Rehydrating a Bag of Freeze Dried Homemade Chili from 2017 - 4+ years old Rehydrating 5 cups of homemade chili that was freeze dried 4 years ago. Music: Eine Kleine Nachtmusik by Mozart Chili Servings : 40 4 1/2 cups Dried pinto beans -- (900g) rinsed 4 1/2 cups Dried kidney beans -- (880g) rinsed 8 quarts water 4 tablespoons salt 8 cups beef broth -- Four 14.5 oz cans 8 cups water 2 teaspoons salt 2 pounds chopped onion 3 tablespoons minced garlic 3 cups Pace Picante sauce -- Pace Picante sauce * SEE NOTE 10-27-15 4 cups salsa verde - Herdez 1/4 cup chopped green chiles 3/4 cup chili powder 1 tablespoon crushed red pepper flakes 2 teaspoons ground cumin 3/4 cup red wine 4 tablespoons better than bouillon beef base -- better than bouillon beef base 1 tablespoon dried oregano 4 1/2 pounds ground beef, lean -- course ground, browned well in small batchs, in soy sauce & olive oil (we grind our own) 6 cups crushed tomatoes 12 ounces tomato paste -- cooked in beef browning pan 2 tablespoons bacon bits Soak Beans overnight in 8 quarts water and 4 Tbs salt then drain and rinse well Add 8 cups water, beef broth and 2 tsp salt cover and simmer very slow until beans are almost tender - could take 3 to 6 hours Add the rest of the ingredients and simmer very low, until everything is tender Freeze dried food will stay fresh for many years and be ready and waiting when you need it. Making, freeze drying, and rehydrating apple pie filling Making some apple pie filling to test Instant ClearJel for freeze drying and rehydrating. We add some Alpine Spiced Apple Cider drink mix to the cut apple pieces to help flavor the pie filling We picked about 86 lbs of apples at the beginning of October. We picked about 26 lbs of Golden Delicious and about 60 lbs of Fuji apples. The apples at the U-pick apple orchard were only 50 cents a pound. Re-Bagging Freeze Dried Food from Thin Bags The big oops! My biggest freeze drying screw-up. (so far) I messed up and cheaped out and used some thinner bags a couple years ago. I was low on bags, in a hurry, and bought some cheap bags. DON'T DO THAT! The thin bags did not stop the moisture! Moisture made it through the bag - 1% to 4% by weight. I"m re-drying the food using the final cycle in the freeze dryer by leaving the freeze dryer running and then using the "More Dry Time" button. For the test, I ran the final dry for 3 hour and then re-weighed the food, then I ran it for an additional 3 hours and checked the weight again. After the first 3 hours the weigh had dropped a couple %, but there was no weight change after the additional 3 hours, telling me (I hope) that the water was again gone after the first 3 hours. The items that I did have weights on before from when it had been originally bagged went back to the starting weight. Is the food safe? I think so but you would have to decide for yourself. If I find bags I don't feel good about, I will toss them out. DON'T CHEAP OUT ON THE BAGS. DON'T SAVE A FEW PENNIES AND LOOSE YOUR FOOD. Check often. The Harvest Right bags are good bags. Make sure to use a high quality, heavy bag. The Gala apples from batch 18 were in a 7mil thick bag from Harvest Right from 4 years ago were still perfect. I'm going through all my bags in storage and replacing the thin bags with thick bags. For the rest of the thin bags I find, I'll use one 5 hour cycle of "More Dry Time." All re-bagged items will get new oxygen absorbers in new heavy bags. Last, I'll write the gross weight on ALL bags from now on. Cascade Head is just a few miles north of Lincoln City, Oregon. The hike starts out with about 1/2 mile of trail parallel to the road, with parts of it on the shoulder of the road, until you get to the actual trailhead (there is no parking at the trailhead but there is a great parking area by the boat ramp) From there it's pretty much all up hill until you reach the top. The first half of the hike (after leaving the road) is through medium densely forested area. The trail starts out going through private land so we are careful to stay on the trail. The trail is well marked and well used. At somewhat more than half way the trail comes out of the trees and opens up onto a sloped grassy meadow area. For the rest of the hike you wide, expansive views. If you have bad knees, this is not the hike for you. But, if you want the same view from the top, take the upper road and the shorter, less steep trail from there. We saw a lot more hikers on this trail than we did on the Harts Cove trail the previous day, but it still wasn't too crowded. The video clips at the end are sped up, but not the audio of the wind. This was a good, fairly well maintained 3+ mile long trail. It starts out with .7 miles of downhill switch-backs (interestingly, the hike also ends with .7 miles of UPHILL switch-backs) At the end of the trail it opens up onto a large sloped grassy meadow kind of area. Along the way and at the end we could hear the sea lions very well. If you have a telephoto lens or binoculars you should be able to see dozens or hundreds of them on the shore south of the cape in the next cove over to the south. It was a scenic and no crowds. In fact, we only saw a half dozen or so people during the 4 hours we were there. Once again our GPS devices matched each other, but did not match the length listed on the signs. It was about 1/2 mile each way longer than the sign said. Maybe it was all the walking around the meadow area?
