Instructions Nihari spices :
1. Dry Roasting: Begin by dry roasting the whole spices to enhance their flavors. In a pan, add coriander seeds, cumin seeds, fennel seeds, black peppercorns, cloves, black cardamom pods, cinnamon stick, and mace (if using). Roast them over low heat for about 2-3 minutes until they release their aroma. Be careful not to burn them as it can make the spice blend bitter.
2. Cool and Grind: Remove the roasted spices from the pan and let them cool to room temperature. Once cooled, transfer them to a spice grinder or mortar and pestle. Add the grated nutmeg to the spice grinder as well.
3. Grinding: Grind all the roasted spices and additional ingredients until you get a fine powder. If using a mortar and pestle, grind them in batches to ensure a smooth and consistent texture. You may also sift the spice mix to remove any larger particles for a more refined texture.
4. Storing: Once the Nihari Masala spice mix is ready, transfer it to an airtight container. Store it in a cool, dark place to preserve its flavor and aroma.

You can add it to your Chicken Nihari recipe and Beef Nihari recipe along with other ingredients like meat, onions, ginger, garlic, and slow-cook the stew to perfection. Directions:
Bread:
• Trim the brown sides of the bread, cut to triangles or any shape of your choice.
• Heat oil in a deep fry pan and fry the bread slices in the hot oil until light brown, drain on a plate lined with paper towels.
• If you don’t want to fry, just toast them until crispy.
Sugar syrup:
• In a sauce pan, add water and sugar, cook until it comes to a one string consistency.
• Add cardamom powder and stir, cook until sugar syrup is thickened.
• Add kewra essence, mix it and cook for 1-2 minutes, remove from flame and set aside.
Thickened milk (Rabri):
• In a saucepan, add milk and sugar, mix it.
• Add green cardamom powder, mix well.
• Now add kewra essence.
• Add corn flour mixer and give it a good mix, cook on low flame until milk thickens (20-30 minutes) and keep stirring in between until milk is reduced to desire thickness.
• Remove from heat and set aside.
Assembling:
• Now dip the bread slice in the sugar syrup for 10-15 seconds.
• Arrange the sugar syrup coated bread pieces in a dish, pour the thickened milk (rabri) on the sugar coated bread slices.
• Garnish with desiccated cashew nut, almonds and pistachios.
• Serve and enjoy.

1. "Begin by soaking 900 grams of Basmati Rice in 2 cups of water for 2 hours."
2. "For the Basmati Rice cooking, heat a pan and add hot water as required. To that, add 2-3 bay leaves, 1 teaspoon of pink salt, 2 fat green chilies, 2 teaspoons of cooking oil, and 1 tablespoon of lemon juice."
3. "Cook this mixture for two minutes, and then add the soaked Basmati Rice (900g). Cook until it's 90% done, then sieve the rice well."
4. "Now, let's move on to the Biryani Spices preparation. In a pan, heat 1 cup of mustard oil and fry 3 big sliced onions until they turn light brown."
5. "Add 2 star anise, 6 green cardamom pods, 3 black cardamom pods, 1 big mace, 2 cinnamon sticks, 8-9 whole cloves, 2-3 bay leaves, and 2 teaspoons of cumin seeds."
6. "Stir in 2 tablespoons of ginger and garlic paste, followed by 1 cup of tomato paste, 1 teaspoon of pink salt, 1 teaspoon of paprika powder or red bell pepper powder, 2 teaspoons of coriander powder, 1 teaspoon of turmeric powder, and 1 teaspoon of cumin seeds powder."
7. "Add 1/2 cup of fried onions and 800 grams of shrimp (jhinga). Cook this mixture for ten minutes."
8. "Finally, add 1 cup (200g) of yogurt, 1 teaspoon of hot spices powder, and 1/2 cup of mint leaves. Our biryani curry is now ready to be mixed with the boiled rice."
COOKING
Now, let's bring everything together in our final step, the Mixing Preparation.
1. "In a large pot, add 2 tablespoons of cooking oil."
2. "Layer in the prepared Basmati Rice."
3. "Pour in the prepared Biryani Curry, ensuring an even distribution."
4. "Add 1/2 teaspoon of food color for that vibrant look."
5. "Top it off with additional fried onions for extra crunch and 1/4 cup of chopped mint for freshness."
6. "Now, it's time for dum cooking. Place the pot on the stove, cover it, and cook on low flame for 25 minutes.

- 1/2 cup Cooking Oil
- 2 tsp Red Chili Flakes
- 2 tbsp Ginger & Garlic Paste
- 400g Whole Chicken
- Pink Salt, as required (2 tsp)
- 200g Carrot, sliced
- 250g Capsicum, sliced
- 500g Cabbage
- 1 tsp Chinese Salt
- 1 tsp Black Peppercorns, crushed
- 3 tbsp Chili Sauce
- 2 tbsp Soy Sauce
- 2 tbsp Vinegar
- 500g (1/2 kg) Boiled Spaghetti
Instructions:
1. Heat 1/2 cup of cooking oil in a pan.
2. Add 2 tsp of red chili flakes and 2 tbsp of ginger & garlic paste to the heated oil.
3. Next, add 400g of whole chicken pieces. Cook until the chicken turns light brown.
4. Sprinkle pink salt (about 2 tsp) over the chicken. Cover with a lid and cook for five minutes.
5. After that, remove the lid and cook for an additional two minutes.
6. Add 200g of sliced carrots, 250g of sliced capsicum, and 500g of cabbage to the pan. Cover with a lid and cook for five minutes.
7. Remove the lid and mix the ingredients well.
8. Cover with a lid again and cook for an additional ten minutes.
9. Mix 1 tsp of Chinese salt and 1 tsp of crushed black peppercorns.
10. Add 3 tbsp of chili sauce, 2 tbsp of soy sauce, and 2 tbsp of vinegar. Cook for two more minutes.
11. Finally, mix in 500g (1/2 kg) of boiled spaghetti.
12. Your Spicy Creamy Pasta is ready! Enjoy your delicious meal.
