Today is a day that I have been waiting for. Ever since I first discovered Pressure canning I have wanted to preserve a year's worth of #tomatoes in various forms. From Diced Tomatoes to Tomato sauce and everything in between. Today I have checked #salsa off of my list. I canned 18 pint jars in about 2 hours. WORTH IT. All of the jars sealed, the first time. SCORE. . Along with the salsa I also canned 6 pint sized jars of #picodegallo I’m thinking this will only last 3-4 months, depending on if everyone (my family) likes it or not. Pico De Gallo is only loved by me, Stephanie, and my middle son, Landon. So I didn’t think we needed an equal amount of Pico as Salsa. . In this video, I am doing a few things in the garden. First, I need to hard prune my Daisies. With all I clipped, I got 95 stems, which I made a bunch of little bouquets and placed them in every room in my home, in various vases. So beautiful. . Secondly, I need to address the oozing of my plum tree. I have determined that there were fruit boring insects eating through the trunk. I am using Diatomatious Earth to treat the damage, after I remove all the oozies and insects. . And finally, I'm top dressing the trees and beds with organic compost.
