Halloween is almost here so I have some keto halloween recipes for you. If you are having a halloween party this weekend and are looking for some keto party food to make, this video is for you.

KETO CAKE POP RECIPE???? You betcha! Any time my kids go to Starbucks with me, they always beg for a cake pop. Occasionally, I will cave and buy one but I wanted to make them an alternative keto version that is gluten free and sugar free. They keto cake pop are easy to prepare. I used the leftover keto cake from my spice cake earlier this week.
When I make keto cakes, I will make up extra cake or save the cake from cut out the perfect circle layer and use that for my cake pops. Just store the cake in a ziploc bag in the freezer and unthaw when you are ready to make keto cake pops.

KETO CAKE POP RECIPE
Leftover keto cake (about 4 cups)

Keto buttercream frosting
8 oz unsalted butter
2 tablespoons confectioners Swerve (or sweetener of choice)
2 teaspoons vanilla
12 oz cocoa butter
½ cup confectioners Swerve
1 teaspoon vanilla
Crumble the keto cake into a bowl. Add Keto buttercream frosting. Mix until combined using your hands or electric mixer.
Roll the mixture into 1-inch balls. Place a stick or straw into the ball. Chill in the refrigerator for 1 hour or freezer for 30 minutes.
For the candy topping, melt the cocoa butter in the microwave at 30 second intervals until melted. Mix in the powdered Swerve and vanilla.
Dip the cake pop into the candy topping mixture and place upright into homemade cake pop holder contraption. (See video)
Refrigerate or freeze until candy coating has hardened. Dip 1-2 more times in candy topping mixture. Cool after each dipping. It’s okay reheat the candy topping if it cooled at room temperature.
Drizzle coating for the bandages and use sugar free chocolate chips as the eyes.

One of my favorite keto desserts to enjoy in the Fall and holiday season is a Spice Cake. I have a Keto Spice Cake with Keto Cream Cheese Frosting for you to devour. The keto cake is moist, fluffy and has the perfect amount of Fall spice. The keto frosting is creamy. It’s the perfect combination if you are looking for a Fall keto cake or a keto dessert to serve for Thanksgiving.
For this keto spice cake recipe, we start by browning butter in a skillet and then adding our spice mixture. This helps to intensify the aromas in the spice cake. We also add fresh ginger and molasses extract for an extra punch of spice and flavor to the keto cake.
The best part is you can save some of the prepared cake and use them to make keto spice cake pops!

KETO SPICE CAKE
4 tablespoons butter
1 tablespoon ground cinnamon
¾ teaspoon ground cardamom
½ teaspoon allspice
½ teaspoon ground cloves
¼ teaspoon nutmeg
1 ¾ cup almond flour
½ cup coconut flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 eggs
3 egg yolks
1 teaspoon vanilla
12 tablespoons unsalted butter, softened
1 cup Swerve
½ cup golden monkfruit sweetener (Lakanto brand) or Golden Swerve
½ teaspoon molasses extract
1 tablespoon freshly grated ginger or ½ teaspoon ground ginger
½ cup buttermilk or plain yogurt
Preheat oven to 350. Grease three 6” cake pans and add a circle of parchment paper on the bottom. Set aside.
Mix spices together and set aside. Reserve ½ teaspoon of spice mixture for the frosting.
In a skillet, melt the butter over medium heat until melted. Continue to cook until the butter starts to brown and has a nutty smell. Add the spice mixture and cook while stirring for about 15 seconds. Remove from heat and set aside to cool.
Whisk together almond flour, coconut flour, baking soda, baking powder, and salt in a bowl. Set aside
In a small bowl, whisk together the eggs, egg yolks and vanilla. Set aside.
In a large bowl, add butter, Swerve and golden monkfruit, and molasses extract. Mix together until combined. Add the cooled butter and spice mixture, ginger and half of the egg mixture. Mix together until combined. Add remaining egg mixture and mix until combined.
Mix in flour mixture, little by little. Add in buttermilk and mix until combined.
Transfer batter into prepared pans, filling about ¾ of the way full. Lightly tap the pan against the counter to dislodge any air bubbles.
Bake for about 25-30 minutes. Cool on a wire rack.
KETO CREAM CHEESE FROSTING
5 tablespoons unsalted butter, softened
1 ¼ cup confectioners Swerve
8 ounces cream cheese, softened
½ teaspoon vanilla extract
½ teaspoon of reserved spice mixture
Combine all ingredients and beat until smooth and fluffy. About 5-7 minutes.

My all time favorite pumpkin treat at Starbucks (besides the Pumpkin Spice Latte) is the Pumpkin Scone. OMMMGenius! It is soft and pumpkiny on the inside and the glaze...the glaze, well I could just scrape that off with my teeth and eat it. It’s sooo good. I’m sure there are about 60 grams of carbs in one of those pumpkin scones, so it’s off limits.
But I decided to make my own Keto Pumpkin Scone with pumpkin spice glaze. This is actually a keto pumpkin ginger scone, but if you aren’t a fan of ginger, you can always leave that out. This keto scone recipe is perfect for those chilly mornings when you want a hot coffee and sweet pumpkin treat for breakfast. These low carb scones are great for any meal. In fact, I had one of these keto scones for dinner the other night.
KETO PUMPKIN GINGER SCONES
1 cup almond flour
½ cup coconut flour
2 tablespoons Swerve
½ teaspoon salt
½ teaspoon ginger powder
2 teaspoons baking powder
½ teaspoon baking soda
4 tablespoons cold unsalted butter, cubed
½ cup pumpkin puree
¼ cup buttermilk or heavy cream
2 tablespoons ChocZero Maple Syrup (or other sugar free syrup or extra buttermilk/heavy cream)
Preheat the oven to 400 degrees.
Add dry ingredients to a food processor and pulse until combined. Add butter and pulse until it is a cornmeal consistency.
In a separate bowl, combine the pumpkin, buttermilk, and syrup. Add to dry ingredients. Pulse until a dough ball forms.
On a lightly floured surface, mold the dough into a rectangle about ½ to ¾ inch thick. Cut into triangles and place on a parchment lined baking tray.
Bake for 12 to 15 minutes until lightly browned. Cool on a rack.
KETO PUMPKIN SPICE GLAZE
½ cup confectioners Swerve
2 tablespoons heavy cream
1 tablespoon water
½ teaspoon vanilla or maple extract
½ teaspoon pumpkin pie spice
Mix all ingredients together and drip over cooled scones.
MACROS per scone (makes 12 scones) without glaze

