How to make Chicken Tikka Club Sandwich Recipe by Food Fusion
Recipe in English:
Ingredients:
-Chicken cut into stripes 250g
-Dahi (Yogurt) whisked 2 tbs
-Paprika powder ½ tsp
-Tikka masala 1 & ½ tbs
-Lemon juice 1 tbs
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Namak (Salt) ½ tsp or to taste
-Cooking oil 2-3 tbs
-Anda (Egg) 1
-Namak (Salt) to taste
-Kali mirch (Black pepper) crushed to taste
-Cooking oil 1 tbs
-Bread slices large
-Makhan (Butter)
-Mayonnaise
-Tomato ketchup
-Lettuce leaves
-Kheera (Cucumber) slices
-Cheese slices
Directions:
-In a bowl,add chicken,yogurt,paprika powder,tikka masala,lemon juice,ginger garlic paste,salt & mix well.
-In a frying pan,add cooking oil,marinated chicken and cook on medium flame until chicken is tender (approx. 8-10 minutes) then cook on high flame until dries up.
-Let it cool & roughly chop into small pieces with the help of knife & set aside.
-In a bowl,add egg,sprinkle salt,black pepper crushed & whisk well.
-In a frying pan,add cooking oil & fry whisked egg from both sides (1-2 minutes) & set aside.
-Cut the sides of large bread slices with the help of knife.
-Grease cast iron grill pan with butter & toast bread slices from both sides.
Assembling:
-Now place three toasted bread slices on a clean working surface.
-Spread mayonnaise and tomato ketchup,place lettuce leaves,cucumber,prepared omelet,cheese slices & place another bread slice on top.
-Now add prepared chicken tikka filling & flip third bread slice over it (makes 3-4).
-Cut into desired pieces & insert skewer.

-In a bowl,add basmati rice,water,wash thoroughly and soaked for 30 minutes then strain soaked rice & set aside.
-In a pot,add water & bring it to boil.

-Add soaked rice,mix well & boil until 3/4th done then strain & set aside.
-In a bowl,fried onion,tomato,green chilies,dried plums,mint leaves,fresh coriander,briyani masala, lemon juice,mix well & set aside.
-In a pot,add cooking oil,onion & sauté until translucent.
-Add black peppercorns,cumin seeds,cinnamon sticks,star anise,cloves,green cardamom,black cardamom & mix well.

-Lehsan (Garlic) cloves 14-15

-Podina (Mint leaves) 2 tbs
-Hara dhania (Fresh coriander) 2 tbs
-Baking soda ½ tsp
-Garam masala powder 1 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tbs
-Lal mirch (Red chilli) crushed 1 tbs
-Zeera (Cumin seeds) roasted & crushed 1 & ½ tbs
-Namak (Salt) 1 & ½ tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Ghee 2 tbs
-Cooking oil 1-2 tbs

Directions:
-In a bowl,add beef boneless cubes,garlic,ginger,onion,green chillies,mint leaves,fresh coriander,baking soda,garam masala powder,coriander seeds,red chilli crushed,cumin seeds,salt,red chilli powder and mix well.

