CHERRY COFFEE CAKE (Recipe will be in future cookbook)
1/4 CUP BUTTER OR MARGARINE (ROOM TEMP.)
1 PKG. WHITE CAKE MIX
1 PACKET 1/4 OZ. EACH DRY YEAST
1 CUP ALL-PURPOSE FLOUR
2 EGGS
1 CAN (1 LB. 5 OZ.) CHERRY PIE FILLING
2 TBSP. SUGAR
8 OZ. CREAM CHEESE (CUBED) IS OPTIONAL
Preheat oven to 375 degrees. If using convection set temperature at 350 degrees. In a medium mixing bowl, reserve 1/2 cup dry cake mix. In a large bowl add remaining cake mix with yeast, flour, eggs, and 2/3 cup warm water. Mix until blended well with a dough whisk or spoon. Spread dough in a greased 13 x 9 x 2-inch baking pan; set aside. In a bowl blend reserved cake mix with butter & sugar to make streusel topping. Mixture will be crumbly. Set it aside. Spoon pie filling evenly over dough in pan. Place cubed cream cheese on top of cake if desired (optional). Sprinkle streusel topping over filling. Bake immediately at 375 degrees. for 30 minutes. If desired, frost with glaze. (Recipe below.)

Hershey’s Syrup Cake
1 1/2 CUPS OF SUGAR
1 1/2 STICKS OF MARGARINE
6 LARGE EGGS
24 OZ. HERSHEY'S CHOCOLATE SYRUP
1 1/2 CUPS OF SELF-RISING FLOUR
1 TSP. VANILLA EXTRACT
Cream sugar and butter together, then add eggs one at a time. Add chocolate syrup, then add flour 1/2 cup at a time. Add vanilla and mix for 2 minutes on medium speed.
Place batter in a greased and floured 13x9 sheet cake pan and bake at 350 degrees F for 30 minutes. After 30 minutes, reduce heat to 325 degrees and continue baking until a toothpick comes out clean. (Takes mine about 40-45 minutes total).
Mama’s Stovetop Fudge Icing
3 CUPS SUGAR
1 STICK SALTED BUTTER
3 HEAPING TBSP. COCOA
1/4 CUP PEANUT BUTTER
1 CUP EVAPORATED MILK
1 TSP. VANILLA EXTRACT
1.5 CUPS PARCHED PEANUTS (OR PECANS)
Combine sugar & cocoa, mix well, set aside. Melt butter on medium/low heat in a medium saucepan. Add sugar/cocoa mixture & milk, mix well. Keep on low heat until mixture simmers.
Careful with Sugar Granules: Wash utensils to prevent transfer of sugar crystals into fudge.
Boiling Fudge: Bring to a slow simmer (until it looks as if most of the sugar has melted). Cover & turn up to high heat. Set a timer for 3 minutes. Check with a candy thermometer. Cook to a soft ball stage, around 240 degrees.
Beating Fudge: Pour candy into mixing bowl. Do not scrape sides of saucepan (to reduce chance of sugar crystals getting into mix), mix on high, add vanilla. Beat until frosting starts to thicken, then add nuts and turn the mixer off.

HOMEMADE VANILLA ICE CREAM
3 TBSP. CORNSTARCH (NOT LEVELED)
6 C. WHOLE MILK (VERY COLD)
2 2/3 C. SUGAR
4 LG. OR 5 SM. EGGS
3/4 TSP. SALT
1 CAN (13 OZ.) EVAPORATED MILK
1 PT. WHIPPING CREAM (VERY COLD)
3 1/2 TBSP. VANILLA CRUSHED ICE AND LOTS OF ICE CREAM SALT
Put milk in freezer one hour prior to mixing. In a batter bowl whisk together the sugar, cornstarch, and salt. Whisk well. In a separate bowl beat eggs. Add eggs and evaporated milk to batter bowl with sugar -whisk very well. Microwave on high 3 minutes. Take out and whisk well. (Can use a hand mixer if needed). Continue to cook on high for 2 minute intervals -whisking well between cooks- until it is thick and pudding like in texture. Add milk, whipping cream and vanilla. Fill ice cream freezer container 2/3 full. Freeze per ice cream freezer manufacturer instructions. Enjoy y’all!
Ice cream should be creamy and soft serve texture.
Important: milk and whipping cream must be very cold in order to cool the hot pudding down. Make sure and put them in the freezer prior to adding to ice cream.

