Hoppin John
1/2 LARGE ONION CHOPPED
2 GREEN ONIONS (SCALLIONS) CHOPPED
2 TBSP. COOKING OIL
1 TSP. SALT
1/2 TSP. PEPPER
1/2 TSP. RED PEPPER FLAKES
1 BAY LEAF
4 CUPS CHICKEN STOCK
12-16 OZ PACKAGE FROZEN BLACKEYED PEAS
1 LB. CHOPPED COOKED HAM
SERVE OVER: 1 CUP COOKED WHITE OR BROWN RICE
Cook onion and scallion in a few tablespoons of oil (or chicken stock grease) until tender (about 2 minutes). Add remaining ingredients (except rice) and cook until most of water has evaporated and you are left with about a cup of liquid in stockpot or deep skillet. Serve over rice. Best if served with a pone of Cornbread. Easy and delicious! Makes 4 large servings.

Lemon Teacake Cookies
JUICE OF ONE LARGE LEMON
1 1/2 TSP. LEMON EXTRACT
1 TSP. VANILLA EXTRACT
1 CUP SHORTENING
2 CUPS SUGAR
1/2 TSP. SALT
3 LARGE EGGS
4 1/2 CUPS SELF-RISING FLOUR
Preheat oven to 375 degrees F. In a mixing bowl, add shortening & sugar and mix until fluffy. Add the extracts & lemon juice. Add salt, then add eggs one at a time. Finally, add flour and mix well. Drop on a greased cookie sheet or parchment-lined sheet by the tablespoon. (I use a cookie scoop, but if you do not have one, just roll them up in balls) and put them 1 1/2" apart on a sheet pan. Bake for 12 minutes for lighter cookies and 13-14 min. for darker cookies. Optional: Add the zest of a lemon and beat it into the butter. You can also put cookies in a gallon storage bag and shake in powdered sugar. Store in a sealed container.

Shepherd’s Pie
5 LBS. RUSSET POTATOES
2 TSP. SALT
1/4 CUP SOUR CREAM
3/4 TSP. BLACK PEPPER
1/2 STICK SALTED BUTTER
3/4 CUP MILK
Peel and cut potatoes-simmer in a stock pot 35 min. on medium heat. Drain-add salt, sour cream, black pepper, milk, and margarine. Cream with stand mixer or hand mixer until light and fluffy. Beef filling:
SMALL ONION (DICED)
1.5 LB. GROUND CHUCK
1 TSP. WEBER STEAK-N-CHOP
1/2 CUP BROWN GRAVY MIX (MCCORMICK)
1 TSP. WORCESTERSHIRE SAUCE
2-15 OZ. CANS MIXED VEGETABLES
DO NOT USE FROZEN VEGETABLES UNLESS, You cook them until tender before adding to recipe.
Brown beef with diced onion. Drain if needed. Add steakn-chop, brown gravy mix, Worcestershire, and liquid from one can of veggies. Cook on medium until liquid evaporates. Spray large square or round baking dish with cooking spray. Add half potatoes to bottom of dish. Add drained veggies around outside edge. Add beef in center. Top with rest of potatoes around edges of baking dish. Bake at 400 degrees until brown and bubbly. Tip: Recipe fits great in a 3” deep cast iron 10.25” skillet.

Rotisserie Chicken Salad
1 ROTISSERIE CHICKEN
1/2 MEDIUM ONION (MINCED)
1/8 CUP CHOPPED CELERY
1/2 TSP. DILL WEED (CHOPPED)
1/4 TSP. PEPPER
1/2 CUP MAYONNAISE
Onion: Chop fine (mince) Use dehydrated or sauté’ onions for milder flavor. Chicken: If refrigerated, take out and let sit at room temperature for 1 hour before mixing. Take off skin, bones, and cartilage. Chop chicken into 1/2 in size cubes. Celery: chop in small pieces. Combine above ingredients in large bowl and mix with a metal spoon so you can break up chicken chunks. (I prefer to hand mix…Tammy)
Options: Omit Dill if preferred. Add additional ingredients like chopped pecans and grape halves for special occasions. Some like to warm and serve with toasted almond slices in salad. Appetizers: Bake small phyllo cups. 20 minutes before guests arrive put a dollop of chicken salad in each cup! People will love these! Sandwich: Best on sourdough (untoasted) with a thinly sliced cucumber and a little mayo. Yummy! Recipe servings vary with size of chicken.

