Tomato Confit (Are You Overrun With Cherry Tomatoes)
Cherry tomatoes (or regular diced up)
a heavy layer of olive oil
balsamic vinegar
Garlic cloves
herbs of your choosing
salt, pepper, and other seasonings
Roast for 20-30 mins or till soft.
Cool and add to jar, make sure oil covers the tomatoes, and store in the fridge.

Green Chile & Pork Stew (with Cornbread)
This is one of my favorite seasonal dishes!!! Thankfully I've had enough peppers to roast and freeze some for later. Seeds from @TheSuperiorGardener

Ingredients
12 large mild green chiles
1 large onion
2 tablespoons lard, or vegetable oil
1 1/2 teaspoons fine sea salt
2 to 2 1/2 pounds pork butt, trimmed and cut into bite-size pieces
2 tablespoons all-purpose flour
1 cup beer, broth, or water
2 cups low-sodium broth, or water
(my addition--3 med potatoes diced)
I used this recipe for the cornbread and cut the sugar way down. Next time I wouldn't add any sugar only the honey. I used coconut oil as my oil of choice and it was fabulous.
