This is my take on a sandwich I had recently at Jam's Deli in Greensboro, NC. They call it the Chicken-am sandwich. This is such an simple dish you can do on a weeknight or weekend and will still impress folks! This beef and broccoli Chinese dish is a winner! Enjoy! #blackstonegriddle #chinese #beefandbroccoli INGREDIENTS 3 tablespoons cornstarch, divided 1⁄2 cup water, plus 2 tablespoons water, divided 1-2 garlic cloves 1- 1.5 lbs flank steak cut thinly, against the grain 2 tablespoons oil (whatever you like, I used clarified butter and sesame seed oil) 4 cups broccoli florets 1 small onion, cut into wedges 1 cup bell pepper 1⁄3 cup reduced sodium soy sauce 2 tablespoons brown sugar 1 teaspoon fresh ground ginger Jasmine Rice DIRECTIONS In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and minced garlic until smooth. Add beef and toss. Get Blackstone or wok smoking hot, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm. Careful don't over cook as you'll cook more later on with the veggies. Stir-fry broccoli and onion in remaining oil for 4-5 minutes. Return beef to pan. Combine soy sauce, brown sugar, ginger and remaining cornstarch and water until smooth; add to the pan. Cook and stir for 2 minutes. Serve over rice. Do you have left over mashed potatoes in your fridge? You know, those ones in the back corner. Yeah, those. Get them out, throw some flour, cheese, onion, eggs, salt, and pepper and cook them! This is how I do potato cakes with left over mashed potatoes! 2 cups left over mashed potatoes 2 eggs 1/4 cup flour 1/4 cup onion 2-3 chives cut 1/4 cup cheddar cheese (you can use your favorite) Mix ingredients well, and fry in a pan or Blackstone about 3-4 mins a side in some bacon grease. While at a cooking event last weekend, my little girl won some smoke wood chunks from Rockwood (Saint Louis Charcoal Company). We were camping all weekend and I honestly didn't feel like cooking, but she did! So why not. I had some leftover meat from a pork shoulder I fixed at the weekend, so I dusted the meat with some Jim's Own Smokey rub, and cooked it on the large Big Green Egg along with some potatoes. For the past three years, a few Egghead forum members have organized a gathering where we meet up, cook, eat, and fellowship. This year, was one of the best by far! Friday night started off right with Mike Hollis getting a whole hog on for an all night smoke on his Shirley cooker. After getting the pig on, the shenanigans started. Some good eats were sure to follow with John making some awesome pizzas from his Rocbox setup. Amazing unit. Myself made tacos al pastor from a Snake River Farms shoulder. Shoulder was marinated in a al pastor sauce, grilled the shoulder meat on a Big Green Egg, then removed, chopped, then crisped up on the Blackstone griddle. If you're cutting carbs and wanting rice or in this instance, fried rice, this recipe is for you! Ingredients: 1 medium head cauliflower, rinsed 1 large egg pinch of salt 1-2 Tablespoons Olive Oil 1/2 small onion, diced fine 1/2 cup orange pepper 1/2 cup asparagus 1 -2 garlic cloves, minced 3 tbsp soy sauce, or more to taste Dash of oyster sauce DIRECTIONS: Remove the core and let the cauliflower dry completely. Coarsely chop into florets, then place half of the cauliflower in a food processor and pulse until the cauliflower is small and has the texture of rice or couscous – don’t over process or it will get mushy. Set aside and repeat with the remaining cauliflower. Heat Blackstone over med/high heat. Add some butter, then add cauliflower. Fry for 2-3 mins and then flip. Add butter and ollive oil on a seperate side, add onion, asparagus, and pepper. Saute until desired softness. Add garlic, and saute a min more then add to cauliflower Add soy sauce and oyster sauce, and turn to mix well on the Blackstone until nice and incorporated. Add more soy sauce if desired. Add the egg then remove from heat. I didn't have any, but scallions at this point would have been a great addition.
