Crispy Potato Sticks
Recipe in English:
Ingredients:
-Aloo (Potatoes) boiled cubes ½ kg
-Chawal ka atta (Rice flour) ½ Cup
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Namak (Salt) ½ tbs or to taste
-Lal mirch (Red chilli) crushed ½ tsp
-Chaat masala ½ tsp
-Cornflour 3 tbs
-Adrak paste (Ginger paste) ½ tbs
-Hara dhania (Fresh coriander) chopped handful
-Cooking oil for frying
Directions:
-In a bowl,add potatoes & mash well with the help of the masher.
-Add rice flour,black pepper powder,cumin seeds,salt,red chilli crushed,chaat masala,cornflour, ginger paste & mix well.
-Add fresh coriander,mix well & let it rest for 15 minutes.
-Grease hands with cooking oil,take a small quantity of mixture & make a ball.
-Place on clean working surface (greased with cooking oil) & roll into finger shape with the help of palm and cut from the center.
-In a wok,heat cooking oil and fry potato fingers on medium flame until golden.
-Serve with sauce or tomato ketchup.

-Add chicken boneless,chicken powder,whole spice powder,salt,cumin seeds,white pepper powder,soy sauce,black pepper powder,garlic paste,green chilies,coriander,mint leaves,mix well to combine and refrigerate for 20 minutes.
-Take mixture,make 12 patty/kabab,add mozzarella cheese and make patty/kabab again.
-Dip in beaten egg and coat in breadcrumbs.

-In a bowl,add milk,lemon juice and mix well,cover and let it rest for 10 minutes.Butter milk is ready!

-Add chicken and coat well,cover and marinate for 4 hours in refrigerator.

-In a wok,add milk,bring it to boil & cook for 2-3 minutes until milk thickens.
-In frying pan,add clarified butter & let it melt.

-Add fried nuts (reserve for later use),sugar,cardamom pods,mix well and cook on medium flame for 4-5 minutes & keep mixing in between.

-Doodh (Milk) 1 & ½ Litre
-Sugar ¾ Cup or to taste

-Doodh (Milk) ½ Cup
-Ice cubes as required
-Cream chilled 2 Cups
-Mango cubes 1 Cup
-Apple cubes 1 Cup
-Banana sliced 1 Cup
-Mixed fruit cocktail 1 & ½ Cup
-Kishmish (Raisins) 1 tbs
-Pista (Pistachios) sliced 1 tbs
-Badam (Almonds) sliced 1 tbs
Assembling:
-Plain cake as required
-Red jelly & Green jelly Cubes
-Badam & Pista (Almonds & Pistachios) sliced
-Chum chum optional
Directions:
-In a pot,add water & bring it to boil.
-Add vermicelli,mix well & cook for 4-5 minutes then strain & rinse with tap water & set aside.
-In a pot,add milk & bring it to boil.
-Add sugar,mix well and cook on low flame until sugar is dissolved (2-3 minutes).
-In a bowl,add custard powder,milk & whisk well.
-Now add dissolved custard in boiling milk,mix well & cook on low flame until custard thickens (4-5 minutes) & let it rest for 8-10 minutes.
-In a large bowl,add ice cubes & place another bowl over it,add prepared custard & beat well until custard is chilled & smooth (6-8 minutes).
-Add cream & beat well until smooth.
-Add boiled vermicelli,mango,apple and banana.
-On a separate bowl,place strainer & strain mixed fruit cocktail & reserve syrup for later use.
-In a custard bowl,add mixed fruit cocktail,raisins,pistachios,almonds & mix well.
Assembling:
-In a trifle bowl,add two layers of plain cake & pour reserved cocktail syrup.

Directions:
-In bowl,add water,salt,vinegar,white pepper powder,ginger garlic paste,green chili paste and mix well.
-Prick chicken drumsticks with fork.
-Now add drumsticks in marinaton,cover and let it marinate for 6-8 hours in refrigerator.
-In bow,add eggs,salt and milk,mix well & set aside.
-In bowl,add all-purpose flour,red chili powder,white pepper powder,black pepper powder,garlic powder,salt,corn flour and rice flour and mix well.
-Now coat chicken drumsticks in all-purpose flour mixture then dip into beaten eggs and again coat in all-purpose flour mixture.
-In a wok,heat oil and fry drumsticks on medium low flame for 6-8 minutes or until golden brown.

