Recreating the Old Macho Combo Burrito
If you remember back in the day when words like "Macho" were considered good marketing and NOT toxic masculinity, then you will remember the Macho Combo Burrito from Del Taco (Naugles had it too, same company at that point). This thing is well Over a Pound, with Beef and Beans. It had both Red and Green Sauces with all the salad fixin's and a healthy dose of sour cream to top it all off. They changed the name to "epic" and it lost some of its punch along the way but you can still make one yourself. I'll show you how. Enjoy!

The Old School Del Taco Beef and Egg Breakfast Burrito
If it wasn't for this burrito I may not be here. To say it saved my life time and time again is an understatement. I lived on these things every morning for about a year. It wasn't always the easiest thing to order. The words 'Beef' and 'Bean' sound similar through a drive-thru speaker I guess. It may have been me slurring my words from the hangover... regardless of who was at fault, I loved (still love) this burrito. I think you'll see why. Enjoy!

Making Del Taco's Taco Meat and Refried Beans at Home
Everyone knows Del Taco has the best meat and beans. This is how to make them at home. Enjoy!
Del Taco Seasoned Ground Beef recipe
Taco Meat Ingredients
1 lb ground beef
¼ cup Texturized Vegetable Protein, TVP (optional)
¼ cup boiling water (for TVP)
1 cup water, for the meat
1 tbsp Dried Minced Onions
1 tbsp Chili Powder
1 tsp Paprika
1 tsp Cumin
1 tsp Garlic Powder
¼ tsp Cayenne Pepper
1 tsp Salt
1 heaping tbsp Tomato Paste
½ tsp Sugar
¼ tsp of Citric Acid or 1 tsp Fresh Lime Juice
Thickeners
1 tbsp Oat flour (ground instant oatmeal)
1 tbsp Masa Harina
1 tbsp AP Flour
Refried Beans Ingredients
1 can Pinto beans
¼ cup Grated White Onion
½ tbsp vegetable oil
½ tsp Cumin
½ tsp Garlic Powder
½ tsp Paprika
½ tsp Salt
Pinch of Citric Acid or ¼ tsp Lime Juice
Taco Meat
1) Soak ¼ cup TVP in ¼ cup of boiling water. Mix well and set aside
2) Brown 1 lb of ground beef until all the pink is gone. Do not drain
3) Put cooked ground beef in a food processor (carefully not getting grease in the food processor) and pulse around 4 times to chop up the beef, Set Aside for now
4) Put frying pan with beef grease back on the heat and add Thickeners to the grease. Stir well for about 1 minute to cook the flour to make a “Roux”
5) Add seasoning and minced onions to the pan and stir until is is all incorporated into the “Roux”
6) Add 1 heaping tablespoon of tomato paste and mix well.
7) Add 1//2 cup of water and mix well. Keep adding water until you get a “gravy” like consistency
8) Add Citric Acid or Fresh Lime Juice and stir in a little
9) Add you TVP mixture and ground beef to the pan and mix well to combine it all very well.
10) Cover and let simmer on lowest heat for about 10 minutes
Refried Beans
1) Drain 1 can of pinto beans in a colander over a large bowl. Keep juice for later
2) Heat ½ tbsp of vegetable oil in a 2 quart sauce pan
3) Add ¼ cup grated white onion and cook about 1 ½ minutes until onion starts to brown slightly
4) Add bean to the pot and ½ tsp each of Cumin, Garlic Powder, Paprika and Salt. Stir well
5) Add Citric Acid or Lime Juice and let simmer on medium low heat for about 3 minutes
6) Mash beans with waffle style potato mashed, leaving a small portion of the bean untouched.
7) Add drained bean liquid to the beans to get the desired consistency. Let simmer on low heat about 5-7 minutes.

