Potato cakes from Leftover Mashed Taters
How to make awesome potato cakes from leftover mashed potatoes. Anything deep fried has gotta be awesome!
Potato Cakes (Latkas)
4 cups Mashed potatoes (cold)
3/4 cup Flour
2 Eggs
1/2 tsp Salt
1 cup Cheddar cheese (grated)
Vegetable oil (for fying)
Mix cold mashed potatoes, flour, eggs and salt. Then add in cheese. Place in refrigerator until time to use. Heat oil in pan on medium heat. Add drops of mixture to hot oil and fry for about 2 1/2 minutes then flip to other side and fry another 1-2 minutes. Remove from oil and place on paper towel to absorb excess oil. Add salt both sides. When cooled a bit, enjoy!

Chocolate Crinkles II
An awesome brownie tasting cookie covered in powder sugar. If you like brownie batter, this one is for you!
INGREDIENTS
1 cup Unsweetened Cocoa Powder
2 cups Sugar
½ cup Vegetable Oil
4 Eggs
2 tsp. Vanilla
2 cups Flour
2 tsp. Baking Powder
½ tsp. Salt
½ cup Confectioner’s Sugar
DIRECTIONS
Mix cocoa, sugar and oil in bowl. Beat in eggs one at a time, then stir in vanilla. In separate bowl, combine flour, baking powder and salt. Stir into cocoa mixture. Cover dough and chill for at least 4 hours.
Line cookie sheet with parchment paper. Roll dough into 1 inch balls. Coat each ball in confectioner’s sugar and place onto parchment paper.
Bake 350 degrees for 10-12 min. Let stand for 1 minute before transferring to wire racks to cool.

Easy Corn Souffle
This is such an easy recipe that is a great side dish for the holidays or every day! Corn Soufflé
1 stick Butter, softened or room temperature
15 oz. can Corn Kernels, do not drain
15 oz. can Creamed Corn
1 cup Sour Cream
1 box Jiffy Corn Muffin Mix
Stir all ingredients together. Pour into a buttered 13x9 inch baking pan. Bake at 350 degrees until top is deep brown. Bake for 40-60 minutes.

Honey Bun Cake
This is an awesome cake recipe with a honey bun / cinnamon roll taste. Easy to make cake that everyone will enjoy!
Ingredients:
2 (9 oz) Jiffy Yellow Cake Mix
2/3 cup Vegetable Oil
4 Eggs
8 oz. Sour Cream
1 cup Brown Sugar, packed
1/3 cup Pecans, chopped
1 tbsp. Ground Cinnamon
1 cup Powdered Sugar
1 tbsp. Milk
1 tsp. Vanilla
Directions:
Add cake mix, oil, eggs and sour cream to large mixing bowl. Beat with mixer until well mixed. Spread half of the batter into a greased 9x13 baking pan.
In smaller bowl, add the brown sugar, pecans and cinnamon, stir to mix. Sprinkle mixture evenly over the batter. Spread the remaining batter over the pecan mixture.
Bake 350 degrees for 30 min.
In small bowl, stir powdered sugar, milk and vanilla until thin enough to spread. Take a toothpick and prick the surface of the warm cake several times. Spread sugar glaze over the cake. Let cool 1 hour.
