Crab Dip
Best Jumbo lump crab dip. Great as an appetizer, side or meal. Keto friendly served with pork rinds.
Crab Dip
1 medium onion-chopped
5-6 large garlic cloves-finally chopped
4-5 scallions-chopped(save some for garnish)
5 small-medium celery stalks-chopped
1 medium red bell pepper- chopped
1 stick butter
In pan melt butter, add onion and cook for 2-3 minutes. Add remaining ingredients and cook till getting soft. Set aside and let cool while going to the next step.
1 ½ lbs jumbo lump crab
1-1 ½ lemons- juiced
3 egg yolks
1 ½ c heavy cream
½ tsp salt
2 tsp black pepper
1-2 tsp cayenne pepper
2-3 tsp seafood seasoning-(old bay)
8-9 oz fontina cheese-grated
8-9 oz gruyere cheese –grated
In a bowl mix the cheeses together, set aside. In a large bowl mix the rest of the ingredients above together add sautéed mix to it and half of the grated cheese to it and mix well. Pour into a baking dish(9 x11) or cast iron skillet(10 inch) and add cheese to top. Bake @ 350 for 15-25 minutes till cheese is melted. Let cool for 15 minutes and garnish with some of the scallions.

Seared Ahi tuna with 2 sauces
Seared Ahi Tuna steaks with a Lemon-wine sauce and Cilantro-Lime-Jalapeno sauce.
Seared Ahi Tuna
3 tuna steaks 1- 1 1/2 inches thick
Marinade-
1 medium onion chopped
6 garlic cloves-
1 Tbsp cumin
1 Tbsp paprika
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp black pepper
2 tsp salt
2 tsp seafood seasoning-like old bay
1/3 c chopped cilantro
¼-1/2 c olive oil
1 lime- juced
mix all ingredients together put tuna steaks in and marinade for at least an hour, turning after 30 minutes.
Cilantro-Lime-Jalapeno Sauce
1 ½ c sour cream
2 limes- juiced
1tsp rice wine vinegar
½ c cilantro chopped
1-2 Tbsp jalapeno finely chopped
mix all ingredients together and refrigerate for at least 30 minutes.
Cook the tuna in a hot pan on medium-high heat in a couple tablespoons of olive oil..3-4 minutes on each side depending on how done you like your tuna.
Lemon-wine sauce
¼-1/2 c white wine-Chardonnay
2 Tbsp butter
½ juice of lemon
salt
pepper
The marinade that the tuna was in.
After cooking the Tuna steaks, in the same pan add the remaining marinade. Deglaze the pan by adding the wine. Add lemon juice, salt and pepper to taste, and butter. Bring to a boil to thicken.

Grilled Magic dill Potatoes
Baby potatoes roasted on the grill with dill, bacon and scallions.

Magic Dill Potatoes
1 ½ lbs baby potatoes- cut in to chunks
1 ½ tsp garlic powder
1 ½ tsp onion powder
1 ½ tsp pepper
1 ½ tsp salt
1-2 strips of cooked bacon, chopped
¼ c bacon fat(can use olive oil)
3 Tblsp butter
2-3 Tblsp chopped dill(double if not using fresh)
2-3 Tblsp scallion tops
6 ice cubes
Mix every thing except the ice cubes together. Lay out your aluminum foil (good size sheets, cookie sheet size), and spread mixture onto it. Place you ice cubes on top of mixture and wrap up tight. May need to double wrap. Place on grill around 350 for 30 minutes, turning over every 10 minutes. Can also be baked in the oven on a sheet pan, NO ice cubes. Bake @ 350 20-20 minutes.

KETO Steak and Eggs Benedict
Steak and Eggs Benedict with Hollandaise sauce on top of A fillet..

Eggs Benedict with Hollandaise sauce
Hollandaise sauce
3 egg yolks
¼-1/2 C water
¼ C white wine- chardonnay
½ of a lemon- juiced
6-7 oz clarified butter
1/8-1/4 tsp Worcestershire sauce
pinch salt
pinch cayenne pepper
In a small bowl mix water, wine and lemon juice. In a metal bowl or double boiler put your egg yolks in add half of your water, wine, lemon mixture. Constantly whisk till frothy. Over low heat. Once it thickens take off the heat. Drizzle in your butter-SLOWLY! When all of your butter has been incorporated add your Worcestershire sauce, salt and pepper.
Now that the sauce is ready you will need
4 slices Canadian Bacon
4 ¼ in slices of filets or other steak
4 poached eggs
salt
pepper
In boiling water poach 4 eggs for 3-5 minutes. Remove with slotted spoon.
Grill filet with salt and pepper or pan fry for 3-5 minutes.
Pan fry 4 slices of Canadian bacon for 2-3 minutes.
Time to put it all together.
Put your filet on a plate, followed by Canadian bacon, then your poached egg drizzle with hollandaise sauce. Enjoy!!!

Chicken Tiki Marsala - most requested
My most requested dish, Chicken Tiki Masala!! Friends and Family love it.
This is an Indian dish that has some spice to it you may want to start with less cayenne pepper and less chili powder.
Tiki masala sauce
1 ½-2 onions chopped
10-12 garlic cloves chopped
4 Tblsp ginger grated
¼-1/2 tsp cayenne pepper
¼-1/2 tsp chili powder
4 Tblsp garam masala
1 ½ Tblsp cumin
1 Tblsp turmeric
2 tsp monk fruit
1 tsp onion powder
1 tsp garlic powder
1 tsp coriander
1 tsp ground ginger
1 tsp salt
1 tsp pepper
3-4 Tblsp olive oil
2-28oz cans diced to tomatoes, undrained
1 c heavy cream
2 Tblsp tomato paste
Tiki masala chicken rub
1c vanilla whole milk yogurt
1 tsp salt
1 tsp pepper
2 tsp ground ginger
1 Tblsp garlic powder
½ tsp cumin
½ tsp coriander
Bake @ 350 for 20-25 minutes, or untill chicken is cooked, Then
Broil for 4-7 minutes to brown.

Roast 4- 12oz frozen bags of rice in the oven on a parchment lined cookie sheet. Spray with olive oil to coat it, sprinkel as much salt, pepper, garlic powder and onion powder as you like. Bake @ 425 for an hour, stiring every 20 minutes.

Stuffed Mushrooms - Low Carb
Recipe and step-by-step instructions on how to make stuffed mushrooms.
Recipe:
Stuffed Mushrooms
4-6 medium- large portabella mushrooms
1 lb hamburger
1 medium onion-chopped
4-5 garlic cloves-medium-large size-finally chopped
¼ c summer squash-diced
1/4c zucchini-diced
8-10 olives-diced
1/3-1/2 c tomato sauce
8-10 mozzarella cheese slices-thick
1 tsp salt
1 tsp pepper
1 tsp cumin
1 tsp turmeric
2-4 Tbls olive oil
cook hamburger, with onion and garlic. Let cool a little bit, put in a bowl ad summer squash, zucchini, olives , 1/3 c tomato sauce and spices. Mix together well. Carefully scrape out some of the mushroom to make room for the mixture. Put you olive oil into your pan so your mushrooms don’t stick. Then put your mushrooms in your pan, add your mixture into the mushrooms make sure to heap it up, add some tomato sauce on top then add your cheese.
Cook @ 350 for 15-25 minutes depending on the size of the mushrooms.
