The innermost layer is considered best in terms of nutrients, this layer is called Germ, which contains nutrients, Vitamin B, Vitamin E, and healthy fats.
Both Wheat flour and Refined wheat flour ie., Maida are made using Wheat. However, the processing of wheat flour Keeps all three layers including Bran, Germ, and Endosperm available in the flour. But for getting Maida from wheat, Bran and Germ layer are removed, and nowthis refined flour contains only the endosperm layer which is the least nutritious. Some more chemicals are added to this refined flour to make it more white and fluffy, which makes it even more unhealthy. Hence, the wheat flour or 'Atta' is not considered unhealthy because of the presence of all three layers including Bran, Germ, and Endosperm.