This first episode, I share easy keto meals using ground beef. There are three keto recipes using ground beef that you can enjoy all day long or over multiple days. I show you how to make a keto taco salad, keto burger bowl, and keto mexi eggs. For the keto taco salad, I show you how I make my own taco seasoning for the taco meat. I also show you how to make an easy keto Thousand Island dressing for the Big Bac Burger Bowl.
KETO THOUSAND ISLAND DRESSING
½ cup mayonnaise (regular or avocado)
2 tablespoons sugar free or low sugar ketchup
1 tablespoon vinegar (white or apple cider)
1 teaspoon Swerve or sweetener of choice
1 tablespoon minced up dill pickle
1 teaspoon white onion, finely
Pinch of salt & dash of pepper
Mix everything together. Can be made ahead of time and stored in refrigerator for up to a week.
KETO TACO SEASONING
1 Tablespoon chili powder
1 ½ teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
½ teaspoon paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon crushed red pepper
¼ teaspoon cayenne pepper
¼ teaspoon oregano
Mix together.

It’s October, so if you are a die hard pumpkin fan like I am then you are eating pumpkin at almost every meal. My favorite keto pumpkin breakfast recipe is pumpkin spice pancakes. These keto pumpkin pancakes are some of the fluffiest keto pancakes you will ever have! Plus keto pumpkin pancakes are easy to make. Throw everything into a blender, pulse and pour on your griddle! Great for when you are short on time and craving a low carb pumpkin pancake.
Top your keto pancakes with whipped cream or some sugar free syrup and yum it!! You could probably have the keto pumpkin pancakes for dessert too….which I’ve done before.
KETO PUMPKIN PANCAKE RECIPE
½ cup coconut flour
¼ cup Swerve or sweetener of choice
2 teaspoons baking powder
3 eggs
4 oz cream cheese, softened
½ cup pumpkin puree
⅓ cup heavy cream
Blend everything together and pour. Cook these keto pumpkin pancakes like a normal pancake.

PART 2: Easy Keto Dinner Recipes using a Rotisserie Chicken
When you are short on time, consider using a rotisserie chicken from the grocery store to make some easy keto dinner meals. These keto chicken taquitos can be made with just a few simple ingredients - many of these you may already have on hand. So on your way home from work, pick up a rotisserie chicken from the deli and you’ll have a keto dinner on the table in minutes.
These keto taquitos are made using low carb tortillas. If you are trying to be gluten free as well, try coconut wraps. They are gluten free and keto friendly. I use coconut wraps by NuCo and purchase mine from Thrive Market.
KETO CHICKEN TAQUITOS RECIPE
3 cups rotisserie chicken
8 ounces cream cheese, softened
1 -2 cups chopped spinach
2 cups shredded cheese
⅓ cup sour cream
¼ cup salsa
Low carb tortillas or coconut wraps
Avocado oil for frying
Mix ingredients together. Roll with a tortilla or coconut wrap and fry in hot avocado oil until browned. Remove from pan and place on paper towel to dry.

Scoop into 1 inch ball and place on a parchment lined baking tray about 1-2 inches apart. Press down with fingers. Bake at 325 for 12 minutes until starting to brown.
Let cool on baking tray for 2 minutes before transferring to a wire rack.

Pumpkin everything season is in full effect and this keto pumpkin recipe is one you can make when you are having pumpkin cravings while on your low carb diet. Keto pumpkin mug cake can be made in minutes! So you don’t need to give into pumpkin temptations when you are on the keto diet. When you make mug cakes, you generally make them for one serving, but you can always double or triple the recipe to serve more or have some keto pumpkin cake leftover.
KETO PUMPKIN MUG CAKE
2 tablespoons almond flour
1 tablespoon coconut flour
2 tablespoons Swerve or sweetener of choice
½ teaspoon baking powder
½ teaspoon pumpkin pie spice
Pinch of salt
2 tablespoons butter, melted
2 tablespoons pumpkin puree
½ teaspoon vanilla
1 egg
Mix together dry ingredients in a bowl or mug.
Add in wet ingredients and mix until combined.
Stir in egg and mix until just combined.
Pour into greased ramkin or mug.
Microwave for 50 - 75 seconds until cake is firm on top.
Enjoy.

It is a bulletproof coffee version as I throw in some MCT oil and butter or you can use heavy cream.
No need to go to Starbucks or Dutch Bros, or where ever you go for coffee and lattes. You can make this Keto Pumpkin Spice Latte right at home in minutes.
KETO PUMPKIN SPICE LATTE RECIPE
2 cups coffee of your choice
2 tablespoons unsalted butter or 4 tablespoons heavy cream
1 - 2 tablespoons MCT oil
1 tablespoon Swerve or sweetener of choice
4 tablespoons pumpkin
½ teaspoon pumpkin pie spice
½ teaspoon vanilla
Mix everything up using a frother or blender.
