Mountaindo told me to put the Turkey on the grill at 2:30 AM, she specifically stated that the TURKEY had to be properly cooked at 300 degrees. Hopefully I don't screw this up. Wish me luck. For the perfectly cooked Turkey here is our recipe 15 to 17 lb. pre-brined bird. Cook uncovered, breast up. Outside temperature for this meal was 38 degrees ( so adjust as needed ) Start out at 300 Degrees for 1 hour, then 250 Degrees for 2 hours, next 225 degrees for 2.5 hours or until internal temp of the meat reaches 172 degrees and the juice is clear. Turn off grill and let rest for 30 minutes. Bring in and cover with foil to prevent from drying out. We recommend using a wood pellet grill. I have never had a more tasty bird in my life. IT was perfect.

This is a real experiment. We have had rain for the past 2 days. We receive an annual rain fall of 96" of rain here in this part of the Smokey Mountains. In a follow up video ( once I get time I will go out in the rain and show you how to make a Survival Fire in the rain using FAT WOOD ) In survival I would say the most important skill set to MASTER is learning how to make a FRICTION FIRE with NATURAL materials. Had this been an actual emergency I would have made a second attempt in about 5 hours once the birch bark dried out in my pocket....or I would have wandered to the other side of the stream and found some FAT WOOD.
