No Bake Cake aka TIRAMISU
This is the only no bake gluten free tiramisu recipe you will need this Summer. Full of fresh berries and luscious no cook cream this one is a keeper.
Make your own biscuits or use store bought.

For the lady finger biscuits
Preheat fan forced oven to 180C
•line a baking tray with wax paper
140g plain gluten free flour
10g cornflour
1/4 tsp xanthan gum
1 tsp baking powder
2 egg yolks + 60g caster sugar
3 egg whites + 60g caster sugar
1/8th cup each of icing sugar and caster sugar for dusting.
1. Sift dry ingredients and set aside
2. beat yolks & sugar til pale and fluffy , set aside
3. beat whites & sugar til fluffy like meringue, peaks should form. Beat for quite a few minutes
4. gently fold yolk mixture into egg white mixture
5. fold half the sifted flour mixture into the egg mixture then add the other half. and fold til combined. Doesn’t need a lot of stiring, just make sure there are no dry bits.
6. using a piping bag with 1/2 inch nozzle pipe 10cm long strips.
7. Using sieve dust the biscuits well & place tray on middle shelf and bake for 15 min then reduce heat to 150C and bake further 15 min
8. remove when done and allow to cool for 5-10 min then transfer to cooling rack while on the baking paper. Allow to cool completely before storing. You may need to use a spatula to separate from baking paper.
FOR THE BERRY & CREAM MIXTURE
120g blue berries whole
180g blackberries sliced in 1/2
350g strawberries sliced in 1/4’s
3 tbs caster sugar
Juice of 1/2 lemon
Cream filling
250g marscapone room temp
300 ml whipping cream
3 tbs sugar
3 tsp vanilla essence
Homemade savoiardi/lady finger biscuits -see previous video for recipe OR
1 packet store bought
Extra berries for decoration how much is really up to your creative culinary juices ;)
I used a handful of blueberries, 8 blackberries & about 80g strawberries
Dish
27.5cm long x 18cm wide x 6cm deep or whatever works :)
Step 1. Soak fruit in sugar & lemon juice up to 2 hours - go do something fun 📖 🍹
Step 3. Whip cream with sugar & vanilla then add marscapone & whip some more
I did the marscapone first then added the cream
Step 4. Strain berry juice into bowl
Step 5. Assemble your cake by quickly soaking biscuits in berry juice & lining dish
Add 1/2 the berries on biscuits & add half the cream mixture repeat for 2nd & final layer.
Refrigerate for 9 hours minimum any sooner like 7 hours and your bikkies will be a smidgen dry- How do I know? Been there done that 😅
Decorate if desired immediately or wait til later
Note: if using homemade biscuits increase cream & marscapone by 1/4-1/2 cup

Gluten-free Chinese Takeout Fried Wings
Just a little video to test the waters.
This recipe is adapted to suit my pantry and diet and not totally authentic in terms of ingredients but comes close to the og flavour of Chinese takeout fried chicken wings.
RECIPE 👇
•15 chicken wing nibblets
•1-2 tsp powdered chicken stock no msg
•Pinch of salt
•1/4 tsp pepper
•1 tsp Chinese 5 spice powder
•1tsp sugar
•1tsp garlic powder
•sprinkle turmeric for colour (optional)
•1 tbs white wine vinegar
•1 tbs light soy sauce
•1 large egg
•3 heaped tbs cornflour
•2 heaped tbs bread flour
Wash and Pat dry nibblets
Place into bowl
Add seasonings and wet ingredients and mix well
Add dry ingredients and mix well
Allow to marinate for 2 hours minimum at room temp
Fry in batches if 5-6 in approx 500ml oil in a wok or deep saucepan at med-high heat 8-10 minutes (I cooked for 10)
I was really liberal with oil due to size of wok but use enough to get good coverage 😊
