Such a perfect lunch bowl! Some of you might not know what a “buddha bowl” is 🤷♀️ A buddha is a cold vegetarian served bowl with several foods in it! It is packed with protein and it’s deliciousss 🤓♥️
Ingredients (1 serving):
- 40 gr cooked quinoa
- little hand of spinach
- 60 gr mushrooms
- 35 gr chickpeas
- 40 gr fine green beans
- pumpkin seeds
- hemp seeds
- olive/coconut oil
- salt + pepper
Hummus:
- 20 gr (uncooked) beetroot
- 1 tsp olive oil
- lemons juice
- salt pepper
- 35 gr chickpeas
How?
1️⃣ cook your quinoa
2️⃣ put some oil into a pan and cook the mushrooms, beans and chickpeas with some pepper and salt.
3️⃣ meanwhile blend all the ingredients for the hummus together.
4️⃣ layeeerrr… (you can do it just like the picture or just grow everything into a bowl 🙂)

This is a super easy quick recipe you can make for breakfast/snack/lunch/dessert!! 🙌 I’m in love with this combo 💁🏽♀️ You just need to try it for yourself 👀
Ingredients (2 toasts);
- 2 toasts
- 1.5 tsp cottage cheese
- 1 big tsp yogurt
- splash plant milk
- 1 tsp cocoa powder
- little bit sirup/honey
Toppings:
- fruit (blueberries)
- nuts (hazelnuts)
How?
1️⃣ mix ingredients for cheesecake filling.
2️⃣ pressure into the bread. Fill with the filling.
3️⃣ top with toppings. Bake for 15 minutes on 180°.

Ingredients (6 servings):
Dough:
150 gr spelt flour
Pinch salt
25 gr coconut oil
50/70 ml water
Apple mix:
2 apples
8 gr coconut sugar
1 tsp honey/sirup
Cinnamon
Topping:
Plant milk
Coconut sugar
Cinnamon
How?
1️⃣ mix the ingredients for the dough together, roll out the dough as thin as possible, cut out squares.
2️⃣ mix ingredients for the apple mix together.
3️⃣ layer. Put 1,5 spoon (per square) of the apple mix on top of the dough. Fold. Use a fork to fix it.
4️⃣ sprinkle the toppings on top and bake for 25/30 minutes on 180°.
