SKILLET CHICKEN PARM!! FEED YOURSELF; RECIPES FOR NEW COOKS

Today I am starting a new series where I will be sharing quick and easy recipes for new cooks! This is brought on by the fact that both my daughters are starting their life journey with new jobs and serious beaus and their future is very bright! My oldest has great ability in the kitchen, my youngest, not so much. She is now figuring out that if she wants to eat she needs to know how to cook some simple but delicious things for herself. With that idea in mind, I am going to add some of those to the catalog. I am starting with this delicious, skillet chicken parmesan. A few ingredients, from the fridge and pantry can make this delicious meal in under a half an hour and it is so satisfying and comforting!
Keep in mind that I will be using store bought, off the shelf ingredients for this series because new cooks don't need to know how to make everything from scratch. They need to get inspired and encouraged through simplicity and that is what I intend to do. So if this is not your cup of tea, I completely understand but please give grace and understanding in this particular case because semi homemade is just as good as homemade when you are starting out! The scratch stuff comes later!

SOUTHWEST TURKEY CLUB WRAP! #SHORTS

The end of summer brings hot thick days that seem to go on forever, but even we can feel fall knocking at our door. On nights when you are tired this delicious southwest style turkey club wrap is just the ticket for a quick and delicious meal that won't heat up the kitchen. I used some tortillas, some lunch meat and veggies from the fridge, some pre cooked bacon that I crisped in the microwave and made a delicious spread with sour cream, cream cheese and taco seasoning. This made a delicious wrap sandwich that was filling and satisfying. Even Rick said we need to put this into the rotation! When you don't know what to make, go for a sandwich! This one will make you glad you did!

EASY CHEATER ENCHILADAS!! QUICK WEEKNIGHT MEAL IDEA!!
Today I have a fantastic cheater meal for you. This one gets on the table in just about a half an hour and boy is it a delicious people pleaser! These cheater enchiladas could not be any easier! Frozen taquitos make this super fast and sort of "cheater". These bake up so good! Pair with your favorite side for one delicious and quick weeknight meal for those crazy busy days that never seem to end!
We used some beef and cheese and some chicken and cheese taquitos. I used some canned red enchilada sauce on the beef taquitos and some canned green enchilada sauce on the chicken taquitos. Topped the red sauce with a Mexican blend cheese and the green sauce with some shredded mozzarella. If you have access to queso blanco then use that but in a pinch the mozz is boss.
These bake up in about 20 to 25 minutes in a 350 degree oven. I paired mine with a guacamole salad like you sometimes get on a combination plate at your favorite Mexican restaurant. I used some bagged shredded lettuce and some deli guacamole topped with some diced garden tomatoes. I added a dollop of sour cream to the enchiladas when serving but you could also sprinkle on some cotija cheese or green onions or all of the above! You make these however you and yours will love them!
NOTE: this concept is also wonderful using good quality frozen burritos or chimichangas. Those might take a bit more sauce but they do come out as a delicious smothered burrito or chimichanga. I promise they won't disappoint!
No shame in using some quality convenince items from time to time and this is one of those times that it feels good to put a delicious hot meal on the table instead of spending big bucks on take out!

NO BAKE PINA COLADA SQUARES!! ICEBOX DESSERT!!
Today I am pulling a recipe from the vault. This was shared back in 2015 and it is a great dessert for hot summer nights! This pina colada ice box squares recipe is super simple to throw together and boy is it packed with flavor! It has simple ingredients that you may already have on hand and it is family friendly but delicious enough to serve to guests after a delicious grilled meal! Graham cracker crust studded with toasted coconut topped with a creamy mixture of cream cheese, sweetened condensed milk, crushed pineapple and coconut then topped with even more delicious toasty coconut! This one is definitely a winner for anyone who loves the tropical combination of pina colada!