Shrimp and Lobster w/ 3 Cheese Tortellini: Live and Unedited
I tried something new. I shot this whole video live and there are no edits for anything. Good, bad or ugly, it's all in here. Also, I am trying out some "pop ups" for info during the video. Please let me know what you think. Enjoy!
Shrimp and Lobster Tortellini
1 small package of 3 cheese tortellini pasta
Follow the directions on the package for cooking. Drain but do not rinse the pasta
½ lb 16-20 shrimp, shelled and deveined
2 lobster tails, taken out of their shells and cut in thirds
3 tbsp butter
1 tbsp olive oil
3 cloves of garlic, smashed
4 artichoke hearts, from a can, drained and rough chopped
Add butter and oil to a hot 12” frying pan.
When the butter is fully melted and all the other ingredients and cook for 2 minutes.
Remove from the pan and set aside for now
Sauce:
3 tbsp butter
4 cloves of garlic, smashed
½ cup good white wine
1 cup heavy cream
salt and pepper to taste
Remove any liquid from the pan leftover from the shrimp and lobster but do not wipe out the frying pan.
Add the butter and garlic and cook over medium heat for about 1 minute.
Add the wine and let reduce for about 1 minute
Add the heavy cream and salt and pepper. Simmer for about 1 ½ minutes. Do NOT scorch the cream!
Add your shrimp, lobster and artichoke hearts back to the sauce and cook for about 2 minutes.
Add the cooked tortellini to the sauce and stir to combine.
Turn off the heat and let the pasta thicken the sauce for about 1 minute. Serve with bread and maybe a Caesar salad if you'd like. Enjoy!

My Favorite Carrot Cake Muffins
I love eating these so I got really good at making them. It is really easy. You don't need any fancy ingredients or a box of stuff to make it happen. Enjoy!
Carrot Cake Muffin Recipe:
1 1/4 cup Flour (160g)
1/2 cup Granulated Sugar (100g)
1/2 cup Packed Light Brown Sugar (100g)
3/4 tsp Baking Soda
1/2 tsp Baking Powder
1/2 tsp Salt
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Ground Ginger
1/4 tsp Ground Clove (optional)
3/4 cup Canola Oil (or other neutral oil)
2 large eggs, room temp
1 1/2 tsp Vanilla Extract
2 tbsp Milk
1 1/2 cups Grated Fresh Carrots (170g) about 2 large carrots
1/2 cup Chopped Walnuts
Peanut Butter Cream Cheese Frosting:
4oz Cream Cheese, softened (1/2 block)
1/3 cup creamy Peanut Butter
1/4 cup Unsalted Butter (1/2 stick)
1/2 tsp Salt
1/2 tsp Vanilla Extract
2 cups Powdered Sugar

Homemade Dog Treats your Dogs Will Love!
The kitchen inspectors approve! These dog treats past inspection with flying colors. Your dogs will love them too and they are healthy. Win-Win!
Recipe:
2 very ripe large bananas
2 eggs
1/3 cup Peanut Butter (chunky or smooth)
3 1/2 cups quick cooking oats (plus about 1/2 cup for rolling out)
1 tsp ground cinnamon
1/2 tsp honey
Preheat oven to350f (175c) Put your oven rack in the middle of the oven
Smash the bananas and add the other wet ingredients. Mix well.
Add the cinnamon and oats. Wear gloves while you squish the mixture into a dough ball.
Let rest 15-20 minutes to hydrate the oats.
Coat your work surface with some dry oats and roll out the dough to 1/4 inch thick. Add oats to the top of the dough to prevent sticking on your rolling pin.
Cut out your treats and place on a baking seat lined with parchment paper
Bake for 40 minutes for a good hard treat. 30-35 minutes for a softer treat.
Let cool and feed to your pup.
Keep left overs in the fridge in a zip top bag for up to a few weeks.

Slow Cooker Carnitas is Amazing and Easy to Make | 4K
Theis is a great recipe for anyone who loves carnitas. If you don't like carnitas maybe it is because you never had it this good? Either way, I urge you to make this and eat this! It just might change your life... OK a little over sold there but still, it's dang good! Enjoy
Slow Cooker Carnitas recipe:
1 Pork Should Blade bone-in roast (about 6-8 lbs)
1 orange, slices
1 yellow onion, quartered
3 cloves of Garlic, smashed
8oz Coca Cola (not diet or Pepsi)
2 cups water
2 Bay leaves
1/4 cup Snow Cap Lard (for frying)
Put everything in the slow cooker (fat cap up) and cook 10 hours on low or 7 hours on high. Turn the roast over about 3/4 way though cooking
