RECIPE: Grits
INGREDIENTS:
4 cups water
1/4 teaspoon Kosher salt (or to taste)
1 cup grits
Butter to taste (optional)
INSTRUCTIONS:
1: Add the water and salt to a saucepan. Bring the water to a boil over medium-high heat.
2: Turn the heat to low. Slowly stir or whisk in the grits. Whisk to eliminate any lumps.
3: Reduce the heat to low. Cover the saucepan. Cook, until thickened, stirring occasionally (15 - 20 minutes).
4: Remove from the heat. Stir in butter if desired.
NOTES:
For thicker grits decrease the water. For thinner grits increase the water.
Grits are made from dried ground hominy (a form of corn).

RECIPE: Rice Cooker Italian Polenta:
INGREDIENTS:
1 cup cornmeal
1/4 cup Parmesan, grated
2 tablespoons chives, dried
2 teaspoons Italian seasoning
1/2 teaspoon Kosher salt (or to taste)
1/8 teaspoon (to taste) pepper, ground
3 cups water
1 teaspoon olive oil
INSTRUCTIONS:
1: Add the cornmeal, Parmesan, chives, Italian seasoning, salt and pepper to a rice cooker. Stir together.
2: Mix in the water and olive oil.
3: Set the cooking cycle on white rice.
4: After the cycle is complete wait 10 minutes before opening the rice cooker. This will allow the polenta to absorb all the water.
5: Stir and serve. If desired add salt and pepper to taste.
NOTES:
You can use 1/3 cup of fresh, chopped chives in place of dried chives.
You can double or triple this recipe if desired.
Reheat leftovers in a medium pan over medium low heat. Add a bit of water and stir until creamy and heated through.
This Rice Cooker Italian Polenta is a nice side dish for many meals. You can also serve it as a main dish.

RECIPE: Raisin and Almond Rice Pilaf
INGREDIENTS:
1 tablespoon butter (or to taste)
1/3 cup almonds, sliced or slivered
1 cup onion, diced small
1 cup brown rice, long grain
1/3 cup raisins
2 cups water
2 teaspoons chicken broth/seasoning, dry
Kosher salt (to taste)
Pepper, ground (to taste)
INSTRUCTIONS:
1: Melt butter over low heat in a saucepan. Add almonds and cook until they are golden brown. Stir frequently.
2: Remove the almonds and place them on a paper towel to drain. Set them aside.
3: Add the onion to the saucepan. Cook over medium-low heat until the onion is soft. Stir frequently.
4: Add the rice and raisins. Sauté for 2 - 3 minutes, stirring almost constantly.
5: Stir in the water and chicken seasoning.
6: Bring to a boil. Cover the pan. Reduce the heat to low. Cook until the rice is tender and the water is absorbed (about 35 - 45 minutes). If the water is gone but the rice is not tender, add a bit more water. Cook until desired tenderness.
7: Add salt and pepper to taste.
8: Stir in almonds and serve.
NOTES:
If you use white rice, cook 20 - 25 minutes or until all the liquid is absorbed.
I use vegan chicken broth/seasoning. You can also use 2 cups of liquid chicken broth in place of the seasoning and water.
Double this recipe if desired.

RECIPE: Peanut Butter
INGREDIENTS:
5 cups peanuts, raw or roasted
2-3 tablespoons vegetable or grapeseed oil
1 teaspoon Kosher salt, to taste
INSTRUCTIONS:
1: Add oil to blender or food processor.
2: Add 2 cups of peanuts.
3: Blend until smooth. Start on low and then
increase the speed to high.
4: Slowly add remaining peanuts and blend until desired
consistency.
5: Add 1 teaspoon of salt and blend thoroughly.
6: Add more salt as desired a little at a time.
7: Refrigerate in airtight container.
NOTES:
When using a Vita-mixer, use tamper through lid opening and push the peanuts down towards the blades.
If needed stop the food processor or blender to scrape the sides down with a spatula. Then return to blending.
If using salted peanuts, reduce the salt to taste.

