parmesan cheese
2 tablespoons parmesan cheese use this to sprinkle on top before serving.
2 1/2 teaspoons McCormick Salad Supreme Seasoning
INSTRUCTIONS
Step 1: Cook the pasta according to the package directions. After noodles are al dente (Almost Done) drain, then rinse the spaghetti noodles with cold water.
Step 2: In a large mixing bowl, add the pasta, Bell Pepper, Red onion, Cherry Tomatoes, Zucchini, Black Olives, and Cucumbers. Mix veggies well with the pasta.
Step 3: In another small bowl, add the Italian dressing, Salad Supreme Seasoning, and Parmesan cheese. Whisk ingredients together until well combined.
Step 4: Pour the contents of the dressing onto the Spaghetti and veggies. Toss all the ingredients together until the dressing has thoroughly coated the noodles and veggies.
Step 5: Cover the large bowl of Spaghetti Pasta Salad and place it in the refrigerator to chill for at least 2 hours. Once the Pasta salad has chilled, remove it from the refrigerator and sprinkle it with the remaining parmesan cheese before serving.

Can we Get the 2nd blade off the Land Pride RCR1260? Part 2
I am back working on the Land Pride RCR1260 again. This time we are trying to get the second blade off of it. In the previous video, I was trying to get both changed out so I could start bush hogging the pasture. We were having trouble getting the nut off on the 2nd blade so we had to leave it for the time.
We are giving it another try on changing the 2nd blade on the Land Pride rcr1260. We got a new tool to use so come along and see if we can get this blade changed.

How To Make A Quick Chicken Brine Recipe (Simple and Easy)
Brining your poultry, whether it be chicken, turkey, or other types of poultry has long been one of the top secrets of top chefs and restaurants. Brining your lean meats is an excellent way to keep your poultry from drying out during the cooking process. A quick chicken brine also adds flavor, and moisture, and helps to tenderize your lean meats that are being baked, grilled, or even deep-fried.
At the very minimum, a brine is simply soaking your chicken or other poultry in a saltwater solution for 12- 24 hours. You can add in fresh herbs such as rosemary, bay leaves, and spices like black pepper or any other of your favorite seasonings. You can even add a little sugar to the mixture. This is a great way to help the chicken have crispy skin. There is a limitless amount of flavor possibilities that you can use. The cool part about this is when you do a wet brine solution like with fresh herbs and spices, the chicken pieces or poultry you are brining absorbs those flavors as well.
For best results, brining is a good practice to get into no matter what style of cooking you are doing. It creates a juicy, moist, and flavorful meat. If you are baking, roasting, grilling, smoking, and even deep-frying, your poultry can benefit from a quick brine. Brining also helps the muscle fibers to break down. As the chicken soaks, it is helping create a more juicy tender chicken or piece of meat.
INGREDIENTS
1 cup Salt Kosher salt or Sea Salt is the best to use for this application
1-gallon water
INSTRUCTIONS
This quick chicken brine recipe calls for 1 cup of salt per gallon of water. You will most likely need more than 1 gallon of water. You want to cover your chicken pieces completely. If you use 4 gallons of water, you will use 4 cups of salt, and so on.
Step 1: Wash all of the chicken pieces or meat that you are going to brine.
Step 2: Fill up your pot about halfway with cold water, measuring the water as you put it in so you will know how much you have put in the pot.
Step 3: Add 1 cup of salt per gallon of water.
1 cup Salt, 1-gallon water
Step 4: Step 4: Stir the salt in the water until it has dissolved. If you want a quick way to do this, you can add a few cups of water to a small pot. Heat it on medium heat until the salt has dissolved, then add it to the rest of the water in the larger container.
1 cup Salt
Step 5: Place the chicken pieces or other meat into the pot or container.
Step 6: Soak for up to 12 hours.
Step 7: After the soak time, remove the chicken pieces or other meat from the container and pat dry with paper towels or allow to drip dry on a cooling rack over a sheet pan.
NOTES
Note: Some methods will refer to soaking the chicken at room temperature. This may be ok but I tend to err on the side of caution. I always soak mine in the refrigerator and that is what I recommend.

This is a time we will forever remember. Pawpaw Bobby and the Dogshow at the Red Rose Festival in Lancaster SC.
The red rose festival is held in Downtown Lancaster, SC each spring. It is named after the city's nickname "Red Rose City" which is due to its's links to Lancaster, England. The Red Rose was the symbol for the Town of Lancaster, England during the War of Roses.
Festivals and Carnivals are a staple through much of the Southeast. Once spring gets there, there is a festival or carnival nearly every weekend until the end of fall.

Last week I bartered some bald cypress trees from Matt from Dean family acres. I traded him 2 Dunstan Chestnut trees for some bare root Bald Cypress trees.
I didn't have time to plant them and it is getting late in the season so I decided to pot them up. They should last until this winter in this pot size I have.
These are the same fabric pots I used to plant my Dunstan chestnuts last season. I love these for the fact that they air prune and the roots don't get root bound in them.
Either way, you can see my process of making and mixing my compost with potting soil and potting these bald cypress trees. Hopefully, this will help answer the question of what to do with bare root trees for you if you get some in the late spring or if you just don't have time to plant for several months out.

This is The Easiest Way To grow Fresh Herbs! Anyone can do it!
Growing fresh Herbs can sometimes be a challenge, especially if you’re not good at growing plants. The AeroGarden is the easiest, simplest way to grow herbs and other veggies. This is grown indoors. It’s a all complete systems. It waters itself, turns the light on a timer to get the right amount of light. It’s just so easy! I keep mine beside my stove to have fresh herbs year round. I seriously don’t get why everyone do t have a AeroGarden by now. You can grow tomatoes, lettuces, and many other veggies as well. When I have an overgrowth that I’m not using, I simply cut them back, and place it in my dehydrator so I fresh dried herbs anytime I need them!

WE Stopped at a Buc-ee's for our First Time
We stopped at a Buc-ee’s for the first time ever!
On our way back from our Disney trip last month, we stopped at a buccee’s in St. Augustine Florida. If you have been hiding under a rock, Buc-ee’s is a gas station. So in all of our excitement, we decided to give a buc ees tour while we are there. Buc ees has awesome food, desserts, snacks, and more. One thing that my friends have told me about was the huge wall of beef jerky at buc-ee’s. Man the beef jerky at Buc-ee’s didn’t disappoint either. There was so much of it. If you are traveling and have to use the bathroom, you have to stop here. They have the cleanest bathrooms I have ever saw. They even have a sign that says bucees world-famous bathrooms haha. I can see why though. Anyways there is so much to like about them. Expect to spend some time there but don’t worry, Buc-ee’s is open 24hours! You can grab a coffee at the huge coffee bar, cinnamon roll, and do some shopping while there. They also have the normal convenience store-type stuff as well. A Potting Bench For My Mamma
Back in November, I set out to build my mamma a potting bench. I had a friend of mine cut some lumber on a homemade sawmill that he built. This was rough-cut lumber and it was wet. I decided to let it dry out a bit before working with it. I had planned to make this for Christmas but ultimately decided to build A potting bench for my mamma for mothers day! This is a video of me putting it together.
