Asian Steak Marinade for Grilling [ Secret Recipe from Holy Grail BBQ ]
In this video, I'm going to show you how to make an Asian Steak Marinade for grilling. As an added bonus, at the end of this video, I'm going to show you how to plate a fantastic, quick and easy steak dinner that is going to make you lord of the barbecue pit...once again.
The recipe starts with a base of 3/4 cup soy sauce (https://amzn.to/3hU0swj). Added to this will be both oil and acidic ingredients. For the acids, I'm using Rice Wine Vinegar and Mirin. Use 2 to 3 tablespoons of each. For the oils, use 2 to 3 tablespoons of both Sesame Seed Oil and Olive Oil.
To these wet ingredients, we are going to add a good tablespoon of mashed garlic. Separate a green onion into the white and green portions. Thinly slice the white portions, and slice the green portions on a bias to save for later in the recipe. Finally, add some grated ginger to round out the flavor profile.
We are using skirt steak for this recipe. Skirt steak is an amazing cut of beef that is truly under appreciated. Let the steak soak in the marinade for about 30 minutes to an hour. You don't need any more than that.
Grill it on a very hot grill, but keep an eye on it. You will only have to cook it for about 2 or 3 minutes per side. If the thinner part starts cooking too fast, flip it on top of the thicker part to protect it. You can also separate the steak into smaller pieces to handle the thinner and thicker pieces differently on the grill.
I took the used marinade and simmered it for about 15 minutes in a pot on the stove. Do not use the used marinade if you are not going to cook it on the stove for a long period of time. It needs the heat to kill the pathogens in the marinade.
Reduce the marinade by well over half. It is going to concentrate and make an amazing sauce for you rice bowl. Yes....cook some rice at the same time as the sauce.

Best Grilled Steak Dinner Recipe [Complete Guide from Holy Grail BBQ]
This grilled steak dinner recipe is one of the best you'll find for under 30 minutes of actual prep time. Starting with the info from my How To Cook Steak on a Grill video, I added that to the info from my video about the Best Sauce for Steaks, and the result was a complete steak dinner for you to make.
I used beef tenderloin (USDA Choice grade). Using my perfect steak recipe, I first started with a dry salt cure. This is done by adding liberal amounts of Kosher Salt to both sides of the steak. (https://amzn.to/2ZcMM9b) After about 30 minutes, I rinse the excess salt of the steaks and pat them dry with a paper towel. Then, I apply a light layer of oil to the steaks, followed by pepper. No more salt at this point as they already have enough.
On one of the petite tenderloins, I gave it ample amounts of crushed tri-colored pepper corns. You can put them in a bag and crush them with a spoon or frying pan if you don't have a mortar and pestle.
The steak will start on the "cool" side of a two-zone fire. This means that the coals are placed on one side of the grill. This side will be the "hot" side, and the side without coals will be the cool side. Let the steak come up to 105 or 110 degrees on the cool side, then transfer it to a scorching hot pan on the hot side. You will only need to leave the steak there a minute or two on each side. No more than that.
For the side items we are doing mashed sweet potatoes and asparagus. Boild the sweet potatoes for about 15 minutes in salted water. The potatoes should be in about 1/2 inch cubes. Once boiled, drain and add to a bowl. Add 1 tablespoon of sour cream, and 1 tablespoon of butter. Mix, and add salt and pepper to taste.
For the asparagus, lightly coat with olive oil, salt and pepper. Then grill on high heat for about 5 minutes. Turn as necessary, but allow the veggies to get a slight char. Move to indirect heat if you need to continue the cooking.
Finally, plate everything using the techniques I demonstrated in Episode 2 of the steak series. The final topping for the steak is a Chive Butter topping. In episode 2 I showed you how to make a parsley butter topping. This is a twist on that that uses chives.

I’m using the Green Mountain Grills Daniel Boone model for this cook. I’m going to smoke it low and slow overnight at 195 degrees. This low temperature on the pellet smoke is perfect for a really deep and flavorful bark.

I did something a little different tonight. Instead of going straight to my Holy Grail BBQ dry rub, I started with a brine. This brine had some jerk spices in it that are really going to give it a nice flair. I only brined it for a few hours. Pork Shoulders tend to start tasting like ham if you brine them for too long. I wanted it to keep that natural flavor. I’ve injected some of that jerk seasoning into shoulder as well.
After smoking overnight at 195 degrees, I checked the temperature at about 7am. It was right in the stall (probably just ready to break the stall). This is a perfect time to wrap the shoulder in butcher paper. This will retain moisture, preserve and darken the bark, and allow the fat to render inside the meat.

Once the shoulder hit 200 degrees, I pulled it off the smoker and left it in the butcher paper. I added a layer of aluminum foil, then added it to a cooler that I lined with old towels. To be honest, I had to leave it in the cooler for about 5 hours until the guests arrived. It measure 150 degrees after five hours in the cooler. Not Bad!!!!
The authentic guacamole is super easy to make. You will need avocados, onion, cilantro, garlic, and tomato. Dice the tomato, mince the cilantro, and grate the garlic. Add this to diced avocado and diced onion. Mash it with a potato masher, then stir in some lime zest and juice. The juice helps prevent the avocado from browning / oxidizing. Salt and pepper to taste.
The roasted salsa is super easy too. Roast poblano peppers and tomatillos until they are nice and charred. Then peel the skin and dice. I also roasted garlic in a ceramic garlic roaster, but you can use aluminum foil made into a pouch. Once roasted, you can just squeeze the garlic out of its skin and add it to the other roasted veggies. Mix in some diced onion, and add salt and pepper to taste. Perfect!

How to Cook Steak on a Grill [Professional Secrets]
I'm going to show you 3 tips that will show you how to cook steak on a grill. These are pit-master secrets on how to grill a steak. If you follow these three steps, your grilled steaks will come out juicy, perfectly cooked, and giving you true bragging rights as the Pit-Master that truly knows how to cook a steak. A grill god will be born!
Step number one: Choosing the right steak. The key is to get prime or moderately marbled choice steaks. If you go with modest or small marbling in choice steaks, or even select steaks, you run the risk of a dry, overcooked steak. Prime or high end choice is the key.
Step number two: Dry curing with salt. This is super easy. Just liberally coat the steaks, on both sides, with salt. Then let them sit on the counter for 30 minutes. That's it. Nothing more to do. You can cook or prep other sides, etc, while you wait. It's actually a perfect time to light your BBQ pit and get it up to a stable temp.
It's know that grill masters know how to cook a steak on a grill. But the grill masters often don't have a way to share their information. Or they simply want to keep the info to themselves to win contests. Keep watching to find out more.
Step number three: The reverse sear. This is a must and the ultimate game changer. You start the steaks, that have been rinsed and coated with a thin layer of avocado oil, on the cool part of the grill. The cooler the better. We want these steaks to slowly climb to a 105 degree internal temperature. Once they get there, move them to the hot part of the grill and sear the outside until the internal temp is 130 degrees. Immediately, pull them off the grill and let them rest for at least 5 minutes. The temp will rise to about 135...perfect medium rare.