TOMATO SAUCE MEATLOAF RECIPE:
2 LB. GROUND CHUCK
1 MEDIUM ONION – DICED
1/2 BELL PEPPER – DICED
8 OZ. CAN OF TOMATO SAUCE
5 SHAKES WORCESTERSHIRE SAUCE
2 RAW EGGS
1/4 CUP OF BROWN GRAVY MIX
6 OZ. OF CHICKEN OR TRADITIONAL DRY STUFFING MIX (PEPPERIDGE FARM OR STOVE TOP)
Mix all ingredients in a large bowl. It is best to use your hands. If you do not want to touch the meat, use your stand mixer with paddle attachment. Spray a 3-quart oblong or rectangular baking dish with cooking spray. Put meatloaf in baking dish and bake at 400 degrees for 40 minutes. Take out of oven and drain excess grease off meatloaf. Then top with ketchup. Spread it on top and bake another 20 minutes.

Air Fryer Chicken Wings
10-12 RAW CHICKEN WINGS
OLIVE OIL OR MELTED BUTTER (ENOUGH TO COAT WINGS)
SALT AND PEPPER (TO TASTE)
CHRIS’ SPECIAL SEASONING
ALL-PURPOSE FLOUR
Pat wings dry, then toss in oil or butter. Sprinkle well with seasonings, then dredge lightly in flour. Place wings in the bottom of the Air Fryer basket. Cook on 380 degrees for 20 minutes, then flip wings and cook for another 20 minutes. Take out once done or desired crunchiness is achieved, then toss in your favorite wing sauce. Enjoy immediately!
Chris’s Special Seasoning
2 TSP. CAYENNE PEPPER
2 TSP. BLACK PEPPER
2 TSP. WHITE PEPPER
4 TSP. PAPRIKA
4 TSP. SALT
Place seasonings in a small container with lid and shake well. Put seasoning in a saltshaker and label for frying foods. This is amazing on our Famous Fried Chicken!

1/4 CUP BUTTER OR MARGARINE (ROOM TEMP.)
1 PKG. WHITE CAKE MIX
1 PACKET 1/4 OZ. EACH DRY YEAST
1 CUP ALL-PURPOSE FLOUR
2 EGGS
1 CAN (1 LB. 5 OZ.) CHERRY PIE FILLING
2 TBSP. SUGAR
8 OZ. CREAM CHEESE (CUBED) IS OPTIONAL
Preheat oven to 375 degrees. If using convection set temperature at 350 degrees. In a medium mixing bowl, reserve 1/2 cup dry cake mix. In a large bowl add remaining cake mix with yeast, flour, eggs, and 2/3 cup warm water. Mix until blended well with a dough whisk or spoon. Spread dough in a greased 13 x 9 x 2-inch baking pan; set aside. In a bowl blend reserved cake mix with butter & sugar to make streusel topping. Mixture will be crumbly. Set it aside. Spoon pie filling evenly over dough in pan. Place cubed cream cheese on top of cake if desired (optional). Sprinkle streusel topping over filling. Bake immediately at 375 degrees. for 30 minutes. If desired, frost with glaze. (Recipe below.)

