Spiced Oatmeal Pancakes

RECIPE:
Pancakes:
1/2 cup regular rolled oats or oat flour
3/4 cup white whole wheat flour
1 1/2 tsp baking poowder
1/2 tsp apple pie spice, pumpkin pie spice, or ground cinnamon
1/8 tsp salt
2 eggs, lightly beaten
1 cup milk
2 Tbsp canola oil
Plum topper:
2 Plums (substituted for apricots)
1 cup seedless red grapes, halved
1 Tbsp honey
1/2 cup pomegranate juice (substituted for cranberry juice)
1/4 tsp cinnamon

Chicken Casserole
Hey all! This is a recipe of my own creation! If the instructions don't seem very clear, that's because I was figuring it out as I was making it!
Recipe:
3 lbs chicken
White wine
Salt
Pepper
Garlic Powder
Onion Powder
Thyme
1-2 bags of brussel sprouts
A handful of craisins
Goat cheese
1 Apple
Up to one can coconut milk
Up to 1 T maple syrup
Preheat oven to 400 F
Salt chicken an hour before cook time then refrigerate. Combine pepper, garlic powder, onion powder, and thyme. While the chicken is salting, prep other ingredients. Chop apples and brussel sprouts as finely as possible. Once chopped, combine with all other ingredients except chicken and seasonings. Once chicken is done salting, chop into smaller pieces and cook with wine on stovetop until lightly browned (~5 minutes?). Add all other seasonings at this point. Once the chicken is cooked, add to the rest of the casserole mix. Pour casserole into a casserole pan and bake for 40 minutes.

Potato Kugel
Hey all! I'm back and on my new schedule!!!! Hope you all had a Merry Christmas and a Happy New Year!
Recipe:
4 cups potatoes
6 Sprigs of Parsley
1 large onion
3 eggs
1 1/2 tsp salt
1/4 tsp pepper
1/3 cup flour
1/4 cup melted butter
Put raw potatoes, parley and onion threw grinder using fine disc (you can use a food processor for this part). RInse in colander to remove excess potato starch. Drain well. Beat eggs and add seasoning, flour and melted butter. Beat until smooth. Mix batter with ground up potato-onion-parsely mix and put into 1 1/2 quart casserole. Bake at 350 degrees fahrenheit for 1 hour or until brown. Serve hot.

Pumpkin Muffins:
1 1/4 cups all-purpose flour
3 teaspoons pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 cup pumpkin puree
1/2 cup brown sugar

1/4 cup melted coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
Elderberry Glaze:
1/2 cup powdered sugar
1 tablespoon elderberry syrup
water to thin out the mixture (optional)

RECIPE:
1 package of Maria biscuits (that’s what we use in Brazil. You can use graham crackers if it’s easier)
½ cup of milk
For the white cream:
1 can of condensed milk
1 teaspoon of cornstarch
1 can of whole milk (use the condensed milk can to measure it)
2 egg yolks
For the chocolate cream:
1 can of condensed milk
1 teaspoon of cornstarch
4 tablespoons of cocoa powder (if you think it will be too dark, you can reduce it to 3 or 2 tbsp)
1 can of whole milk (use the condensed milk can to measure it)
2 egg yolks
PREPARATION:
In a bowl, add the milk and soak the biscuits. Set it aside.
For the white cream:
Bring all the ingredients to medium heat in a pan and mix until you get a thick and creamy consistency.
For the chocolate cream:
Bring all the ingredients to medium heat in a pan and mix until you get a thick and creamy consistency.
Assembling:
In a large Pyrex, layer half the white cream, half the wet biscuits, and half the chocolate cream. Repeat the same process until you have the second half of the chocolate cream on top. Refrigerate for a few hours. If you want, you can grate some chocolate on the top.
