-Jaifil (Nutmeg) ¼ piece
-Sabut lal mirch (Button red chillies) 7-8
-Cooking oil ¼ Cup
-Mutton 1 kg large pieces
-Tamatar (Tomato) sliced 1 medium
-Pyaz (Onion) sliced 1 large
-Lehsan (Garlic) 4-5 cloves
-Sabut kali mirch (Black peppercorns) 1 tsp
-Tez patta (Bay leaves) 2
-Falak Pink Salt 1 tbs or to taste
-Water 1 & ½ litre
-Hari mirch (Green chilli) paste 1 & ½ tbs
-Cooking oil 3-4 tbs
-Zeera (Cumin seeds) 1 tsp
-Laung (Cloves) 5-6
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Hari mirch (Green chilli) paste 1 tbs
-Dahi (Yogurt) whisked ½ Cup
-Lal mirch (Red chilli) crushed 1 tsp
-Falak Pink Salt 2 tsp or to taste
-Tatri (Citric acid) ¼ tsp
Assembling:
-Gajar (Carrot) sliced 1 medium
-Shimla mirch (Capsicum) sliced 1 medium
-Kishmish (Raisins) 3 tbs
-Kaju (Cashew nuts) 10-12
-Akhrot (Walnuts) 10-12
-Ghee (Clarified butter) 2 tbs
Directions:
-In a bowl,add rice,water,wash thoroughly & soak for 30 minutes then strain soaked rice & set aside.
-In a spice mixer,add coriander seeds,mace,green cardamom,fennel seeds,cumin seeds,cloves, nutmeg,button red chillies,grind well & set aside.
-In a pressure cooker,add cooking oil,mutton pieces & mix well.
-Add tomato,onion,garlic,black peppercorns,bay leaves,pink salt,ground spices (reserve 2 tbs for later use),water,green chilli paste,mix well & bring it to boil,cover & pressure cook on low flame until mutton is tender (18-20 minutes) then strain,discard residues & reserve cooked meat.
-Reserve 1 Cup & remaining stock (approx. 5 Cups) for later use.
-In a pot,add cooking oil,cumin seeds,cloves & mix well.
-Add ginger garlic paste & mix well.
-Add green chilli paste & mix well for 1-2 minutes.
-Add yogurt & mix well.
-Add red chilli crushed,pink salt,citric acid,1 tbs of reserved ground spices,mix well & cook for 2 minutes.
-Add reserved stock (approx. 5 Cups),mix well & bring it to boil.
-Add soaked rice,mix well & cook on medium flame until water evaporates (7-8 minutes).
Assembling:
-In a pot,add cooked meat,carrots,capsicum,raisins,cashew nuts,walnuts,reserved ground spices 1 tbs,cooked rice & spread evenly.
-Add clarified butter,1 Cup of reserved stock,cover with kitchen towel & lid.
-On stove,place griddle,cooking pot & steam cook on low flame for 25-30 minutes.
-Remove kitchen cloth from the pot,cover & let it rest for 10 minutes.
-Flip the pot over a large dish,remove carefully & serve hot!

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Atta (Wheat flour) 3 tbs
-Baisan (Gram flour) 3 tbs
Prepare Beef Nihari:
-Water 1 & ½ Cup or as required
-Cooking oil ½ Cup
-Beef bong (Shank) 750g
-Beef bones 250g
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Water 2 litre or as required
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
-Hari mirch (Green chilli) sliced
Directions:
-In a frying pan,add green cardamom,cloves,black peppercorns,black cardamom,star anise,mace, nutmeg,dried ginger,fennel seeds,cumin seeds,long pepper,bay leaves,coriander seeds,cinnamon sticks,carom seeds & dry roast on medium flame until fragrant (2 minutes) & let it cool.
-In spice mixer,add roasted spices & grind to make powder.
-Add salt,red chilli powder,turmeric powder,Kashmir red chilli powder,grind well & take out in a bowl.
-In the same frying pan,add wheat flour,gram flour & dry roast until fragrant (2 minutes) & let it cool.
-Take out in a same bowl & mix until well combined.Nihari masala is ready!
-Can be stored in an airtight jar for up to 2 weeks on counter & up to 6 months in refrigerator.
Prepare Beef Nihari:
-Add water,whisk well & set aside.
-In a pot,add cooking oil,beef shank & beef bones,mix well & cook on medium flame for 4-5 minutes.
-Add ginger garlic paste,mix well & cook for 2-3 minutes.
-Now add prepared nihari masala mixture & mix well.
-Add water,mix well & bring it to boil,cover & cook on low flame for 1 hour & 30 minutes or until meat is tender & stir in between (If required,add water).
-Turn off the flame,cover & let it rest for 10 minutes.
-Garnish with fresh coriander,ginger,green chilli & serve!

