RECIPES

(use the same recipe just cut the bread into slices)
Curry Tofu Scramble -
1 block extra firm tofu (drained)
1 tsp turmeric
1/2 tsp cumin, paprika, salt
1 tbsp nutritional yeast
1 carrot chopped
1 zucchini chopped
3 cups broccoli
1/2 onion chopped
1/2 cup green peas
1/2 bell pepper chopped
1 tomato chopped
Saute veggies (all except peas and tomato) in water over medium heat and cover for 5 minutes. Take off the lid, add in your spiecs and tofu, peas and tomato and cover, and cook another 5 minutes. For the last 5 minutes take off the lid and let the rest of the water burn off. Enjoy by itself or with potatoes.
You can also add 1/2 tsp kala namak black salt if you want it to have more of an "egg" flavor this is the one i use - https://amzn.to/3qpGhM5
Tex-Mex Potato Bake
4 yellow potatoes chopped into 1/2 in pieces
2 cups mushrooms chopped
1/2 red bell pepper chopped
1/2 onion chopped
1 cup frozen corn
1 can black beans rinsed and drained

sauce ingredients
1 tbsp tomato paste
1-2 tbsp water
1/2 tsp chili powder, paprika, garlic salt, and cumin
(optional 2-3 tbsp canned peppers in adobo sauce)
First preheat oven to 400 degrees. Then mix together your sauce ingredients. Add in your potatoes into a 9x9 baking pan and toss in sauce. Add in the rest of your veggies, corn and black beans and toss well. Cover with tin foil and cook 45 minutes. For the last 15 minutes take off the tin foil and let bake until the top is crispy.

Mushroom Gravy -
1/2 onion diced
4 garlic cloves minced
3-4 cups mushrooms chopped
1 cooked potato
1/2 cup unsweetened soy milk
2 tbsp tamari (soy sauce)
In a saucepan over medium heat add in your soy sauce, onion garlic and mushrooms, cover and cook until the mushrooms release their water (8 min). Add half of the mixture (or all if you want it to be really creamy) into a blender with your cooked potato and soy milk and blend until creamy. Add back into the pan with the rest of the mushroom onion mix and cook over low heat 3 more min.
Roasted Potato & Avocado Salad -
4 pre steamed potatoes (chopped)
1/2 avocado
4 cups spring greens
1 lemon wedge
1 tbsp coconut amigos
1 tsp garlic powder
In a large bowl add in your potatoes and toss in seasoning., Place in oven on 400 degrees for 20 min (or until brown) or in your air fryer on 380 for 15 minutes.
In a large mixing bowl add in your greens, avocado and the rest of the ingredients and mash together with your hands. Add any other chopped veggies you like and cooked potatoes on top.
Oil free chips & beans -
To make the chips take however many corn tortillas you want and cut into triangles (cut across in a pie shape 3x) add the juice of half a lemon and a pinch of salt and toss.
Place on a non stick sheet and cook on 400 degrees for 5 minutes, flip and cook on the other side until crisp.
In an air fryer place on 360 degrees for 15 minutes.
The best refried beans-
1 cup pinto beans soaked in water 24 hours
1 cup water
1 can diced green chilis, 1 tsp salt
In instant pot place your beans and the rest of your ingredients and cook for one hour on manual sealed. Once done, blend lightly with an immersion blender until creamy.

★Carrot Cake Oats
1 cup rolled oats
1 carrot shredded
2 cups water
2 tbsp maple syrup
3 walnut halves (chopped)
1/2 cup plant milk (I use soy)
1/2 tsp vanilla
dash of salt
Calories - 524 / Macros - 90g Carbs / 17g Protein - 12g Fat
In a large saucepan add your water, oats carrot, vanilla and salt and bring to a boil. Reduce heat to a simmer, cover and cook about 5 minutes or until the oats have absorbed all the water. Place in a bowl and top with walnuts, maple syrup and plant milk.