RECIPE: Rice Cooker Coconut Rice
INGREDIENTS:
2 cups brown jasmine rice
13.5 ounce can unsweetened coconut milk
1½ cups water
1 teaspoon Kosher salt
1 - 2 tablespoons coconut sugar or other granulated sugar
2 tablespoons shredded coconut, unsweetened
2 tablespoons toasted coconut flakes (if desired for a garnish)
INSTRUCTIONS:
1: Stir together all the ingredients in a rice cooker.
2: Select the setting for brown rice (if you have one) and cook.
3: When the cycle is done, let the rice rest about 10 minutes before opening the rice cooker.
4: After the rice has rested, open the lid and fluff the rice with a fork or rice cooker spoon.
5: Garnish the rice with more shredded coconut or large toasted flakes of coconut if desired. Serve.
NOTES:
You can use white rice in place of brown rice if you would like. Select the setting for white rice if you have one.
If the coconut milk is clumpy, turn the rice cooker on and stir the ingredients until the clumps are gone. Then cook the rice as instructed.
A wooded spoons works well to stir the ingredients.

RECIPE: Rice Cooker Barley
INGREDIENTS:
4 cups water
4 teaspoons chicken broth/seasoning (vegan or regular)
1 cup barley, hulled or pearled
1 1/2 cups onion, diced
1 cup bell peppers, chopped (red or any color)
2 teaspoons paprika
2 teaspoons cumin
2 teaspoons chili powder
INSTRUCTIONS:
1: Stir together all ingredients in a rice cooker.
2: Cook on brown rice setting. After the cycle is finished, let the barley set for 15 minutes. Barley should be tender when done. If not cook a little longer.
NOTES:
Instead of the water and chicken seasoning you can you 2 cups of liquid chicken broth.
You can double or triple this recipe.

RECIPE: Apple Oatmeal Muffins
INGREDIENTS:
1 medium apple, chopped or shredded
1½ cups rolled oats
¼ cup vegetable oil
1 - 2 eggs (optional)
½ teaspoon Kosher salt
½ cup raisins, chopped dates, or dried cranberries
⅓ cup nuts, chopped
½ - 1 teaspoon cinnamon
Cooking spray
INSTRUCTIONS:
1: Preheat oven to 375°.
2: Spray muffin pans with cooking spray.
3: Wash the apples. Quarter and cut out the core.
4: Chop apples on low speed in the blender or by hand.
5: Combine ingredients in a bowl. Let stand for a few minutes so the mixture can absorb the moisture.
6: Mix mixture together firmly with fingers or a fork.
7: Spoon mixture into muffin pans. Fill and round nicely.
8: Bake for 25 minutes or until muffins start to brown.
NOTES:
The eggs help the ingredients stick together. You can leave the eggs out and these muffins will still be delicious!
If the raisins are extra dry, soak them in cold water for at least 10 minutes. Then drain the water and add them to the recipe as instructed.
You can add more or less nuts and dried fruit as desired.
If you don’t have cooking spray you can wipe the muffin tin with vegetable oil.
Use rolled or old fashioned oats. Do not use quick oats.

RECIPE: Baked Polenta with Tomatoes
INGREDIENTS:
4 cups vegetable broth
1 1/4 cups polenta (course ground cornmeal)
1 tablespoon sage, rubbed
1/2 teaspoon (or to taste) salt, Kosher
1/4 teaspoon pepper, fresh ground (or to taste)
3 tomatoes, beefsteak (sliced, 1/4 inch thick)
2 tablespoons Parmesan cheese, grated
Cooking spray
INSTRUCTIONS:
1: Spray a 9 x 13 pan and a large baking sheet with cooking spray. Set them aside.
2: In a large saucepan bring the vegetable broth to a boil.
3: Reduce the heat to medium low. Gradually stir in the polenta while constantly stirring.
4: After the polenta is stirred in, mix in the sage, salt and pepper while continuing to stir.
5: Continue to stir until the mixture becomes thick and pulls away from the pan (about 5 minutes).
6: Spread the mixture evenly into the 9 x 13 pan and leave it to cool.
7: Preheat the oven to 400 degrees.
8: When the polenta is cooled, cut into 16 squares (or to desired size).
9: Lay the polenta squares flat on the baking sheet.
10: Lay a tomato slice over each polenta square and sprinkle with Parmesan cheese.
11: Bake for about 25 minutes or until the cheese and polenta start to brown. Serve.
NOTES:
You can use 1/4-1/2 teaspoon of ground sage or 1 tablespoon fresh, chopped sage in place of the rubbed sage.
Beefsteak tomatoes are large, juicy and firm. There are many varieties to choose from.
I use a whisk to stir in the polenta to help avoid lumps.
Do not use instant polenta or cornmeal.
This baked polenta is a delicious side dish. It is also yummy covered with beans and/or tomato sauce.

