The Best Healthy Avocado Pasta
Avocado Pasta with Sausage
Serves 8
372 calories, 34 g carbs, 18 g fat, 29 g protein
1 lb pasta
1 lb sausage
8 oz cherry tomatoes
1 tablespoon chopped basil
1/4 cup Parmesan cheese
1 teaspoon salt
1 teaspoon pepper
1 large avocado
1. Cook pasta according to package directions
2. Save 1 cup cooking water for later
3. Cook sausage
4. Cut tomatoes in 1/2
5. Blend basil, avocado, salt, pepper and received water
6. Mix pasta, tomatoes, sausage, avocado sauce
7. Serve with Parmesan cheese
8. Enjoy

Homemade Granola Bars
Granola Bars
1 1/2 cups oats
1/4 cup coconut
1/4 cup chopped almonds
1/4 cup honey
1 cup chopped dates
1/4 cup almond butter
1. Pre-heat oven to 350
2. Prepare a cookie sheet with parchment paper or cooking spray
3. Combine oats, coconut, chopped almonds in a bowl set aside
4. Combine honey, almond butter, chopped dates in a saucepan
5. Heat saucepan on medium tell mixture is just warm
6. Turn off heat
7. Add dry mixture
8. Mix until incorporated. Add more honey if the mixture seems dry.
9. Poor mixture onto prepared pan and press
10. Bake for 10-12 minutes
11. Remove from oven and slice immediately
12. Store in an airtight container for 3-5 days

Bagel Pizza
Makes 2 Bagel Pizzas
1 Whole Grain Bagel
2 oz Italian cheese blend
1/4 cup Pizza Sauce
12 pieces Turkey Pepperoni
Preheat Oven to 400
Cut Bagel in half
Cover each half with 2 tablespoons of Pizza sauce.
Place 6 slices of turkey pepperoni on each half
Cover each half with 1 ounce of Italian cheese blend.
Cook in the oven for 10 minutes.
Let Cool and enjoy.

Homemade Pancake Mix
Today we make homemade pancake mix.
Pancake Mix
4 cups whole wheat flour
4 cups white flour
4 teaspoons baking powder
2 teaspoons baking soda
3/4 cup Sugar
Mix well and store in an airtight container
To make pancakes:
Measure out 2 cups of mix
Add
2 cups buttermilk (or 2 cups milk with 1 teaspoon lemon juice)
2 teaspoons oil (or butter)
2 eggs (or 1/3 egg whites)
Mix well and cook on a griddle or skillet

White Chocolate, Cranberry, Pecan Cookies
1 cup flour (1/2 whole wheat/white)
1 cup oats
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup brown sugar
1/4 cup white sugar
1/4 cup butter
1 egg
1 teaspoon vanilla extract.
1/4 unsweetened applesauce
1/2 cup dried cranberries
1/4 cup chopped pecans
1/4 white chocolate chips
1.Pre-heat oven to 350
2.Mix flour, oats, baking powder, salt and set aside.
3.In a stand mixer add butter and sugar and mix till creamy.
4.Next add egg, applesauce, and vanilla extract. Mix well
5.Now add cranberries, pecans, and White chocolate chips.
6. Dish out 24 cookies.
7.Cook for 12-15 minutes.

Roasted Brussel Sprouts and Potatoes on Your BBQ
Today we make roasted brussel sprout, potatoes, and salmon on the BBQ
Recipe Follows
Make 1 potato person
1/2 lbs Brussel Sprouts
4 oz. Salmon per person
1/4 cup oil divided
2 Tablespoons seasoning of choice
Salt to season salmon
Heat BBQ or Oven to 400.
Slice potatoes into 8 pieces
Place pieces in a bowl and coat in 2 tablespoons of the oil and seasoning.
Layout the potatoes on a baking sheet
Cook potatoes for 35-40 minutes, till golden brown.
Make sure to check and turn the potatoes regularly
Wash and slice the Brussel sprouts and season with remaining oil and salt
Place Brussel sprouts on a baking sheet
Rinse Salmon
Spray cooking spray on a piece of foil that has the edges folded up.
Place the salmon on the foil.
After the potatoes have been cooking on the BBQ for 20 minutes add the salmon and Brussel sprouts. Make sure to turn the Brussel sprouts regularly.
Cook for about 20 minutes.

How to make Squash Soup in your Instant Pot
Healthy Squash Soup in your Instant Pot. Made with simple ingredients.
Recipe Follows:
Squash Soup
3 medium Winter Squash (like pumpkin, acorn, or butternut)
2 Tablespoons butter or ghee
1/2 medium onion or 1 small onion
2 cloves garlic crushed
1 apple (I used granny smith)
1 cup light canned coconut milk (you can freeze the leftovers)
1 bouillon cube in 1 cup water
Salt and Pepper to taste
Cut the squash in half and scoop out the seeds. Place in a shallow glass bowl or dish and microwave in 4-minute segments tell soft (usually about 12-16 minutes). Set aside to cool.
While Squash is cooking:
Saute the onion, apple and garlic tell onion is soft, be careful not to burn the garlic.
Add cooked squash, bouillon (in the water), coconut milk, and salt and pepper.
Cover and set instant pot to slow cook tell ready to serve.
Puree with a stick blender just before serving.
Add water to the desired consistency, if needed.
Enjoy
