Delicious Lenten Cabbage Rice Red with Vegetables from Greek cuisine!!!
Cabbage rice, a traditional Greek dish, combines the hearty flavors of cabbage and rice roasted or with lemon zest, creating a comforting and nutritious meal. This dish is a staple of Greek cuisine, often enjoyed as a warm, family meal that combines the simplicity of vegetables and the hearty presence of rice. Preparation involves sauteing onions, carrots and celery, followed by the addition of chopped cabbage and rice, which are then simmered until tender. A generous squeeze of lemon juice and a sprinkling of fresh herbs such as dill and parsley are added towards the end, imbuing the dish with a bright citrus aroma. It's a versatile recipe that can be adapted to include other vegetables or even meat, but its essence lies in its lemony, olive-rich flavor that's both hearty and light. We'll make it roasted. If you want it lemony, you just don't add tomato paste.
The materials we will use are:
Olive oil.
3 Onions.
3 Garlic.
2 Carrots.
1 Cabbage.
2 spoons of tomato paste.
2 ½ Cups of rice.
1 Cube of vegetables.
Red wine.
Parsley, salt, pepper.
Over here we see the preparation we have made for the ingredients we will saute. Then we will grate our carrots, and we will cut the cabbage into slices.
And when we are ready with the ingredients we will sauté, we will put our pot on the fire and add olive oil until it burns.
We will saute the garlic and onions. Then I will add the chopped carrots and the two spoons of tomato paste so that it becomes sweeter during the sauteing. Then we will saute a part of the vegetables. Then we will extinguish our food with red wine, wait for the alcohol to evaporate and add the rest of the cabbage. We will pay water, add the cube of vegetables and let our food boil for 45 minutes on low heat, or until our vegetables are soft. After 45 minutes and when our cabbage is now soft, we will add 2.5 cups of rice, add water and let our rice boil for 15 to 20 minutes. After 20 minutes we will add salt and pepper, we will add the celery, we will turn off the heat and when the boiling stops we will add extra olive oil, and we are ready. bon appetit!!!

The cod, usually salted and filleted, is baked in the oven with potato slices, onions, tomatoes, and aromatics such as garlic and parsley, creating a dish that satisfies every palate. Some recipes suggest adding lemon for a slight acidity that brings out the flavors, while others include adding wine for a richer aroma. Greek cuisine. Fried red snapper (Pagellus erythrinus)!!! 20/5/2023.
Greek cuisine is rich in traditional recipes that reflect the diversity and rich taste of the Mediterranean diet. One of the most favorite dishes is fried red snapper, a type of fish that frequents the clear waters of the Mediterranean. The recipe calls for scallops cleaned of scales and entrails, which are then seasoned with salt and pepper, floured and fried over high heat until golden. The dish is usually served with fresh lemon and traditional Greek salads, offering a true taste experience of the Greek sea.
Hello my friends Welcome to another video. Today we will fry lithrini, but let's see how to clean. At first we will remove the scales with a knife holding the fish from the head in our hand, and we start with our small knife to scrape it to remove the scales. Then we will open the abdomen, remove the svarachna, and rinse it with plenty of water.
Lythrini is a very tasty and tasty meze for all gourmets, it is eaten fried or grilled all over Greece.
When we finish cleaning the fish we can store them in the freezer or cook them, we will fry them for this, salt them and put them in the fridge for 20 minutes to let the salt catch.
A very tasty with high nutritional value, it is cooked fried or grilled. We bought 1.5 kilos from our neighborhood fishmonger for 5 euros.
Lythrin is a basic source of protein and is high in B vitamins and iron. It lives near the bottom, in open water on rocky or sandy bottoms. We find it at a depth of 30 to 250 meters. It is found throughout the Mediterranean Sea, on the northern and southeastern coasts of the Atlantic Ocean, but also in the western Atlantic.
It's time to flour our fish, put some flour on a plate and carefully flour them all one by one.
We put our pan on the fire and add a little oil and wait for it to burn. when the oil burns we place the fish in our pan and wait a while until they are fried on one side.
When they are fried, i.e. they turn a little brown with a fork, we will turn them over so they can be fried on the other side as well.
When they are golden brown with a fork, we will turn them over to fry on the other side as well
When they are fried, everything is ready. To taste them, if we want, we can accompany with a little lemon, and a glass of ouzo, bon appetit.

Greek cuisine. Salads with wild mountain greens!!!
Hello my friends and welcome to another video. Today we will cook a nice boiled salad of wild mountain greens.
Wild mountain greens, also known as dandelion or dandelion, is a perennial herb with unlimited healing properties. They are rich in vitamins, iron, potassium, fiber, and other nutrients.
But at this point we are going to collect natas and see the process from cleaning and cooking them.
Wild mountain greens have a bitter taste compared to tame ones. They are rich in vitamin A and C, iron, potassium, manganese. Their abundance of B-carotene shields the body and prevents the growth of free radicals, helping to protect against cardiovascular diseases. In addition, wild mountain root, also known as dandelion or dandelion, is a perennial herb with unlimited healing properties. It is used to purify the blood, it is diuretic, relaxing and prevents the formation of nephrolithiasis. In Greek gastronomy, mountain greens are used as a salad, while their roots are roasted, ground and used as a substitute for coffee. Also, the extract from the roots of the mountain greens, known as inulin, is used in food preparation as a sweetener and source of dietary fiber. Overall, the radish is a plant rich in nutrients and has multiple uses in nutrition and health. In Greece, we find it everywhere, in mountains and meadows, and it is known as mountain root.
Then we will clean the radishes by removing the root, soil, and any dry leaves. We will wash the mountain greens in a mug to remove all the dirt, we will change 3 waters at least until the water we throw away comes out clean.
We will put our greens in a large pot to boil for half an hour and then strain them to remove the bitterness. If we like bitter greens, we do not strain them at all and add plenty of salt. We will let our greens boil for an hour to an hour and a half where we will watch our greens slowly digest until they are boiled and ready. They are served in a shallow dish if we want them dry, and in a deep one if we want them juicy with plenty of olive oil and lemon. Bon appetit!!!
