Gluten-Free Angel Food Cake:
2 1/4 cups egg whites, about 18 eggs
2 teaspoons lemon juice
1 1/8 cups Sucanat or sweetener of choice
1 1/8 cups rice flour
6 Tablespoons arrowroot flour
3/4 cup Sucanat or sweetener of choice
Beat the egg whites and lemon juice until frothy.
Gradually add the 1 1/8 cup Sucanat and continue beating until stiff peaks form.
Preheat oven to 375º.
Combine remaining ingredients.
Add dry ingredients by sprinkling about 1/3 cup over the top of the egg whites and briefly blending (I use the jog function on my mixer). Repeat until all the dry ingredients have been added.
Use a rubber spatula to gently fold until it is just mixed.
Gently pile the batter into an ungreased tube pan.
Level off the top and 'slice' it in a few places with your spatula or a knife. It will completely fill back in and that is fine.
Bake for 35 to 40 minutes or until the top is golden brown and the cake is firm yet springy to the touch.
Invert to cool thoroughly before removing from the pan.

Commercially, lamb bacon is expensive, but you can make your own with very little effort! Learn our preferred method for making homemade lamb bacon!
The cure for 2 pounds lamb belly is:
3 T sea salt
2 T Sucanat
1 T ground black pepper
1 t rosemary
1/8 t cinnamon
1/4 t cloves
1/4 t nutmeg
1/4 t allspice

How To Make Lamb Ham & Homemade Ham Lunchmeat
Never heard of lamb ham? I hadn't either, but it is easy to make following the same method as making ham from a pork leg and it tastes delicious!
The cure I used:
1 cup salt
1 1/4 cups Sucanat
2 teaspoons pepper
1/2 t cloves
1/2 t nutmeg
1/2 t allspice
1 t cinnamon
1 Tablespoon rosemary
3-4 quarts water, for a wet cure

How to Make Lamb Sausage: for Single Meal or Bulk
Join me as we make lamb sausage! I’m making 10 pounds of patties today, but you can easily use this recipe to make a single pound or to make sausage links.
Lamb Sausage Recipe:
1 pound ground lamb
1 Tablespoon Sucanat
3/4 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon cinnamon basil, can substitute Italian basil
1/4 teaspoon thyme
1/8 teaspoon black pepper
Use hands to mix very thoroughly.
