Cheeseburger Soup
This recipe is from Unbound Wellness. I make it several times a year. It last for a few days in the fridge and makes a healthy lunch for the office or school.
I love Michelle's website for delicious meals that are also paleo, aip, and many times dairy free if those are things that are important to you.
Ingredients:
1 lb ground beef
1 tsp sea salt, divided
2 tbsp avocado oil
1 yellow onion, diced
2 cloves garlic, minced
1 cup carrots, shredded
4 stalks celery, chopped
1 medium white sweet potato, chopped (sub regular potato if tolerated)
5 cups chicken broth
1 cup coconut milk
1/2 tsp black pepper
1 tbsp nutritional yeast (add more to taste for a more cheesy soup)
3–4 slices of cooked bacon, chopped
1 tbsp parsley, chopped
Optional- compliant dill pickles (like this. Omit the peppercorn for AIP)
INSTRUCTIONS
Using a large soup pot, cook the ground beef on medium heat and lightly salt. Cook until browned and set aside, draining excess fat.
Add avocado oil to the same pot along with the diced onion and garlic and saute on medium heat until translucent. Add in the carrots, celery, sweet potato, parsley and saute for 5 more minutes or until slightly softened.
Pour in the chicken broth, coconut milk, salt, garlic, nutritional yeast, beef and stir to combine. Bring to a low simmer for 15-20 minutes or until the vegetables are tender.

Make 2 Weeknight Favorites with me.
Meatloaf and shepherds pie-make ahead weeknight favorite for a cozy winter night at home. Both recipes freeze well.
Meatloaf
3lbs ground beef
1 onion
chopped bell peppers
1 can diced tomatoes
salt and pepper to taste
1 sleave saltine crackers or gluten free bread crumbs
bake at 350 for about an hour until cook throughout
Shepherds Pie
Topping-Mashed Potatoes
-Boiled and mashed potatoes OR Instant potatoes
1 lbs ground beef
1 diced onion
1 can carrots
1 can peas
1 can corn
1TBSP worchestershire sauce
salt and pepper
1 cup water and beef boullion
*let meat mixture cool slightly before adding mashed potato topping
*bake to warm

Candied Pecans
These fast and easy candied pecans are a favorite in our house. They make great gifts for co-workers, neighbors and teachers.
Here is the recipe.
2 cups pecans
1 egg white
1 tsp vanilla
2/3 cups sugar
1/3 cup brown sugar
1 TBSP cinnamon
Bake at a low temperature (275-300) for about 30 minutes, flipping in between. Bake until completely dried.

"Sprucing" up faux garland
Do you love the scent of fresh balsam but like the convience of an artifical tree? One way to add that natural Christmas scent is to incorporate sprigs of pine into your decorations. In the past we had a couple types of pine trees, holly and blueberry juniper on our property that we would prune off some sprigs and use them to make door swags or just lay them on the mantle. If you don't have pine on your property, or a good friend who would be willing to let you cut a few sprigs than you could ask a christmas tree stand for their scraps. Many times they cut the bottoms of trees to fit the stand and toss the extra branches. Another option is to buy fresh garland and use the extra to tuck in the mantle or around the house.

Split pea soup
Split pea soups is a hardy seasonal soup. It is a great way to use up holidiay leftovers and beans from the pantry.
Recipe
1 tablespoon butter
1 tablespoon olive oil
3 celery stalks, diced
2 carrots, diced
1 small yellow onion, diced
3 cloves garlic, minced
6 cups low sodium chicken broth
4 cups water
1 bag (16 ounces) dried split peas
2 bay leaves
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and fresh ground black pepper, to taste
1¼ pound ham hocks or a meaty ham bone
INSTRUCTIONS
Heat olive oil and melt butter in a large pot or dutch oven set over medium-high heat.
Add chopped celery, carrots, and onions; cook for 4 minutes.
Stir in garlic and cook for 1 minute.
Add chicken broth and water.
Stir in split peas, bay leaves, thyme, and oregano; season with salt and pepper.
Reduce heat to low, cover the pot, and let simmer for about 1 hour and 15 m