Hershey’s Syrup Cake
1 1/2 CUPS OF SUGAR
1 1/2 STICKS OF MARGARINE
6 LARGE EGGS
24 OZ. HERSHEY'S CHOCOLATE SYRUP
1 1/2 CUPS OF SELF-RISING FLOUR
1 TSP. VANILLA EXTRACT
Cream sugar and butter together, then add eggs one at a time. Add chocolate syrup, then add flour 1/2 cup at a time. Add vanilla and mix for 2 minutes on medium speed.
Place batter in a greased and floured 13x9 sheet cake pan and bake at 350 degrees F for 30 minutes. After 30 minutes, reduce heat to 325 degrees and continue baking until a toothpick comes out clean. (Takes mine about 40-45 minutes total).
Mama’s Stovetop Fudge Icing
3 CUPS SUGAR
1 STICK SALTED BUTTER
3 HEAPING TBSP. COCOA
1/4 CUP PEANUT BUTTER
1 CUP EVAPORATED MILK
1 TSP. VANILLA EXTRACT
1.5 CUPS PARCHED PEANUTS (OR PECANS)
Combine sugar & cocoa, mix well, set aside. Melt butter on medium/low heat in a medium saucepan. Add sugar/cocoa mixture & milk, mix well. Keep on low heat until mixture simmers.
Careful with Sugar Granules: Wash utensils to prevent transfer of sugar crystals into fudge.
Boiling Fudge: Bring to a slow simmer (until it looks as if most of the sugar has melted). Cover & turn up to high heat. Set a timer for 3 minutes. Check with a candy thermometer. Cook to a soft ball stage, around 240 degrees.
Beating Fudge: Pour candy into mixing bowl. Do not scrape sides of saucepan (to reduce chance of sugar crystals getting into mix), mix on high, add vanilla. Beat until frosting starts to thicken, then add nuts and turn the mixer off.

HOMEMADE VANILLA ICE CREAM
3 TBSP. CORNSTARCH (NOT LEVELED)
6 C. WHOLE MILK (VERY COLD)
2 2/3 C. SUGAR
4 LG. OR 5 SM. EGGS
3/4 TSP. SALT
1 CAN (13 OZ.) EVAPORATED MILK
1 PT. WHIPPING CREAM (VERY COLD)
3 1/2 TBSP. VANILLA CRUSHED ICE AND LOTS OF ICE CREAM SALT
Put milk in freezer one hour prior to mixing. In a batter bowl whisk together the sugar, cornstarch, and salt. Whisk well. In a separate bowl beat eggs. Add eggs and evaporated milk to batter bowl with sugar -whisk very well. Microwave on high 3 minutes. Take out and whisk well. (Can use a hand mixer if needed). Continue to cook on high for 2 minute intervals -whisking well between cooks- until it is thick and pudding like in texture. Add milk, whipping cream and vanilla. Fill ice cream freezer container 2/3 full. Freeze per ice cream freezer manufacturer instructions. Enjoy y’all!
Ice cream should be creamy and soft serve texture.
Important: milk and whipping cream must be very cold in order to cool the hot pudding down. Make sure and put them in the freezer prior to adding to ice cream.

2/3 CUP APPLE CIDER VINEGAR
1/2 CUP DARK CANE SYRUP (OR MOLASSES)
1 TSP COARSE BLACK PEPPER

1/2 TSP ROASTED GARLIC POWDER
1 TSP YELLOW MUSTARD
1 CUP TOMATO SAUCE
1 TSP SALT
1 TSP ONION POWDER
1 CUP WATER

Easy No-Rise Cheese Bread, Cheesy Cheddar Biscuits

Cheesy Cheddar Biscuits
2 CUPS SELF-RISING FLOUR
1/2 STICK BUTTER (FROZEN AND GRATED) OR
ROOM TEMPERATURE BUTTER
1 1/2 CUP CHEDDAR CHEESE (GRATED)
1 TSP. GARLIC POWDER (OPTIONAL)
1 TBSP. LITE HOUSE FREEZE DRIED (SALAD BLEND)
1 TSP. ONION POWDER
ABOUT A CUP OF WHIPPING CREAM (OR WHOLE BUTTERMILK)
Put flour in a batter bowl. Add butter and toss
well (or blend in with blending fork if butter is
room temperature). Toss cheese into mix, and add
herbs and onion powder. Add whipping cream
until batter is good and sticky and there is no
flour left on the bottom of the bowl.
Drop out on a greased baking pan (or parchment)
and
bake at 450 degrees F for 20 minutes. Enjoy