SPICY ITALIAN SUB SALAD!! DITCH THE BREAD, MAKE IT IN A BOWL!!
Love that sub but not the carbs? Make your sub into a salad and enjoy! Today we are making our favorite Italian sub but in salad form. This has everything but the bun and boy is this delish! This is inspired by the "Sub in a Tub" they make at Jersey Mike's but in the style of the Italian Night Club sub with extra "Vito meat" from Jimmy Johns! This is so easy to do at home and way cheaper than going out! Use what you have and make it the way you love your sub. That means this is a very subjective salad. We love this version, but you may love a different style. So be creative, use what you have and enjoy!
I am using some Genoa salami, sandwich pepperoni, ham, provolone and mozzarella cheese along with tomatoes, onions, pepperoncini, cherry peppers and sliced black olives. All tossed with finely shredded lettuce and our favorite Italian dressing. I have to tell you that this was so good Rick wanted to have it for supper the same night! It really is that delicious!
So give this sub into salad idea a try and make it your own! I am sure you and your family will love it! Remember you can always serve some rolls on the side for those who want to eat them.

Today I have a delicious sweet summer treat for you! This delicious, no bake, pecan cream icebox pie! This will be the warm weather, alter ego to your favorite holiday pecan pie. This is rich and delicious and creamy and nutty and it fulfills all your sweet treat dreams for those warm summer evenings! I promise this so simple and whips up together fast. The only thing that takes a bit, is waiting for it to chill! I know this will soon become a favorite for summer entertaining or anytime!
While you can make this in a blind baked pastry crust, I opted to do the graham cracker crust to make this totally no bake and I am glad I did. The graham crackers compliment the rich nutty filling perfectly and they work together well. I like to use the larger 10 serving graham cracker pie shell to get a nicer looking pie with the amount of filling that this makes. You can also make individual tarts with this filling if you get the graham cracker tart shells.
This starts with whipping some heavy cream with some powdered sugar, vanilla and maple extract until stiff peaks form. Then you will set that aside and beat some cream cheese until it is soft, light and fluffy and add brown sugar and salt. Then you fold the whipped cream mixture into the cream cheese mixture and fold in some chopped pecans. Pour that into your pie shell and smooth out. Top with more chopped pecans and today I am using some salted caramel pecan halves as well. Put the lid on your pie crust and chill for at least 2 hours. It was perfectly set after chilling for 5 hours and it came out in a beautiful clean slice!

SMALL BATCH SEAFOOD SALAD DELUXE!! PERFECT LIGHT SUMMER SUPPER!!
Today we are revisiting a recipe that I made a video for about 8 years ago. My seafood salad deluxe for a crowd is such a delicious meal in itself but I don't know about you, but I certainly don't need to make 6 pounds of salad for myself! So today I have reworked and reformulated the recipe to be a bit smaller but just big enough that you can easily meal prep for the week and have this on hand to take for lunches for a planned sandwich night dinner!

RUBEN DOG!! HOT DOGS OF SUMMER!!
Summer is in full swing and it's time to add to our Hot Dogs of Summer playlist with this beauty! We are taking your favorite, summer favorite hot dog and mashing it up with your favorite deli favorite, the Ruben sandwich! This one is a true keeper and when I say its delicious I am serious! I could not believe how amazing this combo was and I know you are going to love it!
I first boiled my dogs because they were frozen but if yours are thawed just toss them in the skillet with the amazing topping we make! That topping consists of some delicious, super thin corned beef from the deli that I just broke apart and shredded by hand. I tossed that in a hot skillet with some butter and allowed it to become warm. I am not trying to brown or crisp the meat. Then I tossed in my drained sauerkraut and mixed everything together and allowed that to sizzle so some of the moisture evaporated. I also tossed my hot dogs in the skillet and just pushed the topping over to one side of the pan. I like to brown my dogs in the butter just until they have a little color on them. This is not completely necessary. Just a personal preference. Now we build!
We used some delicious pretzel dogs but you can choose your favorite hot dog bun. If all you can find are pretzel burger buns, the split your dog down the middle so it's flat and build from there. I used some baby Swiss cheese and laid it on the bottom of the bun then nestled my hot dog in there and topped it with the frizzled corned beef and kraut. And because I believe that no self respecting Ruben would be caught dead without dressing, I drizzled on a generous portion of Thousand Island over the top!
This is a Ruben dog in all it's glory and I tell you that this is one of the most delicious things you will eat this summer should you choose to try it! I hope you do give this a try and i hope you love it!