Mid Summer Garden Tour-How's it Growing?
It's mid summer? How is our first year garden going? What is growing well and what can we learn? It was crunch time trying to get these gardens built and filled fast enough to get seeds planted. A few things I learned already that I will do differently next year:
1. the beds are filled with top soil. It was less expensive to get a large quantity of topsoil brought in vs garden soil and compost. I did put compost around the plants and used fish fertilizer but next year I will add some garden soil, compost and maybe even worm castings to each bed and mix in well.
2. Spacing-I had several open spaces that were not planted up because I did not have enough soil to completely fill one bed. That spot was more weed prone because soil does not like to be bare. Some plants I underestimated how big they will get. Next year, I will try to plan out spaces better. This year I was just trying to get things in the ground.
3. Tomatoes-Next year I'm going to put up a cattle panel trellis for my tomatoes to help keep them neat and tied up.

We have been anticipating the arrival of our first eggs. We got our chicks mid March and it's now July so they should be laying any day now. Some breeds will stary laying around 4 months and others a bit longer. We have 5 different breeds and I honestly don't know which is which. They have been a fun addition to our homestead.

Chicken Adventures VLOG Mini 3
Last week our coop was blown over and smashed in the high wind storm overnight. The new chicken coop arrived today. Thank you for praying. As it turned out chicken coops are covered under home owners insurance and we were able to get a replacement with no out of pocket expenses for us. This turned out to be a blessing in disguise.

Making Super Greens Powder at Home
Getting enough greens into your diet can be a challenge. You can buy a super greens mix from a health food store but they are expensive. You can make your own at home for a fraction of the cost using spinach, kale, collards, parsley, spring mix, turnip greens and even carrot tops. If you have a garden save some of your greens to dehydrate into a powder. You can also buy fresh organic collards or turnip greens at the grocery store for about a dollar. The advantage to making a greens powder is that it lasts for a long time and is shelf stable. I don't know about you but I've been guilty of leaving vegetables in the bottom of my fridge for too long and they go bad before I get a chance to eat them. This is one way to eliminate waste while building your pantry storage. Some of the best ways to use the powder is to sprinkle on a salad, add to dips and salad dressing, mix in a smoothie, add to tea or water and drink a shot, mix in scrambled eggs to make green eggs and ham for your kids, add to soups or sprinkle in a sandwich.
In this video I am using the Excalibur food dehydrator. I absolutely love it and use it much more than I thought I would when I bought it. It is a work horse and well worth the money. There are others on the market to choose from. If you do not have a food dehydrator you can dry them in your oven on a very low temperature, about 200 degrees. Make sure you keep an eye on them so they don't burn.
I apologize for the low volume in this video. One of my children was sleeping on couch and I was trying to be quiet and not wake them but I didn't want to miss out on recording a video while I was making my greens. I appreciate your patience as I am still learning the tips and tricks for making and editing videos by myself with no fancy equipment.

Candied Pecans
Candied nuts make a great Christmas gift for neighbors, teachers or anyone who you want to bless with a sweet treat that says I was thinking of you. Make an extra batch for yourself but be careful not to eat them all at once.
Recipe
1 bag whole pecans (or almonds)
1 egg white
2 TBSP water
2 TBSP pure vanilla extract
1 cup sugar
1TBSP cinnamon
Mix egg white and water together. Whisk until frothy. Add vanilla. Pour over nuts and mix together so each one is covered. Mix cinnamon and sugar together and pour over nuts covering each one. Pre-heat oven to 200 degrees. Line a baking sheet with parchment paper and spread nuts out evenly over tray. Bake in the oven of low heat for an hour, stirring every 15 minutes. Let cool. Package them up in a mason jar with a pretty bow or holiday fabric.

Maple bacon brussel sprouts
I had this at a Christmas party and it was so good I had to ask for the recipe. The maple syrup (which I forgot to film) and bacon takes the bitterness out of the brussel sprouts. I used turkey bacon because it's what I use and had on hand. I do recommend using regular bacon because the bacon grease adds an extra flavor element. The recipe is not exact. You can add more or less of each ingredient but here is a guideline.
Recipe
1 LB brussel sprouts
6 -8 strips bacon
2 TBSP avocado oil
2 TBSP maple syrup
sprinkle of salt and pepper
Bake at 400 for 25-30 minutes, mix about halfway through
