Ground Beef Pasta Bake
1 lb Penne
1 Medium Onion - chopped
1 1/2 lb Ground Beef
1 Tbsp Olive Oil
2 - 3 Cloves Garlic - minced
3 C Marinara Sauce
Salt & Pepper to taste
2 C Cheddar Cheese - shredded
Boil pasta - cook for 9 - 10 minutes. Pasta should be slightly underdone.
Add oil to ovenproof skillet. Cook until beef starts browning, drain excess fat. Add onions & garlic cooking until onion start to turn translucent. Add in marinara sauce and season with salt & pepper. Cook until sauce is heated through.
Pour ground beef mixture over pasta and mix well.
Spray 13 x 9 baking dish with cooking spray. Add ground beef mixture to baking dish and top with cheddar cheese.

A Very Untraditional Cavetelli alla Genovese | Jock Zonfrillo
Green Cavatelli:
70g baby spinach, blanched and squeezed of all moisture
3 eggs
1 egg yolk
345g fine semolina
salt
Genovese Sauce:
20g extra virgin olive oil
1 brown onion, finely diced
1 clove garlic, smashed
6 anchovies, roughly chopped
45g vodka
5 baby kipfler potatoes, boiled, peeled and cut into 1cm cubes
10 green beans, blanched and cut into 1cm slices
50g broad beans, blanched and peeled
50g capers, roughly chopped
8 cornichons, roughly chopped
1 bunch basil, roughly chopped
2 lemons, zested
50g green olives, quartered
30g pecorino, finely grated
extra virgin olive oil
Seasoned Ricotta:
200g ricotta
45g vodka
20g kombu dashi
10g habanero hot sauce
20g green olive brine

METHOD
For the pasta dough, blend together the spinach, eggs and egg yolk until completely smooth. Pour the semolina in a mound on a clean bench and build a well in the centre. Slowly work the egg mixture into the semolina to form a dough, then knead for 3-4 minutes until smooth and taut. Cover with a towel and rest at room temperature for 30 minutes.
In a wide saucepan over low heat, sweat the onion and garlic in extra virgin olive oil until the onions are sweet and translucent. Add anchovies and cook until they dissolve into the oil. Deglaze with vodka and reduce to evaporate the alcohol.
Mix together the ricotta and seasonings.
To shape the pasta, roll portions of the dough into logs 2cm wide. Cut the logs into pillows a touch longer than they are wide, then use a butter knife and a gnocchi board to roll into cavatelli.
Blanch the cavatelli in a large pot of salted boiling water for four minutes, or until al dente and just white in the centre. Drain well.
Combine the potatoes, green beans, broad beans, capers, cornichons, basil, lemon zest and green olives and add to the saucepan. Stir in the drained cavatelli along with the pecorino. Dollop the ricotta around the pasta and finish with extra virgin olive oil.

1/4 cup Parmesan Cheese
Preheat oven to 350* F
Bake covered for 30 min. and uncover and return to oven for 15 min.

EPIC Baked Italian Eggs
Here’s my Baked Italian Eggs - amped up with speck and taleggio (c’mon!!). There’s a million egg dishes out there but trust me, there’s nothing better than waking up to this one!

INGREDIENTS
4 extra large eggs
160g speck, cut into lardons
400g tinned baby roma tomatoes
20g extra virgin olive oil
1 cayenne chilli, sliced
¼ bunch oregano, roughly chopped
2 sprigs basil, roughly chopped
1 sprig thyme, roughly chopped
40g taleggio, frozen
Salt and black pepper to taste

METHOD
Place speck lardons into an ovenproof dish and place in a warm oven to render slowly.
Use your fingers to burst the baby roma tomatoes, squeezing out their juice. Place in a small saucepan over medium heat and reduce until thick.
Once bacon is rendered and beginning to caramelise, add chillies and return to the oven until the chillies are softened and the speck is crispy.
Add the reduced tomato mixture to the dish, fold through the herbs (reserve a few basil leaves for garnish) and adjust seasoning if necessary.
Make four divets in the sauce for the eggs, crack the eggs in and season with a touch of salt. Use a coarse grater to cover the surface with frozen taleggio (reserve a little bit for garnish), then use a spoon to tuck some of the cheese under the surface of the sauce.
Cook in the oven until egg whites are set and yolks are still runny.
Finish with another light grating of taleggio and a few torn basil leaves
