Just days ago, two teenagers were seriously injured subway surfing in Brooklyn. For one of them, it was fatal. Cheeseburgerballs! While I am trying to minimize dairy to keep my belly small, I’ve been good enough to allow myself a big treat. This is the closest I get to a cheat meal, and more than enough to keep me satisfied! If you can handle the cheese, these are keto and carnivore friendly: 100% ground beef, cheddar, and sea salt ― no bread crumbs or other ingredients. This meatball version of the Juicy Lucy cheese-stuffed hamburger came to me in a spontaneous vision. Sometimes I can’t help daydreaming about that inimitably rich combination of ground beef and cheddar. And this carnivore-friendly idea was new to me, so I had to try it! I cooked these in the air fryer for 20 minutes at 375°F / 190°C. The beef was unsalted; I added sea salt during my meal. Apologies for the video quality. I was trying a new camera.