C.V.C. Barbeque Sauce
2/3 CUP APPLE CIDER VINEGAR
1/2 CUP DARK CANE SYRUP (OR MOLASSES)
1 TSP COARSE BLACK PEPPER
1/2 TSP CAYENNE PEPPER
1/2 TSP ROASTED GARLIC POWDER
1 TSP YELLOW MUSTARD
1 CUP TOMATO SAUCE
1 TSP SALT
1 TSP ONION POWDER
1 CUP WATER
1 CUP BROWN SUGAR
1 TSP SMOKED PAPRIKA
1 1/2 CUPS KETCHUP
Bring all ingredients to a boil and simmer for 20 min. Store in a mason jar in refrigerator for up to 6 months. Omit cayenne and half of black pepper for mild sauce.
Chris's Rib Rub Recipe
1/2 CUP SUGAR
1/2 CUP BROWN SUGAR
2 TBSP. CAYENNE PEPPER
1/2 CUP PAPRIKA
2 TBSP. ONION POWDER
1/2 CUP KOSHER SALT
1/2 CUP COARSE GROUND BLACK PEPPER
Blend spices well and store in an air-tight container.

Cheesy Cheddar Biscuits
2 CUPS SELF-RISING FLOUR
1/2 STICK BUTTER (FROZEN AND GRATED) OR
ROOM TEMPERATURE BUTTER
1 1/2 CUP CHEDDAR CHEESE (GRATED)
1 TSP. GARLIC POWDER (OPTIONAL)
1 TBSP. LITE HOUSE FREEZE DRIED (SALAD BLEND)
1 TSP. ONION POWDER
ABOUT A CUP OF WHIPPING CREAM (OR WHOLE BUTTERMILK)
Put flour in a batter bowl. Add butter and toss
well (or blend in with blending fork if butter is
room temperature). Toss cheese into mix, and add
herbs and onion powder. Add whipping cream
until batter is good and sticky and there is no
flour left on the bottom of the bowl.
Drop out on a greased baking pan (or parchment)
and
bake at 450 degrees F for 20 minutes. Enjoy

C.V.C. Barbeque Sauce
2/3 CUP APPLE CIDER VINEGAR
1/2 CUP DARK CANE SYRUP (OR MOLASSES)
1 TSP COARSE BLACK PEPPER
1/2 TSP CAYENNE PEPPER
1/2 TSP ROASTED GARLIC POWDER
1 TSP YELLOW MUSTARD
1 CUP TOMATO SAUCE
1 TSP SALT
1 TSP ONION POWDER
1 CUP WATER
1 CUP BROWN SUGAR
1 TSP SMOKED PAPRIKA
1 1/2 CUPS KETCHUP
Bring all ingredients to a boil and simmer for 20 min. Store in a mason jar in refrigerator for up to 6 months. Omit cayenne and half of black pepper for mild sauce.

1/2 CUP SUGAR

Crispy Chicken Francese or Francaise

Chicken Francese
1/2 INCH THICK CHICKEN BREASTS
SALT & PEPPER
ONION POWDER
2 LEMONS
BADIA ROASTED GARLIC POWDER
2 EGGS
1 1/2 CUPS SELF-RISING FLOUR
1 PINT SLICED WHITE MUSHROOMS
1 STICK BUTTER
Place butter in a saucepan with mushrooms on medium heat. Sprinkle mushrooms with salt, pepper, and onion powder. Cook on medium/low heat until juices turn from cloudy to clear. Do not cook on high or butter will burn. Salt and pepper chicken (*NOTE: slice breasts thin or you will have to cook them longer to reach a safe internal temp. of 175 degrees F.) then sprinkle with garlic powder and onion powder. Beat eggs and pour over chicken to coat well. In a shallow pan, coat chicken well with flour. Fry chicken 3 minutes per side until golden brown. Let chicken cool on a drying rack for 3 minutes, then place in a dish and pour hot mushrooms and butter on top. Squeeze two lemons on the top of the chicken and mushrooms. Garnish with lemon slices

Lemon Lush
1ST LAYER IS BOTTOM CRUST:
1 CUP ALL-PURPOSE FLOUR
1/2 - 1 CUP PECANS (CHOPPED)
1 STICK BUTTER (ROOM TEMP)
Mix above ingredients. Place in a 2.75 qt. baking dish or a 13”x9”x2”. Bake at 350 degrees for 25 min, until golden brown around the edges. Take out and cool.
2ND LAYER:
8 OZ. CREAM CHEESE (ROOM TEMP)
1 CUP POWDERED SUGAR
8 OZ. TUB WHIPPED TOPPING
1 LEMON (ZEST IS OPTIONAL)
Mix cream cheese & sugar together until creamy, then add 1 cup of whipped topping- mix well. Layer on bottom crust. Zest your lemon over this cream cheese layer. (Reserve zest for topping) TOP LAYER IS PUDDING LAYER: 2 3.5 OZ BOXES LEMON INSTANT PUDDING MIX 3 CUPS MILK JUICE OF ONE LEMON (OPTIONAL) Mix pudding with milk. Add lemon juice and mix. pour pudding over the cream cheese layer, then top with rest of whipped topping. Garnish top with lemon zest.