RECIPE: Red Bean Soup
INGREDIENTS:
1 pound red kidney beans, dry
1 cup celery, chopped (1/4 inch pieces)
1 tablespoon onion powder
1 teaspoon garlic powder
2-3 bay leaves
Salt, to taste
Water
INSTRUCTIONS:
1: Sort beans, remove stones and debris.
2: Rinse well. Soak in 8-10 cups of water overnight.
3: Rinse well again.
4: Add celery, bay leaves, beans, onion and garlic powder to pot. Add water to cover ingredients 2 inches above.
5: Heat to boiling then reduce heat to a gentle boil.
6: Cook on stove top until beans are tender.
7: Near the end of cooking time, add salt to taste and more water if soup thickens to much.
8: Simmer until desired tenderness.
NOTES:
Soak beans overnight or for at least 8 hours. Make sure to rinse them well before them putting in a pot.
Delicious with a scoop of cooked rice added to the bowl of soup.
Serve with bread, sandwich, salad or alone.

4: Add the beans, tomatoes, cumin, and coriander. Bring mixture to a simmer, then simmer 5 minutes. Stir frequently.
5: Stir in the corn, salt and pepper. Simmer and stir until the ingredients are heated through.
6: Garnish with cilantro if desired

RECIPE: Date Paste
INGREDIENTS:
1 cup dates, pitted
2 cups water
1 tablespoon vanilla extract (or to taste)
INSTRUCTIONS:
1: Place the dates in a bowl and cover with water. Soak overnight (or until soft) in the refrigerator.
2: Drain soaking liquid and reserve.
3: Add the dates and vanilla to a strong blender or food processor. Blend until smooth. Add the soaking liquid as needed to make a smooth paste.
4: Store in the refrigerator.
NOTES:
Date paste can often be used in place of sugar or other sweeteners in cooking and baking. Try date paste to sweeten your smoothies, oatmeal and homemade salad dressings.
Date paste can be frozen for several months. It stays a bit soft in the freezer so you can scoop out just the amount you need.
You can add other seasoning such as nutmeg, cinnamon or a bit of Kosher or sea salt.

RECIPE: Stovetop Black-eyed Peas
INGREDIENTS:
1 pound black-eyed peas, dried
2 1/2 cups onion, chopped
2 - 3 teaspoons olive oil
1 - 2 teaspoons garlic, minced
1 teaspoon oregano
6 cups water
6 teaspoons chicken broth/seasoning, powdered (vegan or regular)
Salt, to taste
INSTRUCTIONS:
1: Sort and rinse black-eyed peas. Remove stones and debris.
2: Soak beans in 6 - 8 cups cold water overnight (at least 6 - 8 hours).
3: Drain and rinse the beans.
4: In a large pot, sauté the onion in olive oil until the onion is soft (translucent).
5: Add the garlic, oregano, water, chicken seasoning and soaked beans.
6: Bring ingredients to a simmer.
7: Cover and simmer for 60 minutes or until the beans are as soft as you like them.
8: Remove from the heat and serve. Add salt to taste if desired. Black-eyed peas are delicious served many ways including over rice, quinoa, potatoes, and couscous.
NOTES:
Black-eyed peas are a actually a bean.
You can use 6 cups of chicken broth in place of the water and chicken seasoning/broth.
The black eyed peas usually take about 60 minutes to cook but may take up to 90 if the beans are older or the simmer is very low.
You may need to add more water to the beans as they simmer if they are taking a long time to cook.

RECIPE: Cranberry Walnut Scones
INGREDIENTS:
2 cups white whole wheat flour (lightly packed)
1 tablespoon baking powder
1/2 teaspoon Kosher salt
1/4 cup coconut or date sugar
2 tablespoons flax meal
1/3 cup walnuts, chopped
1/3 cup cranberries, dried
2/3 cup soy milk
1/3 cup grape seed or canola oil
1 teaspoon vanilla
Cooking spray
INSTRUCTIONS:
1: Preheat oven to 400 degrees. Spray a baking sheet with cooking spray.
2: Combine the flour, baking powder, salt, sugar, flax meal, walnuts, and dried cranberries in a mixing bowl.
3: In a separate bowl, whisk together the soy milk, oil and vanilla.
4: Using a fork, mix the liquid mixture into the dry mixture.
5: Once the dry ingredients are completely mixed in, form a ball.
6: Gently flatten the dough into a 7 inch circle on the baking sheet.
7: Using a knife, score the dough into 8 wedges. Do not separate the wedges.
8: Bake 20 - 22 minutes or until golden brown.
9: Serve warm.
NOTES:
You can use any granulated sugar in place of the coconut or date sugar.
I recommend using organic flour and aluminum free baking powder when you can.
Flax meal is the same as ground or milled flaxseed.
You can use whole wheat flour or whole wheat pastry in place of the white whole wheat flour. If you use these flours the scones will be a bit denser and not as sweet.

