Dis too good to be true ? 🤤🥒🌶️ NOT !! As much as I am pro eating cucumbers in the summer, there’s no way I’m not also having this on my #Christmas table. Spicy, salty, tangy, sweet - umami cucumbers from my ♥️ to Yours. For the sauce: I eyeball everything, but in this video I mixed approx 2 tbsp of sugar with 1/4 cup of water + 3 tbsp of fish sauce + few tbsp of tamari + a splash of Kecap Manis (sweet dark soy sauce) + a splash of rice vinegar + 3 tbsp of toasted sesame seed oil + Sechuan peppercorns, crushed + chilli flakes + 2 garlic cloves, crushed. Mandarin tuille recipe ⬇️🍊 Love this tuille recipe! It’s really almost foolproof 😅 First peel a couple of mandarins and let the peels dry at 60 degrees Celsius. Then blend the peels till it’s a fine powder. Now mix 60 grams of egg white together with 10 grams of butter, 50 grams of sugar, 50 grams of flour, 2 grams of salt and 40 grams of neutral oil. Blend this till smooth. Then transfer it on a silicon mold and spread it. Eel broth jelly recipe 🔥⬇️ Recipe: First clean 4 shallots and chop them. Then glaze the shallots on a medium heat. Meanwhile cut the trimmings from one eel in smaller pieces and add them to the pan. Pan fry it on a medium heat and then deglaze the pan with one liter of fish stock. Also add 2 bay leaves and then let it simmer for at least 3 hours. Then pass the broth through a fine sieve and reduce it till the desired flavor. Meanwhile use a ladle to remove any fat. Now soak 1 leaf or 1.6 grams of gelatin in cold water. Meanwhile mix 150 grams of the eel broth with 1 gram of agar powder and bring it to a boil for 1 minute. Then spray a thin layer of oil spray on two metal trays. Once the liquid has boiled dissolve your gelatin and pour 65 grams of the jelly on each tray. Use a blowtorch to remove any air bubbles. Then let the jelly set in your fridge. Now cut half a vanilla pod in half and scrape out the seeds. Add the seeds to the saucepan and bring it to a boil. Then turn off the heat and dissolve the gelatin.
