RUM & COKE Baby Back Ribs - Smoked Spare ribs - Low and slow ribs
Baby back ribs smoked on the ProQ Excel 20. They could have been easily called Cuba Libre Ribs. In this video recipe I will show you how to make your own Rum & Coke spare ribs.

Spare ribs cola and Rum flavoured
Dry Rub ingredients:
- 2 ½ cup brown sugar
- ½ cup coarse salt
- 1 cup paprika powder
- 6 tablespoons dried parsley
- 6 tablespoons dried basil
- 6 tablespoons dried oregano
- 6 tablespoons dried thyme
- 6 tablespoons dried onion powder
- 6 tablespoons dried parsley
- 3 tablespoons coarse ground pepper
- 2 teaspoon allspice
- 2 teaspoon cinnamon
Sauce ingredients: (makes 4 cups)
- 2 cup coca cola
- 1 cup dark rum
- 2 cup ketchup
- 1 cup Worcestershire sauce
- 2 teaspoons liquid smoke
- 2 teaspoons onion flakes
- 2 teaspoons garlic flakes
- 1 teaspoon fresh ground pepper
- juice from 1 lime
How To:
- Make the sauce, by mixing the ingredients and boiling it down to a syrup
- Bottle the sauce and let it cool down
- Prepare the dry rub by mixing the ingredients
- Take of the membrane from the back of the ribs
- Rub the spareribs with olive oil
- Rub the dry rub on the spare ribs
- Set them in your smoker or barbecue at 110 degrees Celsius or 225 degrees Fahrenheit.
- Smoke the ribs with 2 or 3 chuncks of oak or hickory
- After three hours place the ribs on foil with some barbecue sauce.
- Smoke the ribs for another 2 hours at the same temperature.
- Unwrap the ribs after two hours and place them back on the barbecue or smoker
- Brush on some barbecue sauce
-Let the barbecue sauce caramelize a little in an hours time, at the same temperature.

Recipe: Smoked Curry Chicken wings -- Curry Dry Rub Recipe
Ingredients:
- 2 pound chicken wings
- Sun flower oil
- 5 tablespoons curry powder
- 2 tablespoons cilantro powder
- 3 tablespoons fine salt
- 2 tablespoons fine black pepper
- 1 tablespoon garlic powder
- 1 tablespoon cayenne pepper (optional)
How To:
- Mix the dry rub ingredients
- Sprinkle sunflower oil on the chicken wings
- Smoke the chicken wings for 20 minutes on 180 degrees Celsius or 350 degrees Fahrenheit.
- Grill the chicken wings shortly for caramelization.

PEKING DUCK RECIPE
Ingredients:
- 1 large whole duck
- 1 tablespoon maltose http://amzn.to/1vkOMbF (also known as barley malt syrup)
- 1 orange sliced
- 1 tablespoon salt

Sauce ingredients:

How To:
-Take a large, fill it 2/3 with water and bring the water to a boil
- Clean the inside of the duck
- Slice the orange and add to the boiling water
- Add a spoon of maltose or barly malt syrup to the boiling water.
- Submurge the peking duck in the bloiling water for 30 seconds (when you don't have a large eough pan, just por over the boiling water with a spoon)
- Let the duck to dry in front of a fan for 7 hours or just by air for 24 hours. (get your fan at amazon http://amzn.to/1q0Jbib )
- Place the duck in a preheated oven or barbecue which is set to indirect heat of 180 Celsius or 350 Fahrenheit Make sure you have a large dripping pan under your duck.
- Cook the duck until the core reaches 70 Celsius or 160 Fahrenheit.
- Meanwhile prepare the pancakes (steam them in a basked) follow the directions on the package.
- Mix up the ingredients for the sauce
- When the duckk reached the right temperature let it rest for 15 minutes outside the barbecue or oven.
- Carve the crispy skin of the duck
- Place the cucumbur, spring oninons, sauce and peking duck in the pancakes and enjoy.

Ingredients:
- 2 big steaks
- 1 tube or bottle wasabi http://amzn.to/1sZ2iOH
- vegetable oil
- 1 red chilli
- Salt flakes
How To:
- Make large bed of lit lump charcoal
- Grill the steaks on both sides until the core reaches 53 Celsius or 130 Fahrenheit
- Let the steaks rest and mix 1/3 wasabi with 2/3 oil
- Chop a chilli fine
- Brush the wasabi oil on the steaks
- Sprinkle on the salt and the chilli
- enjoy