KALE CHIPS
1 HEAD KALE, DESTEMMED
Zucchini ranch
1 medium zucchini
3 tbsp hemp seeds
1 tbsp dry dill
1/2 tsp salt
1 tsp onion and garlic powder
Juice 1/2 lemon
1-2 tbsp water (add when blending)
Destem your kale and chop into smaller pieces in a big mixing bowl.
Blend your dressing and pour over the kale. Place on a dehydrator tray at 118 degrees for 24 hours.
Potato soup recipe

Refried beans
2 cups dry pinto beans, cover with water and let soak overnight or at least 10 hours.
Make sure after they have soaked they have about an inch of water on top. Add in a can of diced green chilis and cook 1 hour in the instant pot. Blend when done and add salt to taste.
Fajita veggies
1 red and 1 green bell pepper
2 cups mushrooms
1/3 medium onion
Slice veggies into strips, add into a big pan with 2 tbsp coconut aminos and 1/2 tsp smoked paprika, 1 tsp chili, powder, coriander and cumin.
Place pan on medium heat and put the lid on for about 5 minutes. Then once the water has released from the veggies take the lid off and turn the heat up to high and let water cook off.

Chocolate PB Banana Oats
1 cup instant oats
1 cup boiling water
1 tbsp powdered peanut butter
1 tbsp cocoa powder
1 ripe banana
stevia
splash of plant milk
Mash half your banana into a bowl, add oats, powdered pb, cocoa powder and stevia.Mix well and add in hot water. Mix again, top with the other half of the banana and a splash of plant milk.
Avocado cucumber rolls
1.5 cups cooked white rice
1/2 avocado, sliced
1/2 cucumber, julienned
2 sheets of nori
splash of seasoned rice vinegar
sesame seeds and soy sauce
2 cups steamed veggies for a side
Place half your rice on the nori sheet and spread over the sheet leaving 1/2 inch at the top. Add in half your cucumber and avocado. Get your fingers a little wet and dampen the top of the nori sheet (this helps it stick together).
Roll up tightly and repeat for the other roll. Cut into 8 rolls each and sprinkle with sesame seeds.
Serve with steamed veggies, and soy sauce

3 Bean Chili -
1 14.5 oz can crushed tomatoes
3 tbsp tomato paste
1 14.5 oz can kidney beans (drained and rinsed)
1 14.5 oz can pinto beans (drained and rinsed)
1 14.5 oz can black beans (drained and rinsed)
1 cup red lentils
3 stalks celery diced
1 medium white onion diced
2 medium carrots chopped
2 tbsp chili powder
1 tsp each, cumin, garlic powder, paprika
1 tbsp better than bullion (optional)
2 cups water
Combine all of your ingredients into your instant pot and cook on manual, sealed for 25 minutes and let it naturally release. For the stovetop place in a large saucepan, bring to a boil, reduce heat to a simmer, cover and cook 30 minutes. Place over baked potatoes, fries or rice. Potato cheese sauce is really good on top as well as green onions.

Smoothie bowl
3 frozen bananas
2 cups frozen berries
1/4-1/2 c water
1 cup fresh fruit for topping
1 tsp coconut flakes
2 tbsp granola
1 tbsp peanut butter
Blend bananas and berries by adding in the water first (you can also use plant milk) top with toppings.
631 calories / 128g carb / 12g fat / 11g protein
Quinoa Salad
1 cup cooked quinoa
1 tbsp italian seasoning
1 tsp garlic powder
1-2 tbsp coconut aminos
3-4 cups spring greens
1/2 avocado
1/6 of a lemon, 2 tbsp coconut aminos, garlic powder
2 cups veggies to top with
Mix together quinoa, seasoning and coconut aminos.
Add avocado, lemon, coconut aminos and garlic powder and mash into the salad. Place quinoa mix on the side and top with veggies.
412 calories / 60g carbs / 12g fat / 17g protein
Snack - any fruit 200-500 calories

Apple Oatmeal
1 large apple cut into small pieces
1/2 tsp cinnamon
1/2 cup oats (or more if you want)
1 cup water or water thats been steeped in your fav tea
1/4 cup soy milk
2 tbsp raw buckwheat and coconut flakes
2 tbsp maple syrup
Add apple into a pan over medium heat with a little water and cinnamon and cook 3-4 minutes. (steep your tea while you do this) Next add in your water and oats and cook another 7-10 minutes or until the oats are as thick as you like and the apples are soft. Place into a bowl and top with the rest of ingredients.