3 LOW CARB DINNER SALADS!! SATISFYING & DELICIOUS!!
Nothing is better on a hot summer evening than a cool, delicious salad. Nobody wants to heat up the kitchen and these three salads are not only quick to make but are low carb to boot! Starting off with my favorite deluxe bacon cheeseburger salad, this one has turned into a family favorite to be sure! Full of all the delicious flavors of your favorite fast food burger, complete with that ever popular "secret sauce", I promise you won't even miss the bun! Next up is my delicious spin on a classic! Southwestern Cobb salad combines grilled chicken, fresh greens, a delicious roasted corn and bean salsa as well as some of your favorite salad veggies and all topped off with a smoky delicious honey chipotle vinegarette. This one is such a departure from the norm, but a refreshing one at that! Last but not least our Cali-Club salad! This is like a chef salad on sterioids! Everything you would expect from a club sandwich but without the bread! Greens, veggies, ham, turkey, cheese and bacon then topped off with a drizzle of my creamy bacon dressing! This one is a keeper for sure! I hope you give all of these delicious dinner salads a try during the long hot summer and beyond and I hope you love them!

3 PRESSURE COOKER COMFORT FOOD MEAL IDEAS!! QUICK & EASY!!
This week we are revisiting three of our favorite comfort food meal ideas all made in the pressure cooker! These all go together quick, are super easy to throw together and are all so delicious and comforting you and your family are going to love them! The beef and noodles is a favorite of my youngest and has slow cooked flavor like you worked hard all day tending to this tender beef stew! The creamy chicken and rice is a pantry pull blue ribbon winner! You can use canned chicken breast, rice and some cream of chicken or celery soup along with some seasonings to make this creamy and satisfying meal, serve with a side salad and steamed veggies and maybe even some cranberry sauce this is an amazing meal everyone will love! The Swiss steak is the perfect Sunday dinner with all those old fashioned flavors. Serve with mashed potatoes for full impact! These three are definitely going to be saved for future reference! I hope you give them all a try and I hope you love them!

Nothing says summer like a cool sweet treat! This time lets revisit three cool retro summer desserts that are appropriate anytime, but most loved as cool summer refreshment! A couple of these were actually called "salad" back in the day and even if that doesn't sit well with you, it's all good because these are delicious no matter if you serve them as a dessert, a festive side or as a take along to your favorite family get together! Classic Jell-O cake is easy and refreshing and a favorite in my family growing up and as my kids grew up. Ambrosia "salad" is a festive sweet and satisfying creamy dessert style salad that will help you get your retro on and last but not least the Watergate salad will not have you impeaching the cook, but actually praising them! These all employ simple, easy to find ingredients that may make you feel like you are living in the past, but trust me, these are a fantastic way to revisit that sweet, sweet nostialgia of summers gone by!

3 FAMILY FAVORITE CASSEROLES!! CLASSIC COMFORT!!
Today I am sharing three delicious, family favorite casseroles! These are tried and true, time tested and make everyone happy! Who doesn't love a comforting, creamy casserole? These are three of our famiy favorites! King Ranch Casserole is a delicious Tex-Mex casserole that is filled with creamy goodness, chicken, corn tortillas and cheese! My classic tuna noodle casserole is everything you would expect and served with our favorite side of stewed tomatoes mixed with green beans you have a seriously delicious and satisfying meal. Last but not least is my Amish style ham and noodle casserole! This gets its creamy base from sour cream and cream cheese. Add in some diced ham or even some chicken along with some frozen spinach and you have a wonderful spin on a noodle casserole. This one is topped with buttered bread crumbs for a crunchy spin! I hope you will give all of these casseroles a try sometime soon and I hope you love them!