Serves 10-12
Recipe in English:
Ingredients:
-Doodh (Full cream fresh milk) 1 litre
-Zafran (Saffron strands) 1 pinch
-Hari elaichi (Green cardamom) 5-6
-Sugar 6 tbs ot to taste
-Pista (Pistachios) 1 & ½ tbs
-Badam (Almonds) 1 & ½ tbs
-Doodh (Full cream fresh milk) 1 & ½ litre
-Water ¼ Cup
-Lemon juice 3-4 tbs
-Cornflour 2 tsp
-Sugar 1 Cup
-Water 1 litre
Directions:
Prepare Saffron Milk:
-In a pot,add milk and bring it to boil,add saffron strands,green cardamom,sugar,pistachios,almonds and mix well,bring it to boil and cook on low flame until milk is reduced to half (approx. 12-15 minutes) and keep mixing in between.
Prepare Rasmalai Balls:
-In a pot,add milk and bring it to boil then remove from flame and rest for 5-10 minutes to bring down the temperature.
-In water,add lemon juice and mix well.
-In milk,add lemon juice & water and mix well and rest until milk curdles completely.
-In a bowl,place strainer,muslin cloth and strain the curdle mixture through the strainer to separate whey and rinse with tap water to remove lemon juice completely and squeeze well and hang for 10 minutes.
-In a bowl,add strained cheese and mash well for 10 minutes until its smooth.
-Add cornflour,mix well and knead the mixture until smooth (approx. 5 minutes).
-Take a mixture (1 tbs) and make smooth rasmalai balls with no cracks then flatten the balls on your palm (makes 13-14).
Prepare Sugar Syrup:
-In a wok,add water,sugar,mix well and cook until sugar is dissolved.
-In sugar syrup,add rasmalai balls & cook for 3 minutes in sugar syrup,cover & cook for 12-15 minutes or until double in size.
-Turn off the flame,add ice cubes and let it rest for 8-10 minutes or until all the ice cubes melt.
-In a serving dish,add prepared saffron milk and rasmalai balls.
-Garnish with pistachios,almonds and saffron.
-Refrigerate for 3-4 hours & serve chilled!
Tips:
-Do not add lemon juice in boiling milk.Wait for few minutes to reduce the milk temperature.
-Knead the cheese curdle for at least 10 minutes to make rasmalai soft.
-Note that after a proper kneading,curdle mixture should not stick to your hands or with spoon.
-After adding lemon juice when curdles begin to form,do not stir the syrup.
-Always prepare sugar syrup in wide wok/pot.

-Bowl mein strainer aur malmal ka kapra rakh dein aur curdle mixture ko strain ker ka whey alag ker lein phir tap water sa ache tarhan dho lein taka lemon juice nikal jaye aur haathon ki madad sa pani ko squeeze ker lein aur 10 minutes kliya hang ker lein.
-Bowl mein strained cheese dal ker 10 minutes ya smooth hunay tak ache tarhan mash ker lein.
-Cornflour dal ker ache tarhan mix karein aur 5 minutes kliya mixture ko smooth hunay tak ghond lein.
-1 tbs mixture lein aur rasmalai balls bana lein (with no cracks) aur haath ki haateli per pheela lein (makes 13-14).
Prepare Sugar Syrup:
-Karhai mein pani aur cheeni dal ker ache tarhan mix karein aur cheeni ghul janay tak paka lein.
-Sheeray mein rasmalai balls dal ker 3 minute kliya paka lein phir dhak ker 12-15 minutes ya size double hunay tak paka lein.

Directions:
-In a bowl add chicken, yogurt, turmeric powder, red chilli powder, salt, coriander powder, ginger garlic paste, green chilli, onion, mint, fresh coriander, fried onion, lemon juice & mix well. Marinate the chicken for 30 minutes.
-In a pot add water, cinnamon stick, clove, black pepper corns, green cardamom, star anis, bay leaves, salt, vinegar & bring it to boil.
-Add rice & let it cook until ¾ done (approx. 8-10 minutes). Strain & set aside.
-In a pot add cooking oil, cumin seeds, marinated chicken & stir fry for 2-3 minutes.
-Cover & cook on low flame for 10-12 minutes.
-Remove the lid and cook on high flame until oil separates. Now turn the flame off.
-Take half amount of korma in a dish & reserve it for later use.
-Now add & spread half amount of boiled rice, reserved korma, fresh coriander, mint, fried onion, remaining boiled rice.
-Dissolve Orange food colour in water and add in it. Cover & steam cook on low flame for 8-10 minutes.
-Mix and serve!

Directions:
-Flatten the chicken fillets and spread salt, lemon juice and oil on both the sides and cut them in strips and set aside.
-In a bowl add yogurt, tomato paste, onion powder, all spice powder, red chili powder, cinnamon powder, black pepper powder, clove powder, cumin powder and garlic powder, mix and marinate the chicken strips and set aside.
-For dough take ½ cup milk and mix in sugar and yeast and leave for 5-6 minutes to rise.
-In a bowl take all purpose flour and add salt and then kneed with the yeast mix and leave 30 minutes to rise again.
-Make dough balls spread oil on the surface and cover to give rest for 5-10 minutes.
-Roll out the dough ball applying all-purpose flour and press or poke the bread with fingers.
-Cook on medium flame until cooked from both the sides.
-Keep covered in cloth to prevent the bread from drying out and set aside.
-In a hand blender add mint leaves, garlic cloves, lemon juice, salt, paprika, tahini, hung curd and dried parsley and blend until smooth, pour in a squeeze bottle and set aside.
-Grill the marinated chicken for 2 minutes each side.

