This vegan oatmeal cookies recipe is easy to make.
This is very delicious especially when you want to have a quick bite before
you rush to work or school. You can make this ahead and keep in the fridge for a week or so with proper storage.
I love making this because it gives me time in the morning to work on my videos without any interruptions of prepping for breakfast.
Me and my husband could just grab this cookie from the fridge and have a delightful breakfast.
Also, this is very helpful for me whenever our daughter is awake, I can eat while I breastfeed her or whenever I am carrying her.

Vegan Carrot Cupcake | Vegan Cream Cheese Frosting | Vegan Carrot cake Recipe | Vegan Desserts
A moist, flavorful, cake with toasted walnuts, shredded carrots,
This cake is topped with a vegan cream cheese frosting.
For the vegan cream cheese you may use tofutti brand and vegan butter- earth balance.
Vegan Cream cheese frosting
Ingredients:
4 oz. vegan cream cheese (tofutii)
2 tbsp. vegan butter (earth balance)
1/2 tbsp vanilla extract
3 cups powdered sugar
Directions:
In a large mixing bowl, use and electric mixer to cream together vegan
cream cheese and vegan butter.
Next,the powdered sugar and add vanilla extract.
You may add 1-2 tbsp. of non-dairy milk to adjust thickness.
Keep mixing until smooth.
Let it cool inside the fridge.
Vegan Carrot Cupcakes
Ingredients:
1 1/4 cup flour
1/2 cup raw sugar
2/3 cup brown sugar
1 tsp. cinnamon powder
3/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
3/4 cup vegetable oil
1 1/2 tsp. vanilla extract
2 tbsp. non dairy milk
2 cups grated carrots
1/4 cup toasted walnuts/ pecans, finely chopped.
Directions:
Preheat the oven to 350 F or 180 C and line a
cupcake tin with paper liners.
In a large bow, whisk together flour, raw sugar, brown sugar,
cinnamon, baking soda, baking powder and salt.
Pour in the vegetable oil and non dairy milk and mix.
Add the grated carrots and toasted walnuts/pecans and mix until well-combined.
Scoop the mixture into the cupcake liners.
Bake for 20 mins.
Let it completely cool before adding the frosting on top.
Top with nutmeg.

4 ways to cook vegan scramble tofu . There are lots of ways to make tofu a great meal for the day. When we discovered we could replace eggs with firm tofu and make taste more delicious using different ingredients, we never craved eggs ever again.
In this video we showed different ways to make scramble tofu with some added fruits on the side which we usually eat for breakfast or any time of the day we prefer.
To make this video recipe we used two packs of firmed tofu divided into 4.
Plain tofu recipe

black pepper-1/2 tsp.
turmeric- 2 tsp.
nutritional yeast 2 tbsp.

Vegan Crepe Cake
An easy pastel crepe cake recipe ANYONE can make!!! This is a vegan crepe cake recipe with coconut whipped cream with fresh strawberries. It is soooo delicious.
Here's a written recipe for you :)
CREPE BATTER
2 cups all purpose flour
1 1/2 tablespoon cornstarch
4 tablespoon raw sugar
1 teaspoon salt
3 tablespoons neutral flavored oil, such as canola, melted refined coconut, or avocado oil
1 1/2 cup unsweetened soy milk
1 cup sparkling water OR regular water
For the vegan whipped cream
2 can chilled overnight coconut cream
1 cup powdered sugar
1 tsp vanilla extract
3 tbsp of water from can
In a large bowl, whisk together the flour, cornstarch, sugar and salt.
Now add the oil, non-dairy milk and sparkling water OR regular water
(sparkling water makes them even lighter, but is not necessary).
Whisk well until smooth and well combined.
The consistency of the batter should be a runny.
Add more liquid if necessary.
Pick the color you want. I used orange, rose pink, green and purple.
Heat a medium sized, non-stick pan to medium heat. Once hot, spread some oil on the pan.
Add about 1/3 cup of the batter to the pan. Immediately pick up the pan and rotate it to move the batter into a thin circle.
Cook until the top looks fairly dry, about 2 minutes. Using a spatula, carefully flip the crepe over and cook for 30 seconds on the other side. Remove from pan and repeat with the rest of the batter.
Place the cooked crepes inside the fridge to cool while whipping the coconut cream.
Take 2 cans of chilled coconut cream. The water should have set down at the bottom so avoid shaking the can. The solid should have risen on the top.
Take the solid part and place inside a chilled bowl and bet using an electric mixer. Beat it for about 3 minutes or so until fluffy.
Add the vanilla extract and powdered sugar.
Now, if the cream becomes too stiff. Take some of the coconut water and add a few tablespoons and whip. It will help make the cream become fluffy again.
If desired, you may use white whole wheat or whole wheat pastry flour instead of white flour. For gluten free, use a quality gluten free flour blend. I haven't tried this myself, but I think it would work quite well.
Tapioca starch may be used in place of cornstarch.
You can use another kind of non-dairy milk if desired, such as almond, coconut, cashew or oat milk.