INGREDIENTS:
6 - 8 cups butternut squash, 1 inch cubes
1 - 2 tablespoons grapeseed or olive oil
½ teaspoons Kosher salt
¼ teaspoon ground black pepper
Baking spray (or use parchment paper)
INSTRUCTIONS:
1: Preheat the oven to 400 degrees. Line a baking sheet with parchment paper or spray with baking spray.
2: In a large bowl, mix together the butternut squash and oil.
3: Stir in the salt and pepper.
4: Spread the butternut squash in a single layer on the baking sheet.
5: Roast for 20 minutes. Turn and roast 10 to 15 minutes more until the butternut squash is tender. A knife should slide easy into the center of the squash when it is done.
6: Add more salt and pepper to taste. Serve.
NOTES:
Butternut squash is a winter squash with a nutty, sweet flavor.
6-8 cups of diced butternut squash is about 3 pounds.
You can make the butternut squash cubes bigger or smaller than 1 inch. Just make them about the same size. Bigger cubes will take longer to cook. Smaller cubes will cook faster.
You can add other seasonings if desired. Try brown sugar, maple syrup or herbs.
To cut a whole butternut squash into 1 inch cubes: Peel the squash, cut it in half, scoop out and discard the seeds. Then dice the squash into 1 inch cubes or the desired size. Larger cubes will take longer to cook. Smaller cubes will cook faster.

INGREDIENTS:
Whole Butternut Squash
INSTRUCTIONS:
1: Rinse and pat dry a whole butternut squash.
2: Cut the stem and bottom ends do both ends are flat.
3: Cut the squash in half between the neck and the bulb.
4: With a regular and/or y-shaped vegetable peeler, peel away the skin. Also peel away any green streaks so you have only vibrant, orange flesh.
5: Cut the bulb side in half lengthwise. Scoop out the seeds and stringy fiber.
6: To make 1 - inch cubes, cut each half in 1 inch slices. Then cut each slice lengthwise in 1 inch strips. (Adjust the cuts to make your desired size cubes).
7: Turn and cut across the strips so you have 1 inch cubes.
NOTES:
Butternut squash is a winter squash with a nutty, sweet flavor.
The y-shaped vegetable peeler makes it easier to peel on some of the more curvy areas. A regular, straight peeler is easier on other areas. Use what is easier for you.
Adjust your cuts to make any size butternut squash cubes you desire.

RECIPE: Lentils
INGREDIENTS:
1 1/2 cups onion, chopped
1 teaspoon olive oil
3 cups water
1 cup lentils, dry
1 1/2 teaspoons Kosher salt (or to taste)
INSTRUCTIONS:
1: Examine lentils. Remove any stones and debris. Rinse.
2: Heat oil in a saucepan over medium heat.
3: Sauté onion in oil until soft.
4: Add 3 cups water to the sautéed onions and bring to a boil.
5: Add lentils and salt to boiling water.
6: Return to a boil, then reduce heat to a simmer.
7: Simmer 25 - 30 minutes or until the lentils are tender.NOTES:
You can easily double this Lentil recipe.
Sauté the onion in the same pot that you will cook the lentils in.
Add more water if the water dries up before the lentils are tender.
Delicious served over rice, couscous, quinoa, potatoes or yams.
You can use another type of salt if desired.
You can use these cooked lentils as a base for other lentil recipes such as a lentil patties or a lentil loaf.

RECIPE: Boiled Corn on the Cob
INGREDIENTS:
Ears of corn, fresh
Water
INSTRUCTIONS:
1: Remove the husks and silk from the ears of corn.
2: Fill the pot with enough water to cover the corn.
3: Bring the water to a boil.
4: Carefully drop the corn in the boiling water.
5: Bring the water back to a boil.
6: Simmer the corn 4 - 7 minutes or until the corn is tender.
NOTES:
Keep the unhusked ears of corn in the refrigerator until you are ready to boil them. The sugar in the corn will quickly turn to starch at room temperature.
You can husk the corn while waiting for the water to boil.
To remove the silks, hold the corn under running water and brush with a soft vegetable brush.
To check if the corn is done, pierce a kernel with the tip of a sharp knife.