SUGAR FREE 3 BEAN SALAD!! AN UPDATED CLASSIC!!
Today we are revisiting a classic favorite! Over the years I have shared a couple bean salad recipes but in our house we always go back to the classic three bean that we know and love! This is a favorite of Rick and myself and truth be told, if he had his drothers, this would always be in the fridge for him to snack on! Dressed with a sweet and tangy dressing this salad is easy to eat and super easy to toss together! Perfect as a side for a sandwich or any meal really, this is even perfect to share and take to a gathering, barbecue or potluck supper! This is a nostalgic, classic salad that so many people love even if they forgot how much they did!
This salad starts off with a few canned items straight from the pantry shelf then adds in some fresh items from your garden or fridge. Canned green beans are easy to source and delicious. Canned wax beans may be a little more difficult to find, but they are usually available in better grocers or smaller independant stores. I can never get them at Walmart but always find them at my local Harris Teeter, which is a Kroger branded store. So look around and if you can find them use them. They are going to be about twice or even three times the price of the green beans, and if you are not wanting to spend the extra, simply use another can of regular green beans and make this a two bean salad. Next up are some dark red kidney beans that have been drained and rinsed. If you prefer another type of bean then swap these out for butter beans, lima beans or Cannellini beans if that is your preference! If you want to make this a five, six or 12 bean salad than go for it! Just be sure to add more dressing if you add more beans.
The dressing here is sweet and tangy. I used Splenda in place of sugar, but you can feel free to use granulated sugar, honey, agave or the sweetener of your choice to make this. Some apple cider vinegar, vegetable oil and a bunch of flavorful seasonings go in and turn themselves into a delicious dressing that you know and love!
The fresh veggies really make this salad and add the necessary crunch that you love. Bell peppers of all colors, some diced onion and celery round out the recipe. Toss everything together with the dressing and you have magic in a bowl! This will take you back to your grandmother's table. I know that my Nanny is where I got my love for this salad! She always had it in her fridge and we loved it next to just about everything, especially in the summer months.
This is a cool and refreshing, quick to make salad that relies on pantry staples that you will love. This comes together with fresh veggies from your garden or your grocer and you are going to fall in love with this all over again if it has been a while since you had some. If you have only had three bean salad out of a can or jar, then you are in for a real treat! I hope you give this a try sometime soon and I hope you love it!

3 EASY WEEKNIGHT SHEET PAN DINNERS!! FAST AND FLAVORFUL!!
Let's start the week off on the right foot with a few of my family's favorite sheet pan dinners! This is really a guideline as I have not provided any recipes. Sheet pan dinners are what you make them. Here I am sharing three that are simple inspirations! One with fish, one with chicken and one with pork chops! All roasted in the oven, all done with fresh veggies of your choice and all delicious!
Your imagination is your limit, you can turn just about anything into a sheet pan dinner. These three ideas are quick to make as long as you have thawed protien. Its a great way to clean out your produce drawer and if you are plum out of fresh veggies, raid your freezer from bags of frozen goodness that you can pop on to that sheet pan! No matter what you choose it is going to be delicious!
I hope this gives you some inspiration to put a sheet pan meal together using your favorite fresh ingredients and I hope you love it!

HEARTY BACON RANCH PASTA SALAD - A perfect pasta salad side dish or main dish
Today we are sharing a hearty pasta salad that is super customizeable to your taste. Ours is a hearty bacon, ranch pasta salad with lots of fresh veggies and homemade ranch dressing! Perfect for a side dish as we made it, or a light lunch. You can also bulk it up with more protien like some diced chicken, steak, salmon or tuna to make this a full on dinner. Filled with delicious fresh ingredients like bell peppers, green onions and sharp cheddar cheese not to mention the rich, smoky goodness of crumbled bacon, this salad is the perfect side dish for your grilled chicken dinner or the perfect light, packable lunch for the week. Summer is coming and in our world nothing is better for dinner on a hot summer day than a loaded salad with delicious dressing! Today we are sharing what we consider three essential salad dressing recipes that are sure to please even the pickiest customer! First we have a delicious and easy balsamic Italian dressing that is just perfect for everyday eating. Use as a marinade or a dressing or even as a dip for delicous bread! This one is definitely a winner. Next up is a creamy buttermilk and poppyseed dressing that is tangy and sweet. Feel free to make it sugar free, like I did, or use regular sugar, honey or whatever sweetener you prefer to make this delicious dressing that is very reminiscent of an Amish poppyseed dressing that so many know and love. Last, but not least is a classic creamy Caesar dressing that has all the right ingredients. Perfect for that chicken salad, or a tableside Caesar set up or just to dip freshly plucked Romaine leaves from the garden. This one is delicious, classic and perfect!

Today, Rick and I are sharing tips and tricks to grilling your perfect steak. We are by no means, BBQ pit masters or master grillers. We will leave that up to the experts. We just know what we have learned over the years and now want to pass that information on to you. We are starting with a delicious rib eye steak or Delmonico steak that is marbled and delicious and straight from our Butcher Box. This steak tasted amazing with my buttery steak seasoning and we enjoyed every morsel for our lunch the day we made it! Temperature is the key and knowing when to pull your steak from the grill is imperative! Using a meat thermometer is the best way to know when your steak is done but Rick is sharing how you can tell by just using your hand with a little trick.