MIGHTY GOOD CORNBREAD
10.25” CAST IRON SKILLET
1 1/2 CUPS SELF-RISING CORNMEAL MIX
1/2 CUP CORN OIL (OR VEGETABLE OIL)
1 CUP CREAM-STYLE CANNED CORN
1 CUP SOUR CREAM
2 LARGE EGGS
Grease a cast iron skillet very well. Sprinkle inside with cornmeal mix. Mix above ingredients together and pour into skillet. Bake at 425 degrees until golden brown. Remove from oven carefully and flip skillet upside down to release cornbread immediately.
NANA'S MEXICAN CORNBREAD
1 1/2 CUPS SELF-RISING CORNMEAL MIX
3/4 CUP VEGETABLE OIL
1/4 CUP CHOPPED ONION
1/8 CUP CHOPPED BELL PEPPER
6-8 OZ. CAN CREAM CORN
2 EGGS
1 CHOPPED JALAPENO PEPPER (OR 2 TABLESPOONS OF JAR OF DICED JALAPENOS)
2 OZ. PIMENTOS
1 CUP SOUR CREAM
8 OZ. BAG SHREDDED MEXICAN CHEESE BLEND OR MEDIUM CHEDDAR
Use a 13x9x2 aluminum pan or a 10” iron skillet. Grease with shortening then sprinkle with 1/4 cup of cornmeal on sides and bottom. In a medium bowl, combine above ingredients and add to skillet. Bake at 400 degrees until dark brown. Should take 50-60 minutes.
Remove from oven and flip upside down on top of a regular size plate immediately.
CRUNCHY CORNBREAD
2 CUPS BUTTERMILK CORNMEAL MIX ,SELF-RISING
6 TBSP. SALTED BUTTER OR MARGARINE -MELTED
1 TBSP. GRANULATED SUGAR (OPTIONAL)
1 1/2 CUPS WHOLE BUTTERMILK
1/4 CUP CORN OIL
1 RAW EGG
Grease a 10.25” iron skillet with shortening then sprinkle with 1/4 cup of cornmeal mix on sides and bottom. In a large bowl, combine above ingredients and mix well-add to skillet. Bake at 425 degrees until good and brown. Approx.: 30 to 40 minutes
Carefully remove from oven and flip upside down on a plate immediately. Caution: Iron skillet will be HOT. Use a thick potholder to remove it from oven and to flip!

Parmesan Chicken
THIN SLICED CHICKEN BREAST (BUY THIN SLICED CHICKEN BREASTS OR FREEZE BREAST 1 HOUR PRIOR TO SLICING)
1 LB. SPAGHETTI NOODLES (COOK PER PACKAGE DIRECTIONS AND DRAIN)
1 CUP SELF-RISING FLOUR
PACKAGE ITALIAN STYLE CROUTONS (CRUSHED)
LARGE SKILLET
COOKING OIL
Preheat oven to 350 degrees. Slice chicken about 1/4 inch thick. Put flour in shallow dish or pie plate. Put crushed croutons in a different shallow dish or pie plate. Dredge chicken in flour (light coating) and set aside. After dredging chicken with flour, place in croutons. Press croutons into chicken well. Let chicken rest 10 minutes prior to frying. Put oil in skillet about 1” high. Oil must be HOT. Put a small amount of crust in oil and once it floats and sizzles well, your grease is hot and ready! Fry 3 minutes per side on medium/high heat. Take out with tongs and place on a paper towel covered platter/plate. In a13”x9”x2” casserole dish sprayed with cooking spray layer as follows: Spaghetti noodles in bottom. Mix a bottle of BERTOLI MARINARA with 1 CUP WATER and pour over noodles. Place fried chicken on top of that. Placed sandwich sized slices of MOZZARELLA CHEESE on chicken pieces. Sprinkle well with PARMESAN cheese and bake until hot and bubbly.

Bacon Brussel Sprouts
16 oz. FRESH BRUSSEL SPROUTS, WASHED & HALVED
2-3 SLICES BACON, CHOPPED
1/2 SMALL ONION, SLICED THIN
1 CUP HOT WATER
1 1/2 TBSP. SUGAR
1 1/2 TBSP. APPLE CIDER VINEGAR
SALT & PEPPER
Place bacon in a preheated skillet and cook on med/high until golden brown. Take out bacon & leave bacon grease in the skillet. Combine the water, sugar, and vinegar. Add brussels to skillet with onion and sauté for 3 minutes. Pour water over the brussels sprouts and onion and simmer until all liquid has evaporated from them. Let them sizzle in a skillet for a couple of minutes, then turn off heat. Crumble bacon on top of brussels, add salt and pepper and stir. Enjoy as a side!