Vegan Chocolate Cake (No Oven)
A super moist chocolate cake baked without an oven. It is an eggless and dairy-free chocolate cake recipe. It is quick and easy to make!
Ingredients
Cake
1 3/4 cup flour, sifted
3/4 cup, sifted
1 1/2 tsp baking powder
1 1/2 tsp baking soda
2 tbsp. ground flaxseeds
2 cups raw sugar
1/4 cup canola oil
1 cup non-dairy milk
1 1/3 cup boiling hot water
Glaze
3/4 cup cocoa powder, sifted
2 cups powdered sugar
2 tbsp. flour
1/2 cup non-dairy milk or water
1. Combine flour, cocoa powder, baking powder,
baking soda, ground flaxseeds and raw sugar in a
mixing bowl. Mix until well-combined.
2. Pour the canola oil, non-dairy milk and
hot water inside the bowl and mix until free of lumps.
Do not over mix the batter.
3. Line the cake pan with a parchment paper and
pour the batter inside. Cover with an aluminum
foil.
4. Turn on stove to low-heat. Use a pot
that will fit the cake pan inside. Place a
cooling rack or stainless steel cookie cutter
on the bottom of the pan as an elevator for the
cake pan.
5. Pour about 1/2 inch high of water inside the pot and
put the lid on for about 3 minutes and place
the cake pan inside. Add more water inside the pot when
needed as it may dry up .Bake for 1 hr. 15 minutes.
6. Make the chocolate glaze. In a mixing bowl mix the
cocoa powder, powdered sugar and flour. Pour the
non-dairy milk inside and mix until free of lumps.
You may also run through a strainer to remove lumps.
7. Pour the mixture inside a saucepan and heat under low-heat
until it thickens. Mix continuously to avoid sticking to the
sides and forming lumps. You may shine the glaze using a tablespoon
of vegan butter.
8. Remove the cake pan from the pot and let it cool for 15 minutes.
Unmold the cake and let it cool completely before pouring the glaze
on it. Divide the cake in half to cool faster (or if you made
half this recipe and made a thinner cake, leave it).
Add some glaze in the middle of the cake and place the top layer
back. Pour the rest of the glaze on top and let it slide down
to cover the whole cake. Top it with cocoa powder and dark chocolate
shavings.
9. Now, serve hot or cold!

Quorn Brilliant Burger | Plant Based Burger Recipe | Plant Based Recipes
I tried Quorn's Brilliant Burger!!! It taste great with the added flavors I put in. I made it simple and quick to make. Also, for the side dish I made some crispy air fried potatoes. What an amazing comfort food!!! I don't really recommend mock-meats for a healthy lifestyle but it is a healthier alternative. We do eat it sometimes as comfort food ( twice or thrice a month ). I do find it taste good, especially this one.
What I like about Quorn's brilliant burger is that it has less calories and that it is affordable than any other plant-based burger meat.
BUT TAKE NOTE!! This product has egg whites in it and milk powder. This is NOT 🚫 vegan-friendly burger alternative. If you are on a plant-based diet and fine with eggs and dairy this should be fine. Especially when you are starting to rid of animal meat in your diet, this will help you let go of animal meat.

Avocado Toast
IF YOU LOVE AVOCADOS THIS IS THE RECIPE FOR YOU!!! VERY VERY VERY DELICIOUS AVOCADO TOAST RECIPE!!! It is so easy to make and you can keep the mixture inside the fridge and use it when ready to snack on it or even eat during breakfast.
I toast the bread before serving. I love mine crunchy. The cilantro makes this recipe sooo good.
I love how simple ingredients can make a belly-filling delight!

Spaghetti with Vegan Tempeh Ragu
Tomatoes, red wine and lots of spices are simmered with vegetables and crumbled tempeh in a healthy vegan ragù that’s served over pasta and topped with crunchy panko breadcrumbs.

great texture and flavor to the vegan ragu. This vegan pasta sauce is amazing! I really recommend it.
Ingredients
200 grams dried spaghetti
For the Toasted Panko
1 tsp. olive oil
1/2 cup panko breadcrumbs
For the Tempeh Ragù
2 tbsp olive oil
2 celery stalks chopped small
2 carrots chopped small
1 medium onion chopped
5 garlic cloves minced
1/2 of 1 pk. tempeh
8-10 basil leaves
1 tsp. dried oregano
1 tsp. dried thyme
2 small bay leaves
1/2 tsp. paprika
1/4 tsp. black pepper
1 tsp. salt
1 can diced tomatoes (14 oz.)
1/3 cup tomato paste
1/2 cup dry red wine
1 cup water
1/2 cup unflavored soy or almond milk
3 tsp. raw sugar
chopped parsley for serving (optional)

Feeding My Dogs Veggies
I fed my dogs vegetables and fruits and they liked it! Meet Coco and Ragnar!. I've always thought that dog food is better for them but when I turned plant-based I thought to myself- If I'm eating healthy my pups should too! I tried feeding them vegetables and it looks like they're okay with it. But the bean! they loved it! So hopefully soon they will be satisfied with veggies, legumes and fruits too- like us!
We will be researching more about what healthy foods we can feed our dogs and share it with you. Maybe find great recipes of homemade dog food.
