Melanie Roberson's Curry Lentil Soup Recipe Ingredients: -1 Tbsp olive oil -2 stalks celery, chopped -1/2 onion, chopped -3 cloves garlic, chopped -1 small package cauliflower rice, frozen -3 carrots, sliced -1/2 cup lentils (we used mixed trio) -1 can full-fat coconut milk -1 Tbsp curry powder -1 Tbsp red curry paste -1 Tbsp Better Than Bouillon Chicken flavor mixed with 1 cup warm water -salt and pepper to taste Instructions: -First saute celery, onion, garlic in olive oil for 7 minutes - use saute setting Then put all other ingredients in the Instant Pot. Hit the BEAN button on the Instant Pot and adjust the time to 15 minutes. Serve when ready. Optional Garnishes: -avocado -green onion -cilantro