Timings are very important in this recipe.
Yeast fermentation required 15 mins.

-Now pour this batter in the sneezing bottle.
-In frying pan, heat desi ghee and squeeze the bottle and make centric rings with the batter.
-When one side is cooked, turn over and fry the other side.
-After frying, immediately put the fried jalebis in the sugar syrup. The sugar syrup should be slightly warm when you add jalebis in it.
-Turn over after a minute so that both sides are coated with the syrup.

Pizza Fries Recipe By Food Fusion
Recipe in English:
Ingredients:
Potato Fries:
-Aloo (Potatoes) peeled 3-4
-Pani (Water) as required
-Pani (Water) as required
-Namak (Salt) 1 tbs
-Oil for frying
Chicken Tikka Flavor:
-Tikka masala ½ tbs
-Dahi (Yogurt) 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Chicken fillet 1
-Oil 1 tbs
-Pani (Water) 1-2 tbs or as required
Assembling:
-Potato fries
-Mozzarella cheese grated
-Cheddar cheese grated
-Pizza sauce
-Cooked chicken
-Cheddar cheese grated
-Mozzarella cheese grated
-Pyaz (Onion) chopped
-Shimla mirch (Capsicum) chopped
-Jalapenos chopped
-Tamatar (Tomato) deseeded & cubes
-Cheddar cheese grated
-Mozzarella cheese grated
-Black olives
-Lal mirch (Red chili) crushed
-Dried oregano
Directions:
For Potato Fries:
-Cut potatoes with the help of the french fries cutting machine (1.3 cm thick).
-In bowl,add water,potato fries and let it rest for 30-45 minutes.
-In pot,add water,salt and heat it to boiling point.
-Add potato fries and leave for 6-8 minutes.
-Now pat dry potato fries with the help of the kitchen towel or paper & let them cool.
-Can be freeze in zip lock bag for up to 1-2 weeks.
-In pot,heat oil and fry potato fries for 2-3 minutes and rest it for 5 minutes.
-Heat oil and again fry potato fries until crispy & set aside.
For Chicken Tikka Flavor:
-In bowl,add tikka masala,yogurt,ginger garlic paste and whisk well.
-Add chicken fillet,mix well and marinate for 15-20 minutes.
-In frying pan,add oil and chicken fillet,basting with remaining marinade and cook for 2-3 minutes.
-Add water,cover and cook on low flame for 2-3 minutes then turn and cook other side until done.
-Turn off the flame,shred the chicken with the help of the fork.
-Turn on the flame and sauté for 1 minute and set aside.
Assembling:
-In small frying pan or baking tray,add potato fries,mozzarella cheese,cheddar cheese,pizza sauce, cooked chicken,cheddar cheese,mozzarella cheese,onion,capsicum,jalapenos,tomato,cheddar cheese,mozzarella cheese, black olives,red chili crushed and dried oregano.
-Bake in preheated oven at 180 C for 8-10 minutes or until cheese melts.

-Pot mein oil garam karein aur potato fries ko 2-3 minutes kliya fry ker lein phir bahir nikal ker 5 minutes kliya rakh dein.
-Oil garam karein aur potatao fries ko crispy hunay tak fry ker lein aur side per rakh dein.

-Bowl mein tikka masala,dahi aur adrak lehsan paste dal ker ache tarhan whisk ker lein.
-Chicken fillet dal ker ache tarhan mix karein aur 15-20 minutes kliya marinate ker lein.
-Frying pan mein oil aur chicken fillet dal dein aur baqi bacha huwa marinade bhi laga lein aur 2-3 minutes kliya fry ker lein.
-Pani dal dein aur dhak ker halki ancch per 2-3 minutes kliya paka lein phir turn ker lein aur dosri side ko bhi paka lein.
-Chulha bund ker dein aur fork ki madad sa chicken ko shred ker lein.
-Chulha on ker lein aur 1 minute kliya sauté ker lein & side per rakh dein.
Assembling:
-Chotay frying pan or baking dish mein potato fries,mozzarella cheese,cheddar cheese,pizza sauce, cooked chicken,cheddar cheese,mozzarella cheese,pyaz,shimla mirch,jalapenos,tamatar,cheddar cheese,mozrella cheese,black olive,lal mirch crushed aur dried oregano dal dein.
-Preheated oven mein 180 C per 8-10 minutes ya cheese melt hunay tak bake ker lein.

