You’ll need:
For dry roast spice mix
1 tbsp Cumin seeds
1/4 cup Coriander seeds
1 tbsp Black pepper
1/4 cup Daria dal
1 medium size Cinnamon stick
4 to 5 Green Cardamom
1 Black Cardamom
1 Star anise
4 to 5 Cloves
1/4 cup round Red chillies or 4 long chillies
1.5 kg Mutton
4 to 5 cups of water
1/3 cup fried onion oil
2 bay leaves
1 small cinnamon stick
3 to 4 cloves & cardamom
1 black cardamom (optional)
1 & 1/2 tbsp Ginger & garlic paste
For the yogurt paste
1 cup Yoghurt
1/4 cup Soaked almonds (peeled)
1 cup Fried onions
1 tbsp Kewra water
2 Green chillies
Few Julienne cut Ginger
Handful of Coriander 🌿

Instant coriander rice
Instant Coriander Rice
Ingredients:
Rice
Fresh coriander leaves
Green chillies
Garlic cloves
Oil
Mustard seeds
Cumin seeds
Chana dal
Urad dal
Curry leaves
Dried red chilli
Turmeric powder
Salt to taste
Instructions:
🍃 In a mixer jar or blender, add the washed and roughly chopped coriander leaves, green chillies, and garlic cloves. Blend them into a smooth paste. You can add a little water if needed to make a smooth paste. Set this coriander paste aside.
🍃 In a large pan or wok, heat oil over medium heat.
🍃 Add mustard seeds and let them splutter. Then, add cumin seeds, chana dal, and urad dal. Fry them until the dals turn golden brown.
🍃 Now, add the curry leaves and the dried red chilli (if using). Saute for a few seconds until the curry leaves become aromatic.
🍃 Lower the heat and add turmeric powder. Stir well to coat the spices evenly.
🍃 Next, add the prepared coriander paste to the pan. Cook the paste for a few minutes until it reduces slightly and the raw smell of the coriander disappears.
🍃 Now, add the cooked rice to the pan and mix it gently with the coriander paste and spices. Ensure the rice is evenly coated with the coriander mixture.
🍃Add salt according to your taste and mix it well.
🍃 Cook the coriander rice for another 2-3 minutes, stirring occasionally, to allow the flavors to blend.
🍃 Once done, turn off the heat, and your delicious coriander rice is ready to be served.
🍃 Serve the coriander rice hot with raita or any side dish of your choice.
