Finally Revealing My Secret Lasagna Recipe
Let's face it, we all love lasagna. It's amazing but it's fairly time consuming to make. If you are going to go through all that effort it had better blow people's socks off, am I right? I have a secret recipe that I have been making for a long time and I have rarely ever share any of it, let alone the WHOLE RECIPE! Well, today is the day and here it is. Every secret revealed. Next time you make a lasagna make sure you try this recipe. Just be prepared for the reaction you are going to get. Enjoy!
My Secret Lasagna Recipe
Sauce Recipe
1 medium Yellow Onion, diced
5 cloves roasted garlic
1 large red bell pepper, roasted, skinned and diced
12oz Can Tomato Paste
2 28oz cans whole, peeled Tomatoes, one can blended into sauce
¼ cup red wine
2 tbsp oregano (If using fresh double the amount)
2 tbsp basil (If using fresh double the amount)
½ tsp salt and a pinch of black pepper
Meatball Recipe
1 lb ground beef
1 egg
1/4 cup panko bread crumbs
1 tbsp milk
1/4 cup grated yellow onion
1 large clove of garlic, minced
1 ½ tbsp Parmesan cheese
1 tsp dried oregano
dash of salt and pepper
up to 1 tsp red pepper flakes (optional, for heat)
Ricotta Cheese Recipe
2 cups Ricotta Cheese
¼ cup Grated Parmesan Cheese
1 egg, beaten
1 tsp Dried Oregano (double if using fresh herbs)
1 clove roasted garlic, mashed into a paste
Plus
1 box of Lasagna Pasta
1lb Mozzarella Cheese

Making Great Pizza at Home | My 321 Pizza Recipe
I have spent 25 years or more learning how to make great pizza. This is my best "at home pizza" recipe yet. The 321 recipe is about the proper ratio of flour, water and yeast. If you follow this formula you will get great results, every time! Top your pizza however you like but I made a supreme pizza to show that style. Making a Cracker Crust Pizza, In Memoriam - Big O To Go Pizza, Mission Viejo, Ca
I grew up on cracker crust style thin pizza. It was the greatest thing ever for a small child who knew nothing else. There is a LOT of great pizza but that one that brings back those memories will always be your favorite. Big O To Go Pizza in Mission Viejo was that pizza! I say was, they have now closed after just 46 short years in business. Nothing lasts forever but as long as we keep making this pizza their memory lives on! How To Make Chicago Thin Crust Pizza
Chicago is big pizza town. The deep dish may get all the headlines but the real star of this town is the thin crust! Its crispy, its cut funny and its delicious! Turns out its also really easy to make at home. Here is how you make your own Chicago Thin Crust Pizza at home!
Dough recipe:
300g AP Flour
150g warm water (105f to 115f)
1/2 package of Active Yeast
1/2 tsp sugar
1 tsp Salt
2 tsp Corn Oil

Sauce recipe:
1 15oz can of Tomato Sauce
1/2 6oz can of Tomato Paste
1 tsp Dried Oregano
1 tsp Dried Basil
1 tsp Granulated Garlic Powder
1/2 tsp Onion Powder
1/2 tsp salt
Mix Well and refrigerate, covered, for at least 1 hour before making pizza.

I made Original Tommy's Chili Burgers, Dogs and Fries! What more can you ask for!
Original Tommy's Chili is special. It is the perfect recipe to go on Chili Dogs, Chili Fries and of course, Chili Burgers. It's not hard to make at all and in just a few minutes you can have your own Original Tommy's Chili at home, even if you don't live in So Cal! Enjoy!
Original Tommy's Chili Recipe:
1 pound Ground Beef
1 Large Carrot, finely shredded

The Legendary Jack's Burrito Has Returned, Sort of
If you are old enough to remember the old Jack in the Box Burrito, congratulations! You're officially old! With age comes wisdom and knowledge. Remembering this amazing classic Jack in the Box menu item is definitely worth a few wrinkles! These things were (are) amazing and it is long past time for them to be brought back. I spent weeks and months going over any old records I could find to figure out how these were made back then. This is the best recipe available to date for how they were made. It's not hard and they really are worth all the work. I hope you will make these, even if you never had the original. Enjoy!
Jacks Taco Meat
1 cup Cold Water
2 tbsp Oat Flour (finely ground quick or steel cut oats)
2 tbsp Tomato Paste
1 tsp Onion Powder
1 tbsp Chili Powder
1 tbsp Maseca Corn Four
1 tbsp AP Four
2 tsp Salt
1 tsp Ac'cent Seasoning (or other brand of msg)
1 tsp Garlic Powder
1 tsp Worcestershire Sauce
1 tsp Sugar
1 tsp Ground Cumin
A dash of Black Pepper
A dash of Cayenne Pepper
Squeeze of fresh lime juice (or dash of powdered citric acid)
Mix all ingredients together and add to browned ground beef. Cook until combined and then pour meat mixture into your food processor. Blend until very liquid and smooth. Return meat to your pan and cook on med-low heat for 3 minutes. Mash meat until extremely smooth
Jacks Taco Sauce
1 cup Cold Water
¼ cup Heinz Chili Sauce
2 ½ tbsp Distilled White Vinegar
1 tbsp Cornstarch
½ tsp Red Pepper Flakes
½ tsp Seasoning Salt (Lawry's or other brand)
1 tsp Garlic Powder
½ tsp Onion Powder
¼ tsp White Pepper
1/8 tsp Ground Coriander
¼ tsp Ground Cumin
Pinch of Ground Cloves
½ tsp Sweet Smoked Paprika
Add all ingredients to your blended and blend until combined. Heat a sauce pan over med/low heat. Add sauce and simmer 5-7 minutes to thicken sauce. Stir often. Let cool and pour sauce into squeeze bottle for easiest application. Refrigerate sauce before use. Keep a few weeks if bottle is air tight.

If you have never eaten a Jack in the Box Taco good for you and I'm sorry. They are a weird combination of yummy and WTF. There have always been rumors about what is in them (it ain't all beef folks, not even half!) and the american cheese is about as out of place as that crazy sauce. It was 1950 San Diego and they did the best they could with what they had. Luckily, there are a few simple work arounds so you can make these amazing tacos at home. I'll show you how!
Jack's Taco Meat Recipe
1 cup Cold Water
2 tbsp Oat Flour (finely ground quick or steel cut oats)
