Learn how to make gingerbread cookies start to finish.
This gingerbread cookie dough recipe happens to be vegan, so to keep it vegan in our icing we will use water instead of egg whites. The gingerbread man will still be delicious, but if you use egg whites it will dry shiny instead of matte.
Bake at 350F like pretty much all cookies until they look dry.
I love building things out of gingerbread. Last year I made an airplane with this recipe, but this year I'm doing gingerbread men because they make great little holiday gifts and are easy to transport.

Chicken Salad: Something to Do With Leftover Thanksgiving Turkey
This chicken salad changed my mind about mayonnaise based salads. I used to hate all those mayo based salads when I was a kid, until I started eating this one. The best part about this recipe is that you can use it with any protein you have left over. I use it for chicken salad, tuna salad, turkey salad, and even salmon salad. I haven't tried it yet for egg or potato salad but I think it would work well.

Pecan Pie Living It's Best Life
You will never go back to traditional pecan pie after this. I make it every Thanksgiving. It's everything traditional pecan pie wants to be; crunchy, gooey, crumbly, topped with ice cream, and most importantly loaded with pecans. I hate when you get a pecan pie and its mostly that gooey egg mixture. Technically it's a tart but this is loaded with pecans and flavor!

Tart dough also known as Pate Sucree or Sweet Paste, has a crumbly cookie texture, you can actually use tart dough to make decorative cookies, with royal icing.

Quesadillas + Grace=Grace-A-Dillas: Jerk Chicken, Bacon, Cheese.
This quesadilla recipe is one of the first recipes I ever created. It's been trial and errored so many times this version of the Grace-A-Dilla is pretty close to perfection. I wanted to make a homemade quesadilla that was easy to make, crispy on the outside, gooey in the middle, and enough grease to soak up a late night out. The leftovers are also a great breakfast.
To prevent sogginess I completely left out vegetables. But if you want to make this vegetarian or add onions and peppers make sure you cook as much water out of them as possible.
Also remember you can add veggies to this with toppings like Pico de Gallo and other salsas.
Since we omitted veggies marinating your chicken is really important.
I really recommend the Pickapeppa sauce or a jerk chicken sauce it goes great with the bacon flavor.

SPATCHCOCK! Roasting a Whole Chicken For Meal Prep
How to Spatchcock a chicken. Spatchcocking chicken is a technique used to make a whole chicken or any other type of bird lay flat. A spatchcocked chicken also cooks a lot faster than a whole bird. Spatchcocking also makes it easier to cook a whole chicken on a grill and makes those thighs look real thick.
Most people don't bother cooking a whole chicken, so usually you can find them on sale. Having a whole chicken also means you can use a whole chicken; make chicken stock from the bones, gravy from the drippings, and the meat can pretty much go with any dish. You can also spatchcock your Thanksgiving Turkey so you can cut the cooking time in half.

Focaccia 2 Ways
Focaccia. Focaccia is an Italian bread. Its super hearty and simple to make. It's also great if you want to learn how to make a bread but not have to deal with a bread starter. It's one of my favorites.
Recently the New York Times had a recipe for focaccia, but I think this one is better. You could do a gardenscape focaccia like in the NYT article but keep an eye on your moisture level, when it comes to toppings. Focaccia freezes really well, when I make it I cut it up and then freeze them individually.
Focaccia goes with any meal but my favorite is having it for breakfast with over easy eggs on top! It would probably make an eggcellent bacon egg and cheese sandwich too.

Making Up Cookies: Carrot Cake Cookies
This Carrot Cake Cookie Recipe is based of an Oatmeal Cookie Recipe. In this video we discuss the creaming method and how to change elements of it to get different effects. At the end hopefully you will see how to manipulate cookie recipes to make them your own.
Carrot Cake Recipe 2:11
Variations to try, so you can experiment with the creaming method:
1.Replace the butter with vegetable or coconut oil of a denser more moist cookie or more egg for a cookie that spreads more.
2. Change up the Mix-ins, replace the raisins with Dried pineapple and the walnuts with white chocolate chips, you can even replace some of the carrot with shredded coconut, go crazy. As long as its around the same measurements it won't affect the cookie structure.
3. Play with the spices (always be careful with nutmeg though, more than a pinch would be too much).
4.Maybe add a splash of rum with the vanilla.
5. Add toasted chopped walnuts to the outside of the cookie sandwich.

I love Jiu-jitsu, it was a huge influence in my life growing up. A few weeks ago my twin brother came across a video of my fighting when I was a kid. I got in contact with the person who uploaded the video to this women's grappling channel and he put me in contact with Jen Haas, a Brazilian Jiu-jitsu brown belt and IBJJF gold medalist.
Women don't usually get a lot of coverage in the jiujitsu world, like many sports it is male dominated, but it has many benefits for women so we would like to advocated for more women to get involved.
Jen is starting a women's program at here school, Fredson Paixo Academy in Las Vegas, Nevada. Go check it out!

A little bit of a garden update... My basil has been growing like crazy! I think I have made about 8qts of pesto from it already. If your just starting your herb garden this video will show you where to cut your basil plant when you are harvesting it.

Aji de Gallina: Learning How to Cook Aji De Gallina Con Mi Amigo Oscar!
My friend Oscar introduced me to this delicious Peruvian dish, Aji de Gallina a few months ago and I have been asking him for the recipe ever since. He finally came over and taught me how to make it. Aji de Gallina is shredded chicken with a delicious spicy yellow creamy sauce traditionally served over potatoes and rice. There are many variations of this traditional Peruvian dish I hope you enjoy ours.