Ingredients:
Prepare Chicken: 00:11
-Chicken tikka masala 3 tbs
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Lemon juice 3 & ½ tbs
-Chicken fillet 350g
-Cooking oil 2-3 tbs
-Coal for smoke
Prepare Red Sauce: 01:13
-Cooking oil 2-3 tbs
-Pyaz (Onion) chopped 2 medium
-Lehsan (Garlic) chopped 1 & ½ tbs
-Tomato puree 1 & ½ Cup
-Namak (Salt) ½ tsp or to taste
-Zeera powder (Cumin powder) 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Chicken powder 1 tsp (optional)
-Dried oregano 1 & ½ tsp
-Water ½ Cup or as required
Prepare White Sauce: 02:09
-Makhan (Butter) 2 tbs
-Maida (All-purpose flour) 2 tbs
-Doodh (Milk) 1 & ½ Cup
-Kali mirch powder (Black pepper powder) ½ tsp
-Chicken powder 1 & ½ tsp (Substitute: Chicken Cube 1)
-Dried oregano 1 tsp
-Namak (Salt) ¼ tsp or to taste
Assembling: 02:40
-Lasagna sheets as required (boiled until 3/4th done)
-Cheddar cheese grated
-Mozzarella cheese grated
-Shimla mirch (Capsicum) julienne
-Pyaz (Onion) sliced
-Dried oregano
-Lal mirch (Red chilli) crushed
-Namak (Salt) 1 pack
Directions:
Prepare Chicken: 00:11
-In a bowl,add chicken tikka masala,ginger garlic paste,lemon juice and whisk well.
-Add chicken fillets and mix well,cover & marinate for 15 minutes.
-On grill pan,add cooking oil,marinated fillets & grill until done (6-8 minutes each side) and keep turning sides in between.
-Give charcoal smoke for 2 minutes.
-Let it cool.
-Chop coarsely with the help of knife & set aside.
Prepare Red Sauce: 01:13
-In a saucepan,add cooking oil,onion & mix well.
-Add garlic,mix well and sauté until onions are translucent.
-Add tomato puree & mix well.
-Add salt,cumin powder,black pepper powder,red chilli crushed,chicken powder,dried oregano & mix well.
-Add water & mix well,cover & cook on low flame for 5-6 minutes & set aside.
Prepare White Sauce: 02:09
-In a saucepan,add butter & let it melt.
-Add all-purpose flour & whisk well for a minute.
-Add milk & whisk well.
-Add black pepper powder,chicken powder,dried oregano,salt,mix well & cook until thickens (2-3 minutes) & set aside.
Assembling: 02:40
-In a baking dish,add & spread prepared red sauce,place lasagna sheets then add & spread red sauce.
-Add chicken,spread prepared white sauce,cheddar cheese,mozzarella cheese,capsicum,onion & dried oregano.
-Add lasagna sheets,red sauce,smoky chicken,white sauce,lasagna sheets,red sauce,cheddar cheese,mozzarella cheese,sprinkle dried & red chilli crushed on top.
Baking in Pot: 03:23
-In pot,add 1 pack of salt,place steamer rack/wire rack (minimum 2“high) and preheat on medium flame for 15 minutes.
-Place prepared lasagna,cover and bake on medium flame for 12-15 minutes.
Baking in Oven:
-Bake in preheated oven at 180 C for 20-25 minutes.
-Cut in slices & serve!

