Delicious Bar-B-Q Chicken with Minimal Effort: No-fuss Oven Baking!
A simple way to make Bar-B-Q Chicken that is absolutely delicious. Any left overs make scrumptious sandwiches. Since the oven would be in use anyway we also baked some plain chicken along with the bar-b-q chicken. It's always so convenient to have cooked chicken and chicken broth on hand for quick meals.
Instructions for Easy Bar-B-Qued Chicken
Place chicken into a baking pan.
Cover completely with diluted bar-b-que sauce
Cover tightly with heavy duty tinfoil
Bake on 350 for 2 1/2 - 3 hours
Remove from the baking dish and serve.

Quick & Easy Recipe, Scrumptious Chicken Stir-Fry with Veggies over Rice
An easy dish to prepare - scrumptious chicken stir-fry with veggies (chef's choice) over a bed of rice. Our Veggie Chopper was very helpful in preparing the veggies. Here is a Veggie Chopper amazon link - https://amzn.to/3UxAwNj The sauce is made of chicken broth, soy sauce and ginger thickened with corn starch. When using an electric skillet always plug in the gadget into the skillet before plugging the cord into the outlet.
CHICKEN STIR FRY
3 lbs. boneless chicken breasts - cut in bite sized pieces and marinated in soy sauce for about 2 hours
2 TBLS olive oil
Pour oil in hot skillet
Cook chicken for 3-4 minutes, stirring occasionally
Add chopped veggies of your choice
Some veggies take a little more cooking time so add those first
We used the following -
1 cup onion
2 bell peppers
2 cups carrots
1 cup fresh broccoli
16 oz frozen peas
Add salt & pepper if desired
Cook until done, stirring occasionally
(we added the peas last so they would be just a wee bit crunchy yet)
Mix together well:
3 cup chicken broth
2 TBLS soy sauce
1 tsp ginger
7 TBLS corn starch
Pour into skillet with chicken and veggies
Cook until thickened
Remove from heat and serve over a bed of rice

Ultimate Homemade Oatmeal Breakfast Bars: Easy Recipe with Sugar-free Option!
Easy and nutritious breakfast bars with ingredients of your choice - perfect for a grab and go breakfast or snack. Let us know in the comments what your choice of ingredients would be. These are good warm, room temperature or cold and are healthier than most of the bars you find in stores. These can be mixed up the evening before and placed in the refrigerator. The next morning just add the ingredients of your choice and pop in the oven for a nutritious and warm breakfast.
I did some substitutions making it a sugar free version. I'll include the original recipe and note what I used for a healthier sugar free version.
OATMEAL BREAKFAST BARS
Dry Ingredients -
2 cup old-fashioned rolled oats
1/3 cup brown sugar (packed)
1 TBLS white sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
Wet Ingredients -
1 cup milk
2 large eggs
2 TBLS canola oil
1 tsp vanilla
Mix the dry ingredients in a bowl and set aside
Whisk the eggs and add the rest of the wet ingredients
Stir in the dry ingredients and mix well.
Let this set for at least 20 minutes.
Preheat the oven to 350.
Add other ingredients of your choice to the mixture
examples: nuts, coconut, chocolate chips, dried fruit
(My choice was 1/2 cup chocolate chips 1/3 cup coconut and 1/4 cup chopped pecans)
Bake for about 30 minutes.
SUBSTITUTIONS FOR A SUGAR FREE VERSION
Replace the brown sugar and the white sugar with -
1/3 cup Gentle Sweet and 1 tsp blackstrap molasses
Use sugar free chocolate chips and unsweetened coconut
Other things I did -
I used olive oil rather than canola oil
My choice of milk was almond milk
I added a little more ground cinnamon

CHEESY HAM CHOWDER
Measurements I used -
1/2 stick butter - melt and add
4 cup chicken broth - bring to a boil
Add:
3 cup diced potatoes
1 cup diced celery
2 cups diced carrots
1 cup chopped onion
Cook until vegetables are tender
Add:
1 tsp salt
2 cup milk
2 cup chopped ham
2 cup shredded cheddar cheese
Heat until hot and cheese is melted but do not boil.

TACO DIP
2 lb hamburger
1 can (10.5 oz) cream of mushroom soup
1 can (10.5 oz) tomato soup
1/2 onion, chopped
1/4 green pepper, chopped
1/2 tsp chili powder
1/2 package dry taco seasoning
1 lb velveeta cheese
Tostito Chips
Fry hamburger, onion and green pepper together.
Add the soups, seasonings and cheese.
Mix well.
Bake on 350 for about an hour
Stir about 30 minutes into the bake time.
Taco Dip is done when everything is hot and cheese has melted.
Serve with Tostito Chips
Note: This is great to have in a crockpot as well.