Ingredients required for making kashmiri chicken masala recipe - Serves 10 to 12 (if using boneless chicken)
* 1.5 kg/ 3.3 lb boneless skinless chicken thighs (can even use bone chicken)
* 400 gm/ 14 oz / 2 very large onions finely chopped
* 35 gm / 1.2 oz ginger
* 45 gm/ 1.6 oz/ 6 large garlic cloves
* 150 gm / 5.3 oz / 1 large or 2 medium tomatoes
* 1/2 cup (standard measuring cup) plain unflavored yogurt. Take out the yogurt from the refrigerator half an hour before you start cooking or before starting any of your prep work.
* 1 dry bay leaf
* 1 teaspoon fennel seeds (saunf)
* 10 green cardamoms (elaichii)
* 10 cloves
* 12 black peppercorns
* 1 & 1/2 inch long cinnamon stick
* 1 tablespoon kashmiri red chilli powder
* 1 teaspoon paprika
* 1 tablespoon heaped ground coriander (dhania powder)
* 1 teaspoon ground cumin (jeera powder)
* 1 teaspoon turmeric powder

* 1/2 cup water. Add more water if you see gravy becoming too thick. The gravy is bit on the thicker side for this recipe.
* 2 tablespoons water for mixing with spices in yogurt + 4 tablespoons water added to pan before adding yogurt spice mix.

- Crushed Black Pepper- 1/4 tsp
- Dry Fenugreek Leaves, dry roasted & powdered- 1 tsp

Preparation:
- Clean & wash the chicken fillets and pat dry. Cut into one inch cubes.
- Chop the onion, tomatoes and coriander leaves, julienned the ginger and cut the 3 green chillies into small pieces.
- Dry roast and powder the Kasuri Methi (Dry Fenugreek leaves), set aside.
Process:
- Heat 2 tbsp oil in a flat pan and add the ginger garlic paste. Fry on low heat for 1 minute and add the chicken cubes along with 1 tsp salt. Mix and fry on high to medium heat for 3-4 mins. Take it out and set aside.
- Heat 2 tbsp oil in the same pan and add the chopped onions. Fry on medium heat for 5-6 mins till light brown.
- Add the chopped tomatoes & 1/4 tsp salt and cook on medium heat for 3-4 mins till soft.
- Now add the Turmeric, Red Chilli and Coriander powders, mix and add a splash of water.
- Continue to cook for around 3 mins on medium to low heat till oil separates.
- Add the fried chicken cubes and fry on medium heat for 5 mins till water dries up and oil separates.
- Now switch off heat and add the whisked curd/ yogurt. Mix well and cook on low heat for 2 mins till oil separates.
- Add 50 ml water, mix well and cook covered on low heat for 10 mins till the chicken is tender and oil separates.
- Now add the crushed black pepper, garam masala powder and roasted & powdered Kasuri Methi. Mix well and cook for another 2-3 mins.
- Now add the green chilli pieces and ginger juliennes, give a mix and then add the fresh cream. You can add few tablespoons water if required.
- Give a mix and simmer for 2-3 mins till oil separates.
- Garnish with chopped coriander.

For the marination:

- Cornflour- 3 tbsp
For Tempering:

Other Ingredients:
- Onion Petals- 1 cup
- Green Pepper (capsicum) diced - 1 cup (70 gms)
- Red pepper(capsicum), diced- 1 cup (70 gms)
- Spring Onion whites, sliced- 2-3 tbsp
- Soy sauce- 2 tsp
- Tomato Ketchup- 4 tbsp
- Vinegar- 2 tsp
- Black Pepper Powder- 1/2 tsp
- Cornflour slurry- 1 tbsp cornflour mixed in 3 tbsp water
- Oil- 2 tbsp
- Spring Onion greens, chopped, for garnish- 3-4 tbsp
Preparation:
- Wash and cut the boneless thigh pieces into 1” pieces
- Marinate with the items indicated. Mix well and set aside for 30 mins.
- After 30 mins, mix in the corn flour to coat the chicken pieces.
- Peel and chop the ginger & garlic and chop the green chillies.
- Dice the onion, green and red pepper.
- Slice the spring onion whites and chop the greens for garnish.
Process:
- To fry the chicken pieces, heat oil till medium hot and drop the battered chicken pieces one at a time. Do not crowd the pan and if required, fry in batches.
- Fry on medium heat for 5-6 mins till golden. Remove and keep on a plate.
- Now take a wok or kadhai & heat 2 tbsp oil.
- Add the chopped garlic & ginger and stir for 15 secs. Now add the green chillies and continue to fry for 30 secs.
- Add the spring onion whites and fry for 30 secs.
- Now add the diced white onions, mix and fry on high heat for a minute.
- Add the green and red peppers,mix & stir fry the vegetables on high heat for a minute.
- Now add the soy sauce, tomato ketchup, mix & stir fry on high heat for 15 secs.
- Add the vinegar & black pepper powder & stir fry on high heat for 15 secs, add a splash of water if required.
- Add the fried chicken pieces and mix & stir fry on high heat for 1 min till these are coated by the sauce.
- Add the corn slurry, mix & stir fry cook for 30 secs.
- Garnish with spring onion greens, mix and serve .