Chicken Lacha Paratha
Recipe in English:
Ingredients:
Chicken Filling:
-Kisan Sunflower Cooking oil 2-3 tbs
-Zeera (Cumin seeds) 2 tsp
-Adrak (Ginger) crushed ½ tbs
-Lehsan (Garlic) crushed 1 tbs
-Tamatar (Tomato) chopped 2 medium
-Pyaz (Onion) chopped 1 medium
-Hari mirch (Green chillies) 3
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp
-Dhania powder (Coriander powder) 1 tsp
-Garam masala powder 1 tsp
-Soy sauce 2 tbs
-Lemon juice 1 tbs
-Chicken qeema (Mince) 500g
-Hara dhania (Fresh coriander) chopped handful
Prepare Dough:
-Fine Atta (Fine flour) sifted 2 & ½ Cups
-Maida (All-purpose flour) sifted 1 Cup
-Namak (Salt) 1 tsp or to taste
-Dahi (Yogurt) ¼ Cup
-Water 1 & ¼ Cup or as required
-Kisan Banaspati 1 tbs
-Kisan banaspati 2-3 tbs
-Kisan banaspati ½ tbs
-Kisan banaspati ½ tbs
-Kisan banaspati 2-3 tbs
-Anda (Egg) whisked 1-2
-Mozzarella cheese grated
Directions:
Prepare Chicken Filling:
-In a wok add cooking oil, cumin seeds & mix well.
-Add ginger, garlic & mix well for 30 seconds.
-Add tomatoes, mix well & cook for 2 minutes or until tomatoes are soft.
-Add onion, green chillies, mix well & cook for 2-3 minutes.
-Add salt, red chilli powder, coriander powder, garam masala powder, soy sauce, lemon juice & mix well.
-Add chicken mince, mix well & cook for 3-4 minutes.
-Add fresh coriander & mix well.
-Mash the mixture with the help of masher & cook on high flame until it dries up (2 minutes).
-Let it cool completely.
Prepare Dough:
-In a bowl add fine flour, all-purpose flour, salt & mix well.
-Add yogurt, gradually add water, mix well & knead until dough is formed.
-Add ghee & grease the dough with it, cover & let it rest for 15 minutes.
-Add ghee in a tray & spread evenly with the help of brush.
-Grease hands with ghee,take a small dough (130g), make a smooth ball & place on ghee greased tray. Brush ghee over the dough balls, cover with cling wrap & let them rest for 10 minutes.
-Grease the dough mat with ghee, place a dough ball & with the help of greased hands spread evenly in round shape.
-Add & spread ghee then sprinkle flour on it & cut the dough in stripes with the help of cutter.
-Gather all layers together and stretch slightly then roll & twist the dough into a ball.
-Cover with a cotton cloth & rest for 15 minutes.
-Grease hand with ghee and press gently with both hands to spread the dough to make a paratha.
-Heat griddle, add ghee & let it melt.
-Place paratha and fry on medium low flame. Flip the paratha, add & spread whisked egg over it.
-Spread prepared chicken filling on one side, add mozzarella cheese & flip the other side of paratha over it. Press gently & cook from both sides until golden & crispy (makes 10).
-Serve with dahi, achar or salad!

-Chicken qeema achi tarah mix karen or 3-4 minutes tak pakayen.
-Hara dhania daal kar mix karen.
-Mixture ko masher ki madad se achi tarah mash karen aur tez ancch per sukh janay tak paka lein.
-Thanda ker lein.
Prepare Dough:
-Bowl may fine atta, maida, namak daal kara chi tarah milayen.
-Dahi or gradually pani daal kar mix karen or ghond ker dough tayyar ker lein.
-Ghee daal kar dough ko grease karen or dhak kar 15 minutes tak rest den.
-Aik try may ghee daal kar brush se spread karen.
-Dough k balls bana kar (130g) greased tray may rakh kar 10 minutes tak k liye dhak den.
-Dough mat ko ghee se grease karen, dough ball rakh kar hathon ki madad se phela len. Ab ghee daal kar phelayen or flour charak kar cutter ki madad se stripes kaat len.
-Layers ko gather kar k stretch karen or fold kar k paira bana len. Cotton cloth se dhak kar 15 minutes ka rest den.
-Hathon ko ghee se grease kar k dough ball ko phela kar paratha bana len.
-Tawa garam karen or ghee daal kar melt karlen.
-Paratha daal kar medium flame par senk len, paratha ko palat kar whisked anda daal kar phela len.
-Aik side par chicken filling or mozzarella cheese daal kar paratha ki dusri side ko is par flip kar den. Dono taraf se achi tarah senk kar utar len (makes 10).
-Dahi, achar or salad k sath serve karen!
