Today I making one of our family favorites chili, Colorado.

My pork belly tacos brings in a whole new meaning to your ordinary taco. Juicy and salty pork belly diced and air fried to perfection with a drizzle of my enchilada sauce, shredded red cabbage, cilantro, red onion, and Cotija cheese, oh and don’t forget the splash of lime or lemon on toasty corn tortilla.