-Sugar 1 Cup
-Eggs 4 large or 5 small
-Flour 2 Cups
-Salt ½ tsp
-Baking powder 1 tsp

Directions:
-In an electric mixer, add butter and mix for 1-2 mins.
-During mixing on medium speed, gradually add sugar and mix for 7-8 mins.
-Add eggs one at a time, beating well after each addition, mix for 2-3 mins.
-In flour,add salt and baking powder,mix well.
-Gradually add flour mixture in butter mixture and mix for 1-2 mins,beating just until combined (do not over mix).
-Add vanilla extract and mix for 30 secs.
-Grease loaf pan with butter and sprinkle plain flour.
-Scrape the batter into the prepared pan and smooth the top with an offset spatula or the back of a spoon.
-Tap the pan against your countertop (tap-tap-tap-tap) to scare away any last few little air bubbles trapped within.
-Bake in pre heated oven at 170 C for 40-45 mins.
-Toothpick inserted in center should come out clean.
-Remove the cake from oven, place on a wire rack to cool for about 10 minutes. Remove the cake from the pan and cool completely on a wire rack.
-Cut into slices.
-For sandwich cakes, grease sandwich maker, pour batter and give it 4-5 min.

Prepare King Kulfa Mix:
-In chopper,add bread slices and chop well.
-In frying pan,add bread crumbs and dry roast on low flame until golden brown (8-10 minutes) & let it cool.
-In spice mixer,add green cardamom,dried rose petals,grind well & take out in a bowl.
-In spice mixer,add pistachios,grind well & take out in the same bowl.
-In spice mixer,add almonds,grind well & take out in the same bowl.
-In spice mixer,add sugar,grind to make powder & take out in the same bowl.
-In a bowl,add dried milk powder,breadcrumbs,pistachios,almonds and mix until well combined.King kulfa mix is ready! (Yields: 6 Cups approx.850g)
-Can be stored in an airtight glass container for up to 1 month.

Directions:
Prepare Pulao Masala:
-In a spice mixer,add coriander seeds,fennel seeds,cumin seeds,black peppercorns,mace,nutmeg, cloves,green cardamom,star anise,cinnamon sticks,black cardamom,bay leaves & grind well.Pulao masala is ready!
-In a pot,add mutton,ginger garlic paste,salt,water,mix well & bring it to boil then remove scum.
-Add pulao masala (1 tbs) & mix well,cover & cook on low flame until meat is tender (approx. 40-45 minutes) & set aside.
-In a pot,add clarified butter & let it melt.
-Add cloves,star anise,cumin seeds,coriander seeds & mix well.
-Add onion,mix well and fry until light golden.
-On low flame,add yogurt,green chilli paste,ginger garlic paste,mix well & cook for 1-2 minutes.
-Add remaining pulao masala & mix well.
-Add boiled mutton along with its stock,bring it to boil & let stock reduce to 2 & ½ Cups.
-Add rice & mix well.
-Add salt,lemon juice & mix well then cook on high flame until water is reduced (3-4 minutes).
-Add green chillies,fried onion,cover with kitchen cloth & lid then simmer cook on low flame for 10-12 minutes.
-Garnish with fried onion & serve!

-Pot mein ghee dal ker melt karein.
-Laung,badiyan ka phool,zeera aur sabut dhania dal ker ache tarhan mix karein.
-Pyaz dal ker ache tarhan mix karein aur light golden ho janay tak fry ker lein.
-Halki ancch per dahi,hari mirch paste aur adrak lehsan paste dal ker ache tarhan mix karei aur 1-2 minutes kliya paka lein.
-Remaining pulao masala dal ker ache tarhan mix karein.
-Boiled mutton yakhni ka saath dal ker ubal anay dein aur yakhni 2 & ½ Cups reh janay tak paka lein.
-Chawal dal ker ache tarhan mix karein.
-Namak aur lemon juice dal ker mix karein aur tez ancch per pani kum ho janay tak paka lein (3-4 minutes).
-Hari mirch aur fried pyaz dal ker kitchen cloth & lid sa cover ker lein aur halki ancch per 10-12 minutes kliya steam cook ker lein.
