Elderberries are a superstar in the natural medicine world for good reason! I hope you enjoy this simple syrup (oxymel) recipe as much as my family does. Recipe:
1/2 cup Elderberries and up to ¼ cup optional add-ins such as orange peel, cinnamon, clove, astragalus, rose hips, ginger or rosemary. You can choose ad in based on taste or your personal constitution (hot, cold, wet, dry)
For prevention I use 1 TBSP daily 3 days before, during, and 3 days after traveling or other high exposure or stress to boost my immune system.
For cold and flu, I take 1 tsp every hour as soon as I start feeling sick until symptoms have gone for a day.
Other - You can also use the syrup on pancakes and in soda water or mixed drinks for a fun and nourishing treat!

Thank you for joining me on another fun whole muscle meat cure! I hope you enjoyed today's video and are inspired to try curing meat at home with these simple, time-tested techniques. A great resource I found for butchering and curing meat in a traditional manner is www.farmsteadmeatsmith.com, I especially recommend checking them out if you are interested in doing your own butchery.
Summary:
1- Salt Meat and place in fridge (or other cool spot) to cure.
2- Rinse, Dry, Weigh, Tie & Hang in a cool dark spot to get started! Ideally 40-60f with good airflow.
3- Slice and fry or wait till you can eat it raw for an awesome snack!
Do note that our commercial processing practices leave most supermarket meat already in a very compromised state of bacterial contamination. For this reason I recommend using meat you have personally butchered or from a local farmer/homesteader you have talked to about their practices and feel comfortable with or go to a local butcher shop and talk to someone there about obtaining the freshest cuts of whatever you are looking for. This will make a huge difference in not only quality but the success of using these old-fashioned techniques!

I love this ancient preservation technique to preserve meat forever with only ONE INGREDIENT and make it super delicious to boot! Curing your own meats is not only delicious and rewarding, but a great SHTF skill and just a super cool lost art. I hope this video helps you to confidently go forth and explore the world of home cured meats.

p.s. you can add any other seasonings you like too but salt is the important part! I really like black pepper and paprika. If you want to cut the salt a bit or are going for a more "breakfast" bacon, try using a mix of equal parts salt and brown sugar with black pepper on top, I don't think you'll be disappointed!

Chickens in Negative Temps! (No Heat Lamp) | How To Care For Chickens In Winter
Keeping chickens in harsh winter conditions without heat lamps is not only possible but simple!

Recap + More Info:
1. Chickens are easy keepers!
2. They will eat fluffy snow to supplement their water supply.
3. Use a saltwater bottle in their water bowl to keep it liquid longer.
4. No need for a heat lamp! Insulate your coop with1.5" rigid insulation to keep them cozy.
(Floor + Walls)
5. No cross breeze in your coop! Keep your ventilation at the top well above their roosts.
6. Don't keep your chickens cooped up in their house for too long. They need to be able to go outside during the day but can be tucked in overnight to keep them extra warm and safe from predators.
7. If they do not have a covered area where they have access to bare ground to dig in and dust bathe, they would benefit from a dust bath. Simply fill a container (like a small kiddie pool) with one or a mix of sand, peat moss, or plain old dirt.
We have had temps down to -30 F using this method!

Christmas Cookie Recipe | Nourishing Traditions Fermented Gingerbread Cookie 13th Century Origin
A long-fermented gingerbread spiced dough like this can trace its origins all the way back to the 13th century!
Combine 1-pound fresh ground flour of choice (I'm using rye here) and 1/2 pound each raw honey and molasses. cover and let sit at a minimum 3 days and up to 3 months. The flavors and texture will really develop nicely with a longer ferment time.
When ready to bake add the bowl to a pot of warm water on the stove and heat until the mixture becomes pliable. Turn out onto a work surface and knead until smooth. add 1-2 Tbsp gingerbread spices and a pinch of salt. You could also experiment kneading in finely chopped candied fruits, lemon peel, nuts or chocolate here.
Roll tsp sized pieces into balls and flatten onto a parchment lined baking sheet or silicone baking mat. Bake on the lowest shelf in your oven at 350f for 10-15 minutes, you want them to be just brown not dark. Remove and let cool. Store in an airtight container for up to 3 weeks. You can also dip in melted chocolate or glaze after they are cooled. I hope you enjoy this look into historical baking! Merry Christmas!

making the most of our Apple harvest by putting up a store of wholesome Apple Butter for late winter Apple enjoyment! This recipe is already very wholesome with minimal ingredients and no refined sugars, but you can up the healthy yum factor even more with a quick ferment hack. When you open a new jar of Apple Butter, remove a large spoonful to give yourself more room in the jar, stir in a spoonful of whey (I usually use my piima cultured dairy for this, but raw acv will do to!) replace the lid loosely and leave at room two for a day or two to allow for slight fermentation, then move to the fridge and enjoy!

Painted Mountain Corn Recipe Series - Sourdough Bread you can grow in your SURVIVAL GARDEN!
So you grew some Painted Mountain Corn.... now what do you do with it? I know a lot of people use this as a "decorative" corn and while it is beautiful, it should definitely be eaten as well as admired! If you are interested in being more self sufficient, corn is probably the easiest grain crop both to grow and harvest as well as more calorie dense per acre than wheat and other grains. A great way to start using your flour corn is to start adding small quantities into baked goods you already enjoy. Today I'm substituting 20% of the flour in my weekly sourdough loaf with painted mountain corn flour. This gives just a little flavor and texture change but does not majorly affect the finished product. Keep in mind this grain is naturally GLUTEN FREE so it would not be appropriate to substitute too much of your regular wheat flour in recipes where gluten structure is needed such as a free form bread loaf. For quick breads, cookies, muffins, tortillas, pie crust etc... you could easily use 💯 painted mountain corn flour in your recipe!
